Geranic acid as a novel antimicrobial agent for controlling Aeromonas veronii in meat products.

Aeromonas veronii is widely distributed in aquatic environments, as well as in a variety of aquatic products, poultry, and other meat products. As a typical zoonotic pathogen, it not only directly infects hosts and threatens their health, but also disseminates through the food chain. The prevention and control of A. veronii, particularly food contamination caused by this pathogen, remains a critical concern, necessitating the development of novel control strategies. Therefore, this study explores the antibacterial efficacy and underlying mechanisms of geranic acid against A. veronii, alongside

Modeling of Listeria monocytogenes and Staphylococcus aureus behavior in salted and cured meat products.

This study was conducted to better understand the survival of foodborne pathogens in traditional Brazilian meat products, which are widely consumed and often stored for long periods at ambient temperature. This study aimed to evaluate the behavior of Listeria monocytogenes and Staphylococcus aureus inoculated into charque (CH) and jerked beef (JB). The pathogens were inoculated into five different commercial brands of CH and JB, which were then stored under vacuum at 25 °C for 40 and 150 days, respectively. The following parameters were analyzed: water activity (aw), pH, total sodium content,

Bacterial microbiota in different types of processed meat products: diversity, adaptation, and co-occurrence.

As a double-edged sword, some bacterial microbes can improve the quality and shelf life of meat products, but others mainly responsible for deterioration of the safety and quality of meat products. This review aims to present a landscape of the bacterial microbiota in different types of processed meat products. After demonstrating a panoramic view of the bacterial genera in meat products, the diversity of bacterial microbiota was evaluated in two dimensions, namely different types of processed meat products and different meats. Then, the influence of environmental factors on bacterial communit

Biogenic Amines in Poultry Meat and Poultry Products: Formation, Appearance, and Methods of Reduction.

Poultry meat is a source of many important nutrients, micro- and macro-elements, and biologically active substances. During meat storage, many physicochemical changes take place, also affecting the content of biologically active substances, including biogenic amines. They are formed as a result of three processes: decarboxylation of amino acids by microorganisms, reductive amination, and transamination of aldehydes and ketones, and as a result of activity of body tissues. Excessive consumption of biogenic amines shows toxic properties. The increasing consumption of poultry meat and the lack of

An updated review of Listeria monocytogenes in the pork meat industry and its products.

Pork meat and processed pork products have been the sources of outbreaks of listeriosis in France and in other European countries during the last decade. The aim of this review is to understand how contamination, survival and growth of Listeria monocytogenes can occur in pork meat products. This study discusses the presence of L. monocytogenes in raw pork meat, in the processing environment and in finished products. The prevalence of L. monocytogenes generally increases from the farm to the manufacturing plants and this mainly due to cross-contamination. In many cases, this pathogen is present

Assessment of Meat and Poultry Product Recalls Due to Salmonella Contamination: Product Recovery and Illness Prevention.

Data from the recalls of meat and poultry products from 2000 through 2012 due to Salmonella contamination were used to assess the factors associated with the recovery of the recalled product and to develop quantitative models to estimate the number of illnesses prevented by recalls. The percentage of product recovered following a recall action was not dependent on establishment size, recall expansions, complexity of the distribution chain, type of distribution, amount of time between the production and recall dates, or number of pounds of product recalled. However, illness-related recalls were

Phenotypic and genotypic characterization of antibiotic-resistant bacteria from Swiss ready-to-eat meat products.

Antimicrobial resistance is a global health concern, which is partly driven by rising meat consumption, which has led to the intensive farming of livestock that relies on antibiotics. ready-to-eat animal products can carry antibiotic-resistant bacteria, posing risks to humans since they are often consumed without further cooking. While countries such as Switzerland limit antibiotic use in agriculture, contamination of meat with antibiotic-resistant bacteria can still occur during meat processing, and non-antibiotic agents such as heavy metals may contribute to the co-selection of resistance. The Hidden Burden of Water-Binding Additives in Meat Products: Biochemical, Clinical, and Psychosocial Implications.

Processed meat products are widely consumed worldwide, especially because they are affordable and easy to prepare. Their production often involves the use of water-binding additives such as phosphates, nitrites, and sodium chloride. Although these substances improve taste, texture, and shelf life, their potential effects on human health remain unclear. This review aims to summarize current knowledge about the possible biological and clinical effects of these additives. Injection (brining) technology is commonly used to increase product weight and improve quality. However, it may also lead to r

Towards Reducing Food Wastage: Analysis of Degradation Products Formed during Meat Spoilage under Different Conditions.

Foodstuffs, particularly perishable ones such as meat, are frequently discarded once the best-before date has been reached, despite the possibility of their continued suitability for human consumption. The implementation of intelligent packaging has the potential to contribute to a reduction in food wastage by enabling the monitoring of meat freshness during storage time independently of the best-before date. The process of meat spoilage is associated with the formation of specific degradation products, some of which can be potentially utilized as spoilage indicators in intelligent packaging.

Prevalence of Toxoplasma Gondii in Retail Fresh Meat Products from Free-range Chickens in Spain.

INTRODUCTION: Toxoplasma gondii is one of the most prevalent zoonotic protozoan parasites worldwide and affects the vast majority of warm-blooded animal species, including humans. Postnatal infection in humans occurs through the ingestion of sporulated T. gondii oocysts or via the oral intake of parasite tissue cysts during the consumption of raw or undercooked meat. In this regard, given their high exposure to oocysts, chickens (Gallus domesticus) raised on the ground constitute a potential source of T. gondii. MATERIAL AND METHODS: For the first time in Spain, a survey was undertaken in com

Determination of lumpy skin disease virus in bovine meat and offal products following experimental infection.

Lumpy skin disease (LSD) has recently expanded its range northwards to include the Balkans, Turkey and Russia. Because there was no solid evidence conclusively verifying the transmission mechanism in the field and LSDV viraemic animals with overt and asymptomatic presentation of disease and their products may represent a risk as an indirect transmission pathway. In this work, we used PCR positivity and infectivity in clinical and subclinical infection to evaluate the safety of meat and offal products from cows infected with the virulent LSDV strain Russia/Dagestan/2015. At day 21 post infectio
