Integrated preservation strategies and packaging for extended shelf life and food safety of fresh-cut pineapple.

The minimal processing (MP) of pineapple stands out as an alternative for meeting the demand for fresh, safe, and ready-to-eat foods. However, peeling and cutting operations cause damage to the fruit's vegetable tissues, accelerate respiration, intensify enzymatic activity, and promote microbial growth, thereby reducing the product's shelf life. This review addresses the physicochemical and microbiological characteristics of pineapple and the mechanisms involved in its deterioration, such as browning, texture changes, and the growth of undesirable microorganisms. To manage these changes, conse

Identification and Spoilage Potential of the Remaining Dominant Microbiota on Food Contact Surfaces after Cleaning and Disinfection in Different Food Industries.

After cleaning and disinfection (C&D), surface contamination can still be present in the production environment of food companies. Microbiological contamination on cleaned surfaces can be transferred to the manufactured food and consequently lead to foodborne illness and early food spoilage. However, knowledge about the microbiological composition of residual contamination after C&D and the effect of this contamination on food spoilage is lacking in various food sectors. In this study, we identified the remaining dominant microbiota on food contact surfaces after C&D in seven food companies an

The incidence and level of Listeria monocytogenes contamination of food sources at primary production and initial processing.

Listeria monocytogenes was isolated in low numbers from a variety of environmental samples associated with the primary production of food, including vegetation, faeces and meat. The organism was rarely detected on growing grass and vegetables prior to processing. The excretion of L. monocytogenes by farm animals was linked to their diet, with animals fed entirely on hay or manufactured diets not excreting detectable levels of Listeria (i.e. absence in 25 g). However, animals fed on silage, which is frequently contaminated with L. monocytogenes, commonly excreted the organism. Transport of live

Effect of packaging systems and pressure fluids on inactivation of Clostridium botulinum spores by combined high pressure and thermal processing.

Several studies have been published on the inactivation of bacterial spores by using high pressure processing in combination with heat. None of the studies investigated the effect of the packaging system or the pressurizing fluid on spore inactivation. The objective of this study was to select and validate an appropriate packaging system and pressure transfer fluid for inactivation of Clostridium botulinum spores by using high pressure processing in combination with thermal processing. Inactivation of spores packaged in three packaging systems (plastic pouches, cryovials, and transfer pipettes

Problems associated with shellfish farming.

Shellfish culture is a major sector of aquaculture production worldwide, and zoonoses and drug residues associated with shellfish farm practice are of concern to public health. This paper focuses on three of the most important shellfish species: molluscs, crabs and shrimp. Although many diseases can affect shellfish, they do not appear to be transmittable to humans. Rather, the main hazards are associated with the methods used to farm the different species. The risk to human health from shellfish most commonly relates to contamination by biotoxins produced by marine algae. Another well-recogni

Transmission of Escherichia coli from irrigation water to preharvest leafy greens.

AIM: The aim of this study was to examine the fate of Escherichia coli strain 0611, used as model for a water-borne bacterial contaminant, in leafy green production systems. METHODS AND RESULTS: Irrigation water from two different sources was inoculated with the strain and applied via overhead irrigation to endive and spinach plants grown under open-field conditions. Inoculum levels were 10³ CFU mL⁻¹, representing occasional water contamination, and a 1000-fold higher density to enable detailed quantification across plant compartments. Three experiments assessed bacterial persistence after si

The Fruit Biome: Biofilm Dynamics and Consumer Health Risks with Focus on the Apple (Malus domestica) as a Model System.

Fruit surfaces serve as ecological interfaces that support diverse microbial communities, where biofilm formation by spoilage organisms and human pathogens contributes to postharvest safety concerns. Although fruit-associated microbiota and chemical residues have been widely investigated, the interactions between surface microstructure, residue dynamics, and microbial persistence remain insufficiently integrated. This review synthesizes current knowledge by considering three key processes: temporal succession of microbial communities, structural vulnerability of the fruit surface, and chemical

Roles of microorganisms in the flavor evolution of prepared aquatic foods: comprehensively understanding their metabolic mechanisms, quorum sensing, and innovative regulation strategies.

Prepared aquatic foods refer to ready to eat, heat, cook, and use aquatic products. These foods are gaining popularity as a result of consumer preference for their peculiar flavor. Flavor deterioration of prepared aquatic foods directly impacts the sensory quality and consumer acceptance. Identifying the mechanisms involved in flavor development and offering strategies to regulate flavor are crucial, as the flavor of prepared aquatic foods alters under various processing and storage conditions. Microorganisms play a crucial role in flavor evolution by participating in biochemical metabolic rea

Mycotoxins in food and agriculture: from occurrence to economic consequences.

Filamentous fungus (moulds) create secondary metabolites called mycotoxins, which can be dangerous. These minuscule molecules (typically less than 1 000 Da) are almost inescapably found in nature. Aspergillus, Penicillium, Fusarium, and Alternaria are among the fungal species that produce mycotoxins. If these secondary metabolites make their way into the food chain and production, they are harmful and have a big effect. In African countries like Nigeria that rely significantly on staple foods like grains, cereals, and nuts, mycotoxin contamination is especially problematic. Mycotoxins have att

Effect of Peracetic Acid Formulation on Hygiene Indicator Bacteria in Cut Salads.

The study aimed to evaluate the effect of peracetic acid formulation (PAA) in the cut salads as a model food with different treatment conditions and observed their effect on the shelf life. This study revealed that at 80 ppm PAA, the standard for use on vegetables, showed a temporary and weak bactericidal effect. Additionally, there was no improvement in the shelf life of the cut salad. In contrast, PAA treatment at 240 ppm significantly reduced and suppressed the growth of hygiene indicator bacteria for 7 days. Moreover, no injured bacteria were produced due to proper sterilization. Based on

Identification of microbial communities and multi-species biofilms contamination in seafood processing environments with different hygiene conditions.

Biofilms formed by spoilage and pathogenic bacteria increase microbial persistence, causing an adverse influence on the quality of seafood. The mono-species biofilms are widely reported, however, the contamination of multi-species biofilms and their matrix in food environments are still not fully understood. Here, we assessed the contamination of multi-species biofilms in three seafood processing environments with different hygiene levels by detecting bacterial number and three biofilm matrix components (carbohydrates, extracellular DNA (eDNA), and proteins). Samples comprising seven food matr

Health Hazards Associated with Arthropod Infestation of Stored Products.

Insects and mites are common inhabitants and accidental invaders of food, including durable commodities, and their presence can have both direct and indirect effects on human health. The most common direct effect is contamination of food with arthropod fragments and related contaminants, which may be allergenic or even carcinogenic. The most important indirect effect is that their presence can change the storage microenvironment, making durable products suitable for the rapid development of fungi and other microorganisms. Some of these fungi can produce toxins (e.g., aflatoxins) that endanger

Characterization and Exposure Assessment of Emetic Bacillus cereus and Cereulide Production in Food Products on the Dutch Market.

The emetic toxin cereulide, which can be produced by Bacillus cereus, can be the cause of food poisoning upon ingestion by the consumer. The toxin causes vomiting and is mainly produced in farinaceous food products. This article includes the prevalence of B. cereus and of cereulide in food products in The Netherlands, a characterization of B. cereus isolates obtained, cereulide production conditions, and a comparison of consumer exposure estimates with those of a previous exposure assessment. Food samples (n = 1,489) were tested for the presence of B. cereus; 5.4% of the samples contained dete

Food safety: review and implications for dietitians and dietetic technicians.

Section 103 (d) of the Americans with Disabilities Act directs the secretary of health and human services to identify, publish, and annually review a list of pathogens transmitted via food contaminated by infected food handlers. The secretary is also directed to publish means by which diseases on the list are transmitted. The intent of the list is to protect disabled food handlers when they become ill and to provide managers with information for determining when to remove or reassign disabled food handlers who have infectious or communicable diseases to jobs that do not involve handling food.

Metagenomics: The Next Culture-Independent Game Changer.

A trend towards the abandonment of obtaining pure culture isolates in frontline laboratories is at a crossroads with the ability of public health agencies to perform their basic mandate of foodborne disease surveillance and response. The implementation of culture-independent diagnostic tests (CIDTs) including nucleic acid and antigen-based assays for acute gastroenteritis is leaving public health agencies without laboratory evidence to link clinical cases to each other and to food or environmental substances. This limits the efficacy of public health epidemiology and surveillance as well as ou

Probiotics and Fermented Foods in Human Nutrition.

Fermented foods and probiotics represent complementary yet distinct components of human nutrition. Fermented foods are shaped by biochemical transformations driven by microbial metabolism, whereas probiotics are live microorganisms that may confer health benefits to the host. In both cases, bacteria, yeasts, and filamentous fungi mediate key metabolic activities that generate bioactive compounds and modulate host-microbiota interactions. During fermentation, microbial communities synthesize organic acids, peptides, exopolysaccharides, vitamins, and other metabolites that enhance food safety, s
