The hemoglobin adduct N-(2,3-dihydroxypropyl)-valine as biomarker of dietary exposure to glycidyl esters: a controlled exposure study in humans.

Fatty acid esters of glycidol (glycidyl esters) are heat-induced food contaminants predominantly formed during industrial deodorization of vegetable oils and fats. After consumption, the esters are digested in the gastrointestinal tract, leading to a systemic exposure to the reactive epoxide glycidol. The compound is carcinogenic, genotoxic and teratogenic in rodents, and rated as probably carcinogenic to humans (IARC group 2A). Assessment of exposure from occurrence and consumption data is difficult, as lots of different foods containing refined oils and fats may contribute to human exposure.

Dietary patterns and pesticide exposure in rural Latvia: evidence from a human biomonitoring study.

Dietary intake is the main route of pesticide exposure in the general population. While several European studies have linked food consumption to human biomonitoring data, evidence from smaller countries such as Latvia is scarce. This study is the first to systematically examine how dietary habits influence pesticide exposure in the Latvian rural population, addressing an important knowledge gap and providing evidence with direct relevance for public health and food safety policies. This study used data from the HBM4EU SPECIMEn study, including 101 adult-child pairs from rural Latvia. Morning s

Effects of dietary bromadiolone exposure on rainbow trout (Oncorhynchus mykiss) and corresponding hepatic concentrations.

Fish are exposed to residues of anticoagulant rodenticides in the environment, likely due to secondary poisoning or direct consumption of fragments of bait. The mode of action in which they affect fish is similar to mammals: inhibition of vitamin K epoxide reductase leads to a vitamin K deficiency, and consequently, to a coagulation disorder. However, distinct species- and compound-specific differences in the sensitivity and toxicity occur and data for the comparison of the effects on fish are still lacking. We exposed ca. 1-year old (body weight ∼180 g) rainbow trout (Oncorhynchus mykiss) in

Chloroform in food samples from 2014 Canadian total diet study: occurrence and dietary exposure.

Chloroform or trichloromethane is one of the trihalomethanes formed during disinfection of water with chlorine, and residues of chloroform can be detected in foods and food products due to the use of chlorinated drinking water and disinfecting food processing equipment with chlorine-based disinfectants. In this study, chloroform was detected in 37 (or 23%) of the 159 composite food samples from the 2014 Canadian Total Diet Study, but was not detected in cereals, fruits, fast foods, and most of the meat samples. Chloroform was detected in almost all 14 composite samples of dairy products, with

Maternal exposure to dietary uranium causes oxidative stress and thyroid disruption in zebrafish offspring.

The contamination of uranium in aquatic ecosystems has raised growing global concern. However, the understanding of its chronic effects on aquatic organisms is limited, particularly with regards to transgenerational toxicity. In this study, we evaluated the maternal transfer risk of uranium using zebrafish. Sexually mature female zebrafish were exposed to 2 and 20 ng/g of uranium-spiked food for 28 days. The induced bioconcentration, thyroid disruption, and oxidative stress in both the adults (F0) and their embryos (F1) were further investigated. Element analysis showed that uranium was presen

Methylmercury and mercury in Mediterranean mussels (Mytilus galloprovincialis) from Turkish coast: Dietary exposure prediction.

The spatial distribution of total mercury (HgT) and methylmercury (MeHg) in Mediterranean mussels (Mytilus galloprovincialis) sampled at 23 different stations along Türkiye's Black Sea, the Marmara, and Aegean Sea coasts were investigated in this study. HgT and MeHg were determined using a direct mercury analyzer and ranged 1.10-130.70 μg/kg and 0.22-37.90 μg/kg dry weight, respectively. HgT and MeHg have been determined to have a substantial positive correlation (r2 = 0.94). According to average consumption and portion sizes, the weekly intake (EWI) for MeHg was less than the 1.6 μg/kg/week l

Enantioselective fate of dinotefuran from tomato cultivation to home canning for refining dietary exposure.

Understanding the enantioselective fate of chiral neonicotinoid dinotefuran is of vital importance for accurate dietary exposure assessment and food safety regulation. The study investigated the enantioselectivity in respect to dissipation, metabolism, and removal, of dinotefuran from tomato cultivation to tomato paste processing. The chiral analytical method of dinotefuran, UF and DN was developed in tomato using ultrahigh performance supercritical fluid chromatography/tandem mass spectrometry. Under greenhouse cultivation R-dinotefuran preferentially degraded (T1/2, 9.1-12.6 days), resulting

Green tea infusion reduces mercury bioaccessibility and dietary exposure from raw and cooked fish.

Human exposure to mercury (Hg) and methylmercury (MeHg) through the ingestion of seafood raises human health-related concerns. In contrast, green tea has health benefits and its consumption potentially reduces bioaccessibility of dietary Hg. The present study aimed to assess the effect of green tea in total mercury (THg) and MeHg bioaccessibility in raw and cooked marine fish species commonly having high Hg levels. Preliminary results demonstrated that significantly higher reductions of bioaccessible THg were attained after the co-ingestion of green tea infusion (1 cup or more) in the oral and

Accidental chlorophacinone exposure of lactating ewes: Clinical follow-up and human health dietary implications.

Anticoagulant rodenticides are widely used for rodent control in agricultural and urban settings. Their intense use can sometimes result in accidental exposure and even poisoning of livestock. Can milk, eggs or meat derived from such accidently exposed animals be consumed by humans? Data on the pharmacokinetics of chlorophacinone in milk of accidently exposed ewes were used to estimate the risk associated with its consumption. Three days after accidental ingestion, chlorophacinone was detected in plasma of 18 ewes, with concentrations exceeding 100 ng/mL in 11 animals. Chlorophacinone was dete

Intrauterine Aluminium Exposure Due to Dietary Content Alters Social Behaviours in Wistar Rat Offsprings.

BACKGROUND: Neurodevelopmental disorders like autism are on the rise, with the role of genetics and epigenetics being increasingly cited as reasons or contributors. The environmental factors were found to be important as epigenetic modifiers, and pregnant mothers are incrementally exposed to many of these environmental factors, like aluminium (Al), known to damage neurons, even before delivery. However, its presence and persistence inside the central nervous system (CNS), leading to changes in the expression of behaviours, need further research. Hence, this animal study was conceived. Mercury partitioning and dietary exposure risk in free-range eggs from China's polluted regions.

This study collected free-range eggs from contaminated regions in China, with emphasis on legacy Hg mining areas. Total mercury (THg) and methylmercury (MeHg) were quantified in four egg compartments (white, yolk, shell membrane, and shell). THg concentrations ranged from 1.39 to 90.76 μg/kg wet weight (ww), and MeHg from 0.74 to 40.56 μg/kg ww. While most samples met the Chinese food safety limit (50 μg/kg ww), eggs from mining areas consistently exceeded this threshold. THg distribution followed egg white > yolk > shell membrane > shell. Hg concentrations in egg white strongly correlated wit

Dietary Bisphenol-A Exposure Induces Oxidative Stress-Mediated Developmental Renal Toxicity in Drosophila melanogaster.

BPA is an endocrine-disrupting molecule that is ubiquitously found in the environment. Epidemiological studies have shown that BPA exposure to humans during the early stage life is linked to renal dysfunction, including albuminuria, proteinuria, increased serum creatinine, and electrolyte imbalances. BPA alters the endocrine axis; however, BPA-mediated endocrine disruption has already been documented, and its cellular mechanism underlying developmental toxicity is not well defined. In the present study, we examined the effect of dietary BPA exposure on the developing renal organs of Drosophila

Early-Life Dietary Exposure to Perfluorooctanoic Acid (PFOA) Through Milk Consumption: A Systematic Review.

Perfluorooctanoic acid (PFOA) has raised public concern due to its widespread presence/use and toxic health effects including hepatotoxicity, neurotoxicity, and developmental toxicity. Because dietary intake is a major route of PFOA exposure, and milk is a primary source of nutrition in early life, the present systematic review discusses PFOA occurrence in milk samples and the employed determination methods. In the present article, 69 studies (published 2007-2024) reporting PFOA levels in infant formula, commercial milk, and human breast milk were included. The highest concentration of PFOA in

Exposure Scenarios for Estimating Contaminant Levels in Healthy Sustainable Dietary Models: Omnivorous vs. Vegetarian.

Consumers are regularly exposed to well-known food contaminants (FCs), which are typically assessed for risk on an individual basis. However, there is limited knowledge about the overall levels and combinations of these compounds depending on dietary choices. The goal of this study was to estimate the real-life mixtures of FCs in different dietary models by integrating extensive data from the scientific literature concerning the reliable quantification of FCs in foods. A FAIR database detailing the occurrence of 73 FCs in 16 foods commonly consumed was built. The data were integrated into an o

Dietary flaxseed's protective effects on body tissues of mice after oral exposure to xylene.

Xylene is a common pollutant in the environment that enters the body of animals and humans in various ways, but most often through the respiratory tract and adversely affects their overall health. However, xylene effects after oral exposure have not been sufficiently studied. This study aimed to investigate the effects of xylene exposure on the mouse organism and to identify possible beneficial effects of flaxseed on such exposure. Eighty mice were divided into four groups: control group C (basal diet + no xylene exposure), group X (oral exposure by 400 mg/kg/day xylene), group F (10% flaxseed

Accumulation and elimination of methylmercury in Atlantic cod (Gadus morhua L.) following dietary exposure.

Methylmercury is known to bioaccumulate and biomagnify up the marine food chain. Fish from high levels of the marine food chain may contain relatively high concentrations of mercury, and most (>70%) of the mercury found in muscle is methylmercury. In aquaculture, marine protein (mainly fishmeal) is the dominant source of methylmercury, and this raises some concern with regards to fish welfare and consumer safety. A dietary exposure study, including a depuration period, was carried out in order to study the accumulation and elimination of methylmercury in Atlantic cod (Gadus morhua L.), and to

Dietary Supplementation with Omega-3 Fatty Acids Rescues Neurodevelopmental Deficits in a Combined Exposure Paradigm of Maternal Oxycodone Exposure and Chronic Stress.

In recent years, opioid abuse has become a major public health crisis affecting millions of individuals throughout the world. This widespread abuse of prescription opioids and dramatic increase in their availability have created the opioid epidemic. Further, oxycodone (oxy), which is prescribed for multiple types of pain, is gaining momentum as a pain reliever in pregnant women. Whilst successful in inducing analgesia, oxy freely passes through the placenta and can impact the overall development of the fetus in major ways. Currently, mechanisms that lead to impairment in the exposed offspring,

Mediation and moderation by inflammation and dietary patterns in heavy metal exposure effects on kidney function.

Heavy metals are highly nephrotoxic and may increase the risk of chronic kidney disease. However, the potential roles of inflammatory responses and dietary patterns in the relationship between heavy metals and kidney disease remain underexplored. This study examines the heavy metal exposure-inflammatory response-kidney function decline pathway and the modulating role of dietary patterns in heavy metal-induced kidney damage. Results from generalized linear models, restricted cubic spline models, and weighted quantile regression models show that exposure to individual heavy metals in blood and u
