The application of bioactive compounds from the food industry to control mold growth in indoor waterborne coatings.

Microbial growth in indoor environments creates health problems, especially in people with asthma; approximately 80% of these patients are allergic to mold. Antimicrobial coatings are formulated to generate surfaces that are easy to clean and may also incorporate active agents, commonly called biocides, which inhibit microbial colonization, subsequent growth and bio-deterioration of the substrates. Some research lines seek to replace traditional organometallic and organochlorines biocides with environmentally acceptable ones. The aim of this research was, primarily, to explore the possible app

Food safety hazards that occur during the production stage: challenges for fish farming and the fishing industry.

Seafood derived from wild fish as well as farmed fish has always been an important source of protein in the human diet. On a global scale, fish and fish products are the most important source of protein and it is estimated that more than 30% of fish for human consumption comes from aquaculture. The first part of this paper outlines the hazards and challenges associated with handling fish during farming and capture. The authors describe infectious agents that cause disease in fish as well as humans, zoonotic agents, intoxications due to bacteria and allergies caused by the consumption of fish.

Preparation and identification of an anti-nicarbazin monoclonal antibody and its application in the agriculture and food industries.

BACKGROUND: As a broad-spectrum drug against chicken coccidiosis, nicarbazine is widely used. The international community has made regulations and requirements on the residue limits of nicarbazine metabolites in chicken. The research reports on the detection methods of nicarbazine residues are mainly based on large-scale instruments such as high-performance liquid chromatography (HPLC), liquid chromatography-mass spectrometry-mass spectrometry (LC/MS/MS) and so on. However, in the practical monitoring and detection application, the rapid, sensitive, efficient and accurate detection of nicarbaz

Tool for assessing food industry commitments and practices to address the double burden of malnutrition: a Delphi study.

BACKGROUND: Many low- and middle-income countries face a double burden of malnutrition, i.e., a co-occurrence of undernutrition with overweight, obesity, or other diet-related noncommunicable diseases. In an increasingly connected global food system, multinational and domestic food industry actors - through their commercial practices and corporate political activity - both contribute to the double burden of malnutrition and hold potential to address it. Systematic monitoring of relevant industry commitments and practices may help to hold industry accountable and foster constructive engagement.

Recent advances on the formation, detection, resistance mechanism, and control technology of Listeria monocytogenes biofilm in food industry.

Listeria monocytogenes is an important foodborne pathogen that causes listeriosis, a severe and fatal condition. Biofilms are communities of microorganisms nested within a self-secreted extracellular polymeric substance, and they protect L. monocytogenes from environmental stresses. Biofilms, once formed, can lead to the persistence of L. monocytogenes in processing equipment and are therefore considered to be a major concern for the food industry. This paper briefly introduces the recent advancements on biofilm formation characteristics and detection methods, and focuses on analysis of the me

Quantifying uncertainty in food waste across an urban area: The role of industrial, commercial, and institutional sectors.

Industrial, commercial, and institutional (ICI) food waste is a large, poorly quantified component of municipal solid waste. Landfill disposal of food waste results in greenhouse gas emissions and lost resources. Here, we apply a spatial-probabilistic modelling approach for estimating sector-specific ICI food waste generation and demonstrate this technique for Montreal, Canada. We identified 14,508 ICI establishments from municipal food inspection records and classified them into 14 subsectors. Point locations were matched to building footprints to acquire areal estimates for each establishmen

Sanitization of packaging and machineries in the food industry: Effect of hydrogen peroxide on ascospores and conidia of filamentous fungi.

In the food industry, sterilization of packaging and filling machines by hydrogen peroxide (HP) is a widespread practice. Its effectiveness is usually tested by means of inactivation tests on selected test microorganisms that were any case chosen without taking into account that food products could be also spoiled by microorganisms presumably resistant to HP. For this reason, the aim of this work was to assess the resistance of different ascospore-forming moulds (Talaromyces bacillisporus, Aspergillus hiratsukae, Chaetomium globosum) to HP, in order to find the most resistant to this kind of c

The industrial food additive, microbial transglutaminase, mimics tissue transglutaminase and is immunogenic in celiac disease patients.

Microbial transglutaminase (mTg) is capable of cross-linking numerous molecules. It is a family member of human tissue transglutaminase (tTg), and is involved in CD. Despite declarations of the safety of mTg for industrial use, direct evidence for immunogenicity of the enzyme is lacking. The serological activity of mTg, tTg, gliadin complexed mTg (mTg neo-epitope) and gliadin complexed tTg (tTg neo-epitope) were studied in 95 pediatric celiac patients (CD), 99 normal children (NC), 79 normal adults (NA) and 45 children with nonspecific abdominal pain (AP). Sera were tested by ELISAs, detecting
