Mineral metabolism of aging female rats fed various commercially available calcium supplements or yogurt.

The utilization of calcium from commercially available calcium supplements and yogurt and the effects of these calcium supplements on the utilization of other minerals were evaluated. Moderate and high levels (4 and 8 mg Ca/g diet) of calcium from four different sources of dietary calcium (yogurt, calcium phosphate dibasic, calcium magnesium chelate, and oyster shells) were fed to retired female breeder rats. Rats absorbed calcium equally efficiently from all four sources but ingestion of calcium phosphate dibasic tended to cause abnormal accumulation of calcium in kidneys. Ingestion of the ca

Design of a Plant-Based Yogurt-Like Product Fortified with Hemp Flour: Formulation and Characterization.

Plant-based milk alternatives have gained massive popularity among consumers because of their sustainable production compared to bovine milk and because of meeting the nutritional requests of consumers affected by cow milk allergies and lactose intolerance. In this work, hemp flour, in a blend with rice flour, was used to design a novel lactose- and gluten-free yogurt-like (YL) product with suitable nutritional, functional, and sensory features. The growth and the acidification of three different lactic acid bacteria strains were monitored to better set up the biotechnological protocol for mak

Effectiveness of inulin-type on the iron bioavailability in anemic female rats fed bio-yogurt.

It is well-documented that iron deficiency leads to anemia, which is the utmost critical problem of nutrition worldwide. Inulin, indigestible polysaccharides, or prebiotic agents may act as vehicles to enhance the iron bioavailability through the formation of the polysaccharide-iron complex. The present study was undertaken to evaluate the therapeutic effects of yogurt fortified with iron and supplemented by long- or short-chain inulin on the growth status, blood parameters, antioxidant capacity, and liver function enzymes in anemic rats. Five animal groups were assigned as the control (G1), w

The association of vitamin C, alcohol, coffee, tea, milk and yogurt with uric acid and gout.

About 2500 years ago, gout was observed by Hippocrates and many people suffered severe pain and deformity. Lifestyle and diet play a significant role in gout and serum uric acid levels. Epidemiological and research studies have supported this evidence. Many recommendations and guidelines from different parts of the world mention the impact of diet on gout. Recently, new research has shown associations between vitamin C, alcohol, coffee, tea, milk and yogurt with uric acid and the risk of gout. Our review summarizes recently published research regarding dietary impact on the risk of gout and se

Peptidomics-based study of antihypertensive activity: discovery of novel ACE inhibiting peptides from peanut yogurt.

Studies have confirmed that yogurt has the activity of regulating blood pressure because it is rich in probiotic-fermented food-derived active peptides. There are also studies on angiotensin-converting enzyme inhibition (ACEI) peptide milk, but the bioactive molecules in it are still unclear. Therefore, in this study, we developed a peanut yogurt with ACEI activity, analyzed 1877 differential peptides and their antihypertensive pathways before and after fermentation using peptidomics, and identified three peptides (FLPYPY, QPPPSPPPFL and APFPEVFGK) with potential antihypertensive activity usin

Multispectroscopic and molecular simulation insights into the interaction between casein and key aroma compounds in yogurt.

The molecular mechanisms governing interactions between casein (CS) and key yogurt aromas remain insufficiently elucidated. This study systematically investigated the interactions of CS with acetoin, diacetyl, and acetaldehyde through multispectroscopic techniques and integrated molecular simulations. Fluorescence quenching analysis confirmed the formation of stable ground-state complexes via static quenching (Kq ≈ 1011 L·mol-1·s-1), with binding affinities following the order: acetoin > diacetyl > acetaldehyde (Ka ranging from 1.12 × 103 to 2.82 × 103 L·mol-1 at 298-310 K). Thermodynamic eval

Probiotics and yogurt modulate oxidative stress and fibrosis in livers of Schistosoma mansoni-infected mice.

BACKGROUND: Considerable morbidity, mortality, and economic loss result from schistosomiasis infection. Deposition of Schistosoma eggs in the hepatic portal vein is considered as the main causative agent for the development of liver fibrosis and subsequent liver cirrhosis. Probiotics are exogenous and beneficial microorganisms to living hosts against the harmful effect of many parasites. Strong evidence suggests the importance of probiotics in the control strategy of helminth. The ultimate goal of this study is to evaluate the protective effect of probiotics and yogurt on Schistosoma mansoni-i

Yogurt consumption is associated with better diet quality and metabolic profile in American men and women.

The evidence-based Dietary Guidelines for Americans recommends increasing the intake of fat-free or low-fat milk and milk products. However, yogurt, a nutrient-dense milk product, has been understudied. This cross-sectional study examined whether yogurt consumption was associated with better diet quality and metabolic profile among adults (n = 6526) participating in the Framingham Heart Study Offspring (1998-2001) and Third Generation (2002-2005) cohorts. A validated food frequency questionnaire was used to assess dietary intake, and the Dietary Guidelines Adherence Index (DGAI) was used to me

Effect of milks inoculated with Lactobacillus acidophilus or a yogurt starter culture in lactose-maldigesting children.

Dairy products containing live bacteria that possess lactase activity are used for dietary management of lactose maldigestion. The efficacy of acidophilus milk and the effect of consuming unfermented milk that had been inoculated with yogurt bacteria have not been examined in children. We compared scores for breath H2 excretion and symptoms of 20 lactose-maldigesting children following ingestion of 250 ml of uninoculated milk with two identical milks inoculated with 10(10) cells of Lactobacillus acidophilus or with a commercial yogurt starter culture containing 10(8) cells of Lactobacillus lac

Quality evaluation of low-fat buffalo milk yogurt using ultrasound combined with microbial transglutaminase treatment.

Buffalo milk is widely consumed in many regions and is known for its high nutritional value. In this study, low-fat buffalo milk yogurt was developed to address coagulation issues and whey separation problems. The aim was to enhance the texture of the yogurt using a combination of ultrasound and microbial transglutaminase (mTGase). Results showed that yogurt treated with 450 W ultrasound and 0.2 g/L mTGase had a smooth texture, no whey separation, and a balanced sweet-sour taste. The yogurt exhibited significantly improved physicochemical properties: water-holding capacity reached 89.9 % (a 2.

Yogurt alleviates alcohol-induced hepatocyte pyroptosis and inflammation via autophagy/P62/Nrf2/ROS/NLRP3 pathway.

Alcohol, one of the most widely popular and consumed beverages worldwide, often leads to acute alcoholic liver injury (AALI) when excessively consumed within a short timeframe. It can further induce alcoholic hepatitis, posing a serious risk to human health and public health safety. Pyroptosis, a typical mode of programmed cell death, is closely associated with the body's inflammatory response and plays a central role in AALI. However, the role of yogurt in acute alcohol-induced pyroptosis and inflammation is unclear. In this study, we found that yogurt and its metabolite d-lactate effectively
