Fatty Acids and Volatile Flavor Components of Adipose Tissue from Local Tibetan Sheep in Qinghai with Dietary Supplementation of Palm Kernel Meal (PKM).

Substituting traditional protein feed with palm kernel meal (PKM) in the diet of Tibetan sheep can be a cost-effective feeding strategy. To determine the impact of PKM on flavor development in different adipose tissues of Tibetan sheep, subjects were fed with 15% and 18% of PKM, while the control group received no PKM. The fatty acids and volatile compounds in the samples were then analyzed by GC-MS and HS-GC-IMS. Adding PKM to the diet significantly increased the C12:0, C14:0, C16:0 and C18:1N9 content in adipose tissues compared with the control, and most of these were associated with flavor

How does the polyhexamethylene guanidine interact with waste activated sludge and affect the metabolic functions in anaerobic fermentation for volatile fatty acids production.

Antibacterial agents are frequently used to ensure public hygiene. Most of the massively consumed chemicals are discarded and accumulated in waste activated sludge (WAS), which might influence the subsequent anaerobic fermentation process for WAS treatment. This study mainly investigated the impacts of polyhexamethylene guanidine (PHMG, considered as a safe and efficient broad-spectrum antibacterial agent) on the volatile fatty acids (VFAs) production derived from WAS anaerobic fermentation and disclosed the key mechanisms. Results demonstrated that low level of PHMG evidently increased the VF

Correlations between free fatty acids and volatile compounds in four pork cuts from Shanxia long black pigs: implications for cut-specific flavor generation.

INTRODUCTION: Muscle properties and meat quality vary across pork cuts, while the free fatty acids (FFAs) and volatile organic compounds (VOCs) differences among pork cuts, as well as the interrelationships between them, remain poorly understood. METHODS: Four typical pork cuts were sampled. FFAs and VOCs were extracted and analyzed using gas chromatography-mass spectrometry (GC-MS). Compound identification was based on mass spectral libraries and retention indices. Odor activity values (OAVs) were calculated as the ratio of concentration to odor threshold for key volatiles. Correlation analy

Simultaneous volatile fatty acids promotion and antibiotic resistance genes reduction in fluoranthene-induced sludge alkaline fermentation: Regulation of microbial consortia and cell functions.

The impact and mechanism of fluoranthene (Flr), a typical polycyclic aromatic hydrocarbon highly detected in sludge, on alkaline fermentation for volatile fatty acids (VFAs) recovery and antibiotic resistance genes (ARGs) transfer were studied. The results demonstrated that VFAs production increased from 2189 to 4272 mg COD/L with a simultaneous reduction of ARGs with Flr. The hydrolytic enzymes and genes related to glucose and amino acid metabolism were provoked. Also, Flr benefited for the enrichment of hydrolytic-acidifying consortia (i.e., Parabacteroides and Alkalibaculum) while reduced V

Zinc pyrithione induced volatile fatty acids promotion derived from sludge anaerobic digestion: Interrelating the affected steps with microbial metabolic regulation and adaptive responses.

The massive use of zinc pyrithione (ZPT, as broad-spectrum bactericides) resulted in its high levels in waste activated sludge (WAS) and affected subsequent WAS treatment. This work revealed the effects of ZPT on the volatile fatty acids (VFAs) during WAS anaerobic digestion, in which VFAs yield was enhanced by approximately 6-9 folds (from 353 mg COD/L in control to 2526-3318 mg COD/L with low level of ZPT (20-50 mg/g TSS)). The ZPT occurred in WAS enabled the acceleration of solubilization, hydrolysis and acidification processes while inhibited the methanogenesis. Also, the low ZPT contribut

Magnetite-assisted enhancement of stability and resilience in anaerobic digesters against hydraulic overloading and volatile fatty acid shocks.

Anaerobic digestion (AD) stability is often compromised under operational disturbances due to imbalances between acidogenesis and methanogenesis, where insufficient interspecies electron transfer (IET) can limit syntrophic oxidation of volatile fatty acids (VFAs). Conductive additives are widely recognized to enhance direct IET (DIET), yet the responses of electroactive microbial communities that support process resilience to operational disturbances remain unclear. Here, duplicate continuous AD reactors with and without submicron magnetite (Fe3O4) supplementation were operated under sequentia

Polyunsaturated fatty acid, volatile and sensory profiles of beef from steers fed citrus pulp or grape pomace.

The present study compared the effects of feeding dried grape pomace (DGP) or citrus pulp (DCP) at 150 g/kg dry matter compared to a control diet on major polyunsaturated fatty acids (PUFA), volatile and sensory profiles of beef. Feeding DGP or DCP diets to Angus steers for 90 d increased the proportions of C18:2n-6, C20:4n-6, C18:3n-3, total conjugated linoleic acid (CLA), n-3 and n-6 PUFA in muscle. Control-fed beef had greater concentrations of C18:1n-9, total aldehydes, ketones, and alcohols compared to DCP and DGP. Feeding DGP and DCP diets produced less tender beef than control. Overall,

A model of ruminal volatile fatty acid absorption kinetics and rumen epithelial blood flow in lactating Holstein cows.

Ruminal absorption of volatile fatty acids (VFA) is quantitatively the most important nutrient flux in cattle. Historically, VFA absorption models have been derived primarily from ruminal variables such as chemical composition of the fluid, volume, and pH. Recently, a mechanistic model incorporated the control of VFA absorption from epithelial surface area of the reticulorumen. In the present study, we hypothesized that ruminal absorption of VFA was controlled through epithelial permeability to VFA and rumen epithelial capillary blood flow. The objective of the study was to construct a model o

Production of volatile fatty acids as a result of bacterial interactions in the cecum of gnotobiotic rats and chickens fed a lactose-containing diet.

Volatile fatty acid (VFA) productions from lactose and lactate by a Clostridium butyricum and a Veillonella alcalescens strain, alone or in combination with a Lactobacillus acidophilus strain, were determined both in vitro in culture media and in vivo in the ceca of gnotobiotic animals. Gnotobiotic rats, which possess intestinal lactase, and chickens, which are devoid of it, were used. Both animal species were fed a diet containing 4% lactose. The in vitro results showed that the C. butyricum strain fermented lactose and D-lactic acid to butyric and acetic acids, whereas L-lactic acid was not

Structure- and Temperature-Dependent Modulation of the Partitioning of Medium-Chain Fatty Acids and Lipid-Related Volatiles by Dissolved Carbon Dioxide.

The release of lipid-related volatile compounds influences the sensory quality and stability of oil-containing foods; however, the physicochemical role of dissolved carbon dioxide (CO2) in their partitioning remains unclear. This study examined the effects of dissolved CO2 on the gas-liquid partitioning of representative lipid-related compounds, including fatty acids with carbon chain lengths ranging from C4 to C14, aldehydes, ketones, alcohols, and acetate esters, using simplified aqueous model systems. Headspace concentrations under CO2 were compared with those under nitrogen (N2) at 30-50 °

Enhanced hydrolysis of waste activated sludge and recovery of volatile fatty acids: Performance and mechanistic analysis of synergistic treatment with sodium citrate and calcium oxide.

Anaerobic fermentation has emerged as a promising method of transforming waste activated sludge into high-value products (e.g., volatile fatty acids (VFAs)). This work developed sodium citrate (SC)-calcium oxide (CaO) pretreatment to accelerate the production of VFAs by enhancing sludge solubilization and disintegration of extracellular polymeric substances. The results showed that co-pretreatment with 0.25 g/g TSS of SC and 0.05 g/g TSS of CaO effectively boosted VFAs accumulation (5823.3 mg COD/L), which was 12.2 times higher than the Control group.
