Mechanistic insights into bitterness reduction of Robusta coffee by ultrasound-assisted oil solvent pretreatment: A combined experimental and computational study.

Robusta coffee is characterized by pronounced bitterness, which limits its consumer acceptance and application in high-end markets. This study proposed an ultrasonic-assisted oil-solvent (butter/coconut oil/palm oil/camellia oil/walnut oil) soaking pretreatment to modulate the taste quality of Robusta coffee. Electronic tongue analysis demonstrated that the pretreatment significantly reduced bitterness and astringency while enhancing the richness response. Targeted chemical analyses revealed decreases in key bitterness-related compounds, including caffeine and caffeoylquinic acids. Imaging ana

Toxicity of Natural Deep Eutectic Solvent Betaine:Glycerol in Rats.

Natural deep eutectic solvents (NaDES) are new natural solvents in green chemistry that in some cases have been shown to allow better extraction of plant bioactive molecules compared to conventional solvents and higher phenolic compound absorption in rodents. However, there is a serious lack of information regarding their in vivo safety. The purpose of this study was to verify the safety of a NaDES (betaine:glycerol (1:2 mole ratio) of water) extract from green coffee beans, rich in polyphenols. Twelve 6-week-old male Wistar rats were randomized into two groups of 6 animals each and twice dail

Feasibility study on chemometric discrimination of roasted Arabica coffees by solvent extraction and Fourier transform infrared spectroscopy.

In this feasibility study, Fourier transform infrared (FTIR) spectroscopy and chemometric analysis were adopted to discriminate coffees from different geographical origins and of different roasting degrees. Roasted coffee grounds were extracted using two methods: (1) solvent alone (dichloromethane, ethyl acetate, hexane, acetone, ethanol, or acetic acid) and (2) coextraction using a mixture of equal volume of the solvent and water. Experiment results showed that the coextraction method resulted in cleaner extract and provided a greater amount of spectral information, which was important for sa

Single and Multiple Infestation by Coccoid Pests in Coffee Shape Plant Chemical Defenses and Interactions Across Trophic Levels.

Crop plants are attacked by multiple pests, inducing metabolic changes that shape interactions across trophic levels and influence the effectiveness of biological control. We examined how infestation by the coccoids Coccus viridis (scales) and Planococcus citri (mealybugs) modulates phytohormones, secondary metabolites, herbivore infestation, and behavior of the predator Cryptolaemus montrouzieri in Coffea arabica plants. Infestation by either scales or mealybugs activated the salicylate pathway but differentially regulated jasmonates and selected secondary metabolites. Scale infestation reduc

Biosynthesis of Caffeine in Leaves of Coffee.

The levels of endogenous caffeine and theobromine were much higher in buds and young leaves of Coffea arabica L. cv Kent than in fully developed leaves. Biosynthesis of caffeine from 14C-labeled adenine, guanine, xanthosine, and theobromine was observed, whereas other studies (H. Ashihara, A.M. Monteiro, T. Moritz, F.M. Gillies, A. Crozier [1996] Planta 198: 334-339) have indicated that there is no detectable incorporation of label into caffeine when theophylline and xanthine are used as substrates for in vivo feeds with leaves of C. arabica. The capacity for caffeine biosynthesis, especially

Spent coffee grounds-derived water-in-oil-in-water double emulsions for edible coffee oil aroma preservation: A sustainable approach.

Spent coffee grounds (SCG) are generated in large quantities by the coffee industry and contain underutilized biomolecules with potential for sustainable food applications. This study focused on the development of water-in-oil-in-water (W/O/W) double emulsions, using SCG-derived polysaccharide-rich extracts to protect spent coffee oil (SCO) from oxidation and preserve its aroma. SCO was recovered by Soxhlet extraction (n-hexane and ethanol), while microwave-assisted extraction of defatted SCG yielded MW1_Sn and MW2_Sn, obtained at 150 °C and 180 °C, respectively. Ethanol-recovered SCO exhibite

Coffee farmers willingness to accept payments for ecosystem services: Evidence from a choice experiment in Honduras.

Coffee production in Central America provides a valuable yet volatile source of income for hundreds of thousands of small-scale farmers and employment for millions of workers. Expansion of coffee production into previously forested areas has caused the loss of a wide range of valuable ecosystem goods and services while contributing to global climate change and socioeconomic instability. Growth in carbon markets in agricultural settings and production of specialty coffees to meet consumer demands for products that support environmental and community outcomes suggests promise for favorable chang

Mechanistic insights into aroma enhancement of Robusta coffee through ultrasound synergistic oil-solvent pretreatment: A combined lipidomics and volatilomics approach.

The relatively low lipid content of Robusta coffee is a major factor contributing to its monotonous aroma profile. In this study, Robusta green coffee beans were pretreated with ultrasound-assisted oil-solvent (coconut oil/palm oil/butter/camellia oil/walnut oil) to regulate the formation of aroma compounds during roasting by modifying their lipid composition, thereby enhancing the aroma profile of Robusta coffee. Lipidomic analysis showed that pretreatment significantly increased total lipid content and remodeled fatty acids and lipid molecules, with butter and coconut oil yielding the strong

Instant Cascara Beverages with Inulin-Type Carriers: Production Yield, In Vitro Biological Activity and Receptor-Level Responses.

Background: Instant Cascara (IC) beverages, derived from dried coffee cherry pulp, represent an upcycled plant-based ingredient rich in phenolic compounds and methylxanthines. Although spray-drying enables the production of soluble cascara powders without carriers, previous sensory evaluation highlighted limitations in palatability, supporting the need for formulation strategies. Objective: To evaluate how the incorporation of inulin-type carriers with different degrees of polymerization modulates production yield, the apparent recovery of bioactive compounds, and formulation-dependent in vitr

Underground Baristas: ecology of mycorrhizal fungi in Cerrado coffee cultivation.

The symbiosis between arbuscular mycorrhizal fungi (AMF) and coffee plants can improve nutrient use and crop resilience in low-fertility tropical soils. In this study, the activity and diversity of AMF in the rhizosphere of 35 Coffea arabica genotypes grown under Brazilian Cerrado conditions were characterized. Spore density, root colonization, and community composition were assessed by morphological characterization of field-collected spores and by multivariate analyses (CCA, PCA, and hierarchical clustering). No significant differences in spore density or root colonization were detected amon

Fine-scale spatial genetic structure of a fungal parasite of coffee scale insects.

The entomopathogenic fungus Lecanicillium lecanii persists in a highly dynamic network of habitat patches (i.e., a metapopulation) formed by its primary host, the green coffee scale Coccus viridis. Lecanicillium lecanii is an important biological control of both C. viridis and the coffee rust, Hemileia vastatrix. Successfully managing this biocontrol agent will depend on an increased understanding of the characteristics of its dispersal, as migration between occupied and unoccupied patches is essential for the persistence of this metapopulation. In the present study, we employ a population gen

Temperature and CO2 Interactions Reshape Hemileia vastatrix Urediniospore Germination In Vitro.

Climate change is expected to heighten the risk of epidemics and outbreaks of coffee leaf rust (CLR), caused by the obligate parasite Hemileia vastatrix, as reported in the literature. While knowledge is available on rising temperatures' effects on CLR epidemiological processes, fewer studies have explored combined temperature and atmospheric carbon dioxide (CO2) impacts, with contrasting findings on CLR incidence and severity. CLR epidemics are multifactorial, and controlled-condition experiments targeting individual components help anticipate pathogen behavior under future climates. Uredinio

EDTA enabled chelation for stability and sensory quality in iron enriched coffee.

The research aims to unveil the iron fortification of coffee with chelating agents for reducing iron-polyphenol complexation. Among fortificants, Ferrous Sulphate (FS) exhibited complexation of 1.78 mM FeCl₃/TAE due to Fe2+ and was selected for further evaluation. Chelators considerably decreased complexation by 89-94%; with EDTA as the competitive ligand due to preferential chelation at 1:1 of FS-FC:EDTA ratio (0.18 mM FeCl₃/TAE). FTIR showed attenuated FeO phenolic stretching (500-600 cm-1), dynamic light scattering revealed stable colloidal aggregation (-33.10 to -39.33 mV and 231 to 376 d.
