Impact of Pulsed Electric Field Pretreatment on Drying Kinetics and Quality Attributes of Plant-Based Foods: A Meta-Analysis.

Pulsed electric field (PEF) pretreatment is an emerging nonthermal technology that enhances drying efficiency by inducing electroporation, thereby facilitating mass transfer and accelerating moisture removal in plant-based foods. However, previous studies have reported variable outcomes, particularly in color changes and texture modifications, which are influenced by differences in PEF conditions and drying methods. This study, therefore, aimed to quantitatively evaluate the effects of PEF pretreatment on drying kinetics and the quality of dried plant-based foods through a meta-analysis. Data

Technological innovations for reducing tomato loss in the agri-food industry.

Food loss and waste has a detrimental impact on the economy, food security and the environment, especially at a time when more than 700 million people around the world suffer from hunger. Fruit and vegetables are highly perishable products and, as a result significant amounts are wasted at various stages of the food supply chain. In addition to this, the hard truth is that a high percentage of fresh produce is wasted because it does not meet quality requirements, mainly in terms of aesthetics. One potential solution to reduce fruit and vegetables losses would be to implement technologies in th

Shrimp: Nutrition, preservation and processing.

Shrimp is rich in high-quality protein, abundant omega-3 fatty acids (EPA and DHA), essential vitamins and minerals, which make it a significant aquatic product worldwide. However, due to high water activity and abundant nutrients, shrimp is susceptible to quality deterioration through microbial growth, enzymatic melanosis, and oxidative spoilage. This chapter systematically summarizes the nutritional profiles of shrimp and the available strategies employed to preserve its quality and extend shelf life. Though traditional low-temperature techniques including freezing, super-chilling, refrigera

Identification of microbial communities and multi-species biofilms contamination in seafood processing environments with different hygiene conditions.

Biofilms formed by spoilage and pathogenic bacteria increase microbial persistence, causing an adverse influence on the quality of seafood. The mono-species biofilms are widely reported, however, the contamination of multi-species biofilms and their matrix in food environments are still not fully understood. Here, we assessed the contamination of multi-species biofilms in three seafood processing environments with different hygiene levels by detecting bacterial number and three biofilm matrix components (carbohydrates, extracellular DNA (eDNA), and proteins). Samples comprising seven food matr

Effect of neonatal handling and sex on basal and chronic stress-induced corticosterone and leptin secretion.

Neonatal handling is an experimental paradigm for early experiences. It affects the programming of hypothalamo-pituitary-adrenal (HPA) axis function, known to be sexually dimorphic. Recently leptin, a hormone related to energy balance and secreted mainly by adipocytes, has been implicated in the stress response. We thus determined the effect of neonatal handling on plasma concentrations of corticosterone and leptin of male and female rats under basal conditions and after two consecutive chronic stressors: chronic forced swimming stress and chronic restraint. Handling resulted in lower basal co

Innovative non-thermal processing: Unraveling structural and functional transformations in food macromolecules-Starch, proteins, and lipids.

Thermal processing is widely used to ensure food safety and extend shelf life by inactivating microorganisms and enzymes. However, it often leads to undesirable heat-induced degradation and molecular aggregation, compromising food quality. In response, the food industry is increasingly adopting non-thermal processing technologies-such as high-pressure processing, ultrasound, pulsed electric fields, cold atmospheric plasma, and supercritical carbon dioxide-as innovative strategies to preserve or enhance the sensory and nutritional attributes of food. This review critically examines the mechanis
