Rare Opportunistic Bread Mold Fungal Infection of Maxillary Sinus in a Diabetic Patient.

Mucormycosis is a rare potentially fatal opportunistic fungal infection that affects human beings. Normally, a healthy is immune to such infections but there are some risk factors which predispose a person to mucormycosis, of which malnutrition and diabetes mellitus are the most common risk factors. India is the most commonly affected country by mucormycosis because of high proportion people with low socioeconomic status and diabetes mellitus. In diabetes mellitus, mucormycosis is more aggressive and fatal due to an impaired host defense mechanism. In spite of being a rare and fatal fungal inf

Influence of bread crust-derived Maillard reaction products on phosphorus balance in rats.

BACKGROUND: Maillard reaction products (MRP) improve food palatability and are linked to some positive biological actions. However, diverse negative consequences, some related to protein damage and mineral availability, have been established. AIM OF STUDY: We investigated the effects of MRP, from a bread crust diet, on phosphorus bioavailability and tissue distribution in rats to determine whether these effects are related to the molecular weight of browning products. METHODS: During a study period of 88 days, rats were fed either a control diet or one of the following: with bread crust as a

Impact of UV‑C Light Treatment on the Vitamin D Content and Quality of Bread.

Vitamin D deficiency is a global health concern linked to various chronic diseases. Although food fortification is a promising solution, its implementation remains limited by processing losses, matrix inconsistency, and clean-label trends. Certain foods, including mushrooms and yeast-containing bakery products, naturally contain provitamin D2 (ergosterol), which can be photoconverted into vitamin D2 by ultraviolet (UV) light. While UV-based vitamin D2 enrichment has been extensively studied in mushrooms, its application in bread remains largely unexplored. This study investigated UV-C irradiat

Fruity sourdough and yeast-leavened breads produced with Companilactobacillus crustorum and Wickerhamomyces anomalus.

The use of mixed-strain starter cultures (MSSCs) for sourdough production can lead to the obtention of sourdoughs and sourdough breads with novel flavour profiles. In the present study, the Type 3 sourdough productions were started with a MSSC composed of the lactic acid bacteria strain Companilactobacillus crustorum LMG 23699 and the yeast strain Wickerhamomyces anomalus IMDO 010110. The MSSC prevailed for at least 12 weeks of cold storage backslopping cycles, highlighting its potential. Also, wholemeal wheat and white wheat breads produced with a sourdough started with the MSSC that was refr

The contribution of gastric digestion of starch to the glycaemic index of breads with different composition or structure.

Breads of higher density exhibit lower glycaemic index (GI) both in vivo and in vitro, a phenomenon generally attributed to a slower intestinal starch digestion. The aim of this work was to gain a better understanding of the relationship between bread density, oral and gastric digestion, and GI. Three breads were studied: industrial-style and traditional-style French baguettes (similar composition, different densities), and whole-wheat baguette. In vitro GI predictions confirmed that, for an identical composition, higher bread density was associated with a lower GI. Subsequent oro-gastric dige

Plastic bread clip impacted in gastrointestinal tract: a case report and review of the literature.

A 79-year-old initially presented to her general practitioner for a 6-week history of nausea, intermittent abdominal pain and altered bowel habits. Colonoscopy was performed to investigate her symptoms and revealed a bread clip that was adherent to the sigmoid colon mucosa, unable to be retrieved. A CT scan was performed to exclude any associated complication, which showed no evidence of perforation or collection. A repeat colonoscopy by a more experienced endoscopist again failed to retrieve the bread clip. Eventually, the bread clip had to be removed through a laparotomy and colotomy. We per

Formation of melatonin and its isomer during bread dough fermentation and effect of baking.

Melatonin is produced mainly by the pineal gland in vertebrates. Also, melatonin and its isomer are found in foods. Investigating the formation of melatonin and its isomer is of importance during bread dough fermentation and its degradation during baking since bread is widely consumed in high amounts. Formation of melatonin was not significant during dough fermentation. The melatonin isomer content of nonfermented dough was found to be 4.02 ng/g and increased up to 16.71 ng/g during fermentation. Lower amounts of isomer in crumb and crust than dough showed that the thermal process caused a rem

Influence of organic acids on rheological and bread-making characteristics of fortified wheat flour.

Flour was fortified with premix containing ferrous fumarate and folic acid. Organic acids such as citric acid, malic acid and tartaric acid, which are promoters of iron bioavailability, were added at three levels and their influence on rheological and bread-making characteristics was studied. Farinograph water absorption increased with fortificants, but with addition of organic acids there was a decrease. Maximum pressure was 77 mm in control, which increased to 78-88 mm with the addition of different acids to the fortified flour. Addition of organic acids to fortified flour brought about a de

Association of hybridization and genome doubling with codon usage landscapes in the subgenomes of bread wheat.

INTRODUCTION: The success of allopolyploids is partly attributable to their ability to resolve genomic conflicts during the early generations following allopolyploidization. Codon usage patterns represent important genomic signatures, and codon usage bias can influence gene expression and cellular function through multiple processes. However, little is known about how subgenomic conflicts in codon usage are resolved during allopolyploidization. METHODS: We characterized changes in codon usage from the wild progenitors of bread wheat to modern bread wheat. In addition, we generated full-length

Arabinoxylan supplemented bread: From extraction of fibers to effect of baking, digestion, and fermentation.

The intake of dietary fibers is related with important benefits for human health. We produced two different arabinoxylan fibers with (FAX) and without ferulic acid linked (AX), 12.5 and 0.1 mg g-1 of ferulic acid respectively, by subcritical water extraction of wheat bran. Both FAX and AX fibers were used as supplement in bread production, while non-supplemented bread was used as control. Through an enzymatic deconstruction process we investigated the effect of bread making on the fibers, the preservation of their molecular structure (A/X ratio of 0.13 and Mw of 105 Da) and the interaction wit

Analysis of ingredient and nutritional labeling of commercially available gluten-free bread in Brazil.

This study aimed at evaluating the ingredients and nutritional information of commercially-available gluten-free bread (GFB) in Brazil. A total of 128 products were studied, of which 87% presented the sandwich loaf shape. Traditional GFBs (n = 114) had as main ingredient the refined rice flour and starches, whereas alternative ones (n = 14) presented whole rice flour. Raw materials suggested by science to improve nutrients and bioactive compounds of gluten-free foodstuffs were observed in the ingredient list of most products (n = 86); however, they were used in lower levels, thus no significan

The effect of sourdough and calcium propionate on the microbial shelf-life of salt reduced bread.

The consumption of low-salt bread represents an efficient way to improve public health by decreasing cardiovascular health issues related to increased intakes of sodium chloride (NaCl). The reduction of NaCl influences the bread quality characteristics, in particular the shelf-life. Calcium propionate (CP) is commonly used in bread as an antifungal agent. Alternatively, sourdough can be used as a natural preservative. This work addresses the feasibility of NaCl reduction in wheat bread focussing on shelf-life and the compensation using sourdough as well as chemical preservatives. The impact of

Influence of Bifidobacterium bifidum on release of minerals from bread with differing bran content.

Bread is considered an important source of minerals; however, the presence of fiber and phytic acid reduces bioavailability of minerals from cereal products. It is well established that activity of microorganisms in human gut increases the amount of nutrients released during digestion. The aim of this study was to determine the influence of Bifidobacterium bifidum on release of some minerals from bread using an in vitro process of enzymatic digestion. White bread and with addition of 15, 30, or 45% of bran was baked in a bakery by traditional methods, with addition of yeasts and rye leaven, fr
