Identification and Molecular Docking Analysis of Angiotensin-Converting Enzyme Inhibitors from Finger Millet (Eleusine coracana).

Hypertension remains a significant global health concern, contributing significantly to cardiovascular diseases and mortality rates. The inhibition of angiotensin-converting enzyme (ACE) plays a crucial role in alleviating high blood pressure. We investigated the potential of finger millets (Eleusine coracana) as a natural remedy for hypertension by isolating and characterizing its ACE-inhibitory compound. First, we evaluated the ACE-inhibitory activity of the finger millet ethanol extract and subsequently proceeded with solvent fractionation. Among the solvent fractions, the ethyl acetate fra

Protective Effect of Foxtail Millet Protein Hydrolysate on Ethanol and Pyloric Ligation-Induced Gastric Ulcers in Mice.

Foxtail millet has been traditionally considered to possess gastroprotective effects, but studies evaluating its use as a treatment for gastric ulcers are lacking. Here, we assessed the antiulcer effects of foxtail millet protein hydrolysate (FPH) and explored its mechanism by using blocking agents. In a mouse model of ethanol-induced gastric ulcers, pretreatment with FPH reduced the ulcerative lesion index, downregulated the expression of inflammatory cytokines in the gastric tissue, increased the activity of antioxidant enzymes, and improved the oxidative status. FPH increased constitutive t

Biochar with KMnO4-hematite modification promoted foxtail millet growth by alleviating soil Cd and Zn biotoxicity.

The excessive accumulation of Cd and Zn in soil poisons crops and threatens food safety. In this study, KMnO4-hematite modified biochar (MnFeB) was developed and applied to remediate weakly alkaline Cd-Zn contaminated soil, and the heavy metal immobilization effect, plant growth, and metal ion uptake of foxtail millet were studied. MnFeB application reduced the phytotoxicity of soil heavy metals; bioavailable acid-soluble Cd and Zn were reduced by 57.79% and 35.64%, respectively, whereas stable, non-bioavailable, residual Cd and Zn increased by 96.44% and 32.08%, respectively. The chlorophyll

The role of NaHS pretreatment in improving salt stress resistance in foxtail millet seedlings: physiological and molecular mechanisms.

Salt stress is a prevailing abiotic stress in nature, with soil salinization becoming a pressing issue worldwide. High soil salinity severely hampers plant growth and leads to reduced crop yields. Hydrogen sulfide (H2S), a gas signal molecule, is known to be synthesized in plants exposed to abiotic stress, contributing to enhanced plant stress resistance. To investigate the impact of sodium hydrosulfide hydrate (NaHS, a H2S donor) on millet's response to salt stress, millet seedlings were subjected to pretreatment with 200 μM NaHS, followed by 100 mM NaCl stress under soil culture conditions.

A Natural Low Phytic Acid Finger Millet Accession Significantly Improves Iron Bioavailability in Indian Women.

Iron deficiency and anemia are common in low- and middle-income countries. This is due to a poor dietary iron density and low iron absorption resulting from the high inhibitory phytic acid content in cereal and millet-based diets. Here, we report that a naturally occurring low phytic acid finger millet accession (571 mg 100 g-1), stable across three growing seasons with normal iron content (3.6 mg 100 g-1), increases iron absorption by 3-folds in normal Indian women. The accessions differing in grain phytic acid content, GE 2358 (low), and GE1004 (high) were selected from a core collection of

Differential response of finger millet accessions to contrasting saline water levels and irrigation regimes under desert conditions.

Water salinity and scarcity constitute major limitations to crop production in arid and semi-arid regions. Introduction of nutritious and stress-tolerant underutilized crops is a promising approach for dietary enrichment, cropping system diversification, remediation of marginal and degraded lands, and building climate resilience. The primary objectives of this study were to investigate the effect of water salinity and managed water-deficit stress on grain and fodder yield, identify multi-trait ideotypes, and validate the stability and genetic gain in finger millet ideotypes over a 2-year perio

Effect of Germination on the Nutrient Profile, Antioxidant Components, Antinutritional Constituents, and Functional Characteristics of Barnyard Millet (Echinochloa frumentacea).

Barnyard millet (Echinochloa frumentacea) is a nutrient-dense, gluten-free grain with recognized health benefits; however, its utilization is constrained by the presence of phytate, tannins, and trypsin inhibitor activity. This study examined the influence of germination (24-72 h) on the nutritional composition, antinutritional constituents, bioactive compounds, and functional properties of barnyard millet. Germination significantly altered the nutrient composition, increasing protein content (9.21-13.36 g/100 g d.m.) and dietary fiber (11.23-13.01 g/100 g d.m.) due to enzymatic modifications

Effect of fermentation on nutrient composition, antinutrients, and mineral bioaccessibility of finger millet based Injera: A traditional Ethiopian food.

Finger millet, like other cereals, contains high amounts of antinutrients that bind minerals, making them unavailable for absorption. This study explores the effect of traditional fermentation on nutritional, antinutritional, and subsequent mineral bioaccessibility (specifically iron, zinc, and calcium) of finger millet based Injera. Samples of fermented dough and Injera prepared from light brown and white finger millet varieties were analyzed for nutritional composition, antinutritional content, and mineral bioaccessibility following standard procedures. With some exceptions, the proximate co

Experimental and bioinformatic characterization of a recombinant polygalacturonase-inhibitor protein from pearl millet and its interaction with fungal polygalacturonases.

Polygalacturonases (PGs) are hydrolytic enzymes employed by several phytopathogens to weaken the plant cell wall by degrading homopolygalacturonan, a major constituent of pectin. Plants fight back by employing polygalacturonase-inhibitor proteins (PGIPs). The present study compared the inhibition potential of pearl millet PGIP (Pennisetum glaucum; PglPGIP1) with the known inhibition of Phaseolus vulgaris PGIP (PvPGIP2) against two PGs, the PG-II isoform from Aspergillus niger (AnPGII) and the PG-III isoform from Fusarium moniliforme (FmPGIII). The key rationale was to elucidate the relationshi

Flavor deterioration and shelf-life extension of millet-highland barley composite milk: sensory, microbial, and volatile profiling.

BACKGROUND: Millet and highland barley, as low glycemic index (GI) grains, are considered promising ingredients for the development of new plant-based milks. In this study, a millet-highland barley compound milk (MHM) was created by boiling the grains after baking. The product achieved the highest sensory and e-tongue ratings when the millet-to-barley ratio was 1:4. RESULTS: During storage, MHM showed increasing acidity and colony count, accompanied by an increase in particle size and a decrease in centrifugal sedimentation rate. The flavor of MHM changed significantly with the increase in mi

Exploring finger millet as an underutilised African indigenous grain crop for functional food development, sustainable nutrition, and health.

INTRODUCTION: Food insecurity and malnutrition remain major challenges in Sub-Saharan Africa, driven by climate change and agricultural systems that rely heavily on a few staple crops, including maize, rice, and wheat. The prioritisation of these crops during the Green Revolution has contributed to the neglect of nutrient-rich indigenous grains. Finger millet (Eleusine coracana), an indigenous African cereal, has attracted increasing attention because of its exceptional nutritional composition, climate resilience, and potential for functional food development. This review evaluated the role of
