Understanding medicinal taste and odour formation in drinking waters.

The formation of bromophenols during chlorination of phenol- and bromide-containing waters can be critical for taste and odour problems in drinking waters. The work performed has confirmed that flavour threshold concentrations of some bromophenols are in the ng/L range. In addition, under typical drinking water conditions, kinetic experiments and model simulations performed have shown that (1) bromination is the predominant reaction pathway, (2) bromophenol reaction kinetics are rapid leading to taste-and-odour episodes that last for short periods of 10-20 min, (3) increasing phenol concentrat

Age differences in orofacial sensory thresholds.

Declines in sensory functioning with aging are evident for many of the senses. In the present study, thresholds were determined for somatosensory (warming and cooling temperature, pain, touch, and two-point discrimination) and taste stimuli in 178 healthy individuals aged 20-89 yrs. Somatosensory stimuli were applied to the upper lip (glabrous skin) and the chin (hairy skin). The sample was divided into two groups, based on a bimodal split "< 45 yrs" and "≥ 65 yrs". In all instances, there were elevations in thresholds for the older individuals. Further, males were less sensitive than females

A New Descriptor of Amino Acids-SVGER and its Applications in Peptide QSAR.

In the study of peptide quantitative structure activity relationship (QSAR), a new descriptor of amino acids (SVGER) was calculated. It was applied in two peptides which are angiotensin converting enzyme inhibitors and bitter tasting threshold of di-peptide. QSAR models were built by stepwise multiple regression-multiple linear regression (SMR-MLR) and stepwise multiple regression-partial least square regression (SMR-PLS). In the SMR-MLR models for angiotensin converting enzyme inhibitors, the squared cross-validation correlation coefficient (QLOO2 ) was 0.907, squared correlation coefficient

Role of zinc supplementation in type II diabetes mellitus.

Zinc is required for normal immune function and taste acuity and enhances the in vitro effectiveness of insulin. Impaired immune function and taste have been reported in diabetic subjects, and decreased serum zinc levels and hyperzincuria occur in some diabetic subjects and animals. Subjects with type II diabetes were examined to determine whether the similar effects of zinc depletion and diabetes are causally related. Low serum zinc levels were found in 16 of 180 subjects (9 percent). There was no correlation between serum zinc and glycosylated hemoglobin levels. Natural killer cell activity

Role of saliva in the maintenance of taste sensitivity.

Saliva is the principal fluid component of the external environment of the taste receptor cells and, as such, could play a role in taste sensitivity. Its main role includes transport of taste substances to and protection of the taste receptor. In the initial process of taste perception, saliva acts as a solvent for taste substances; salivary water dissolves taste substances, and the latter diffuse to the taste receptor sites. During this process, some salivary constituents chemically interact with taste substances. For example, salivary buffers (e.g., bicarbonate ions) decrease the concentrati

Deficit Symptomatology of Schizophrenia Is Associated with Attenuated Taste Identification: Findings from a Cross-Sectional Study.

Schizophrenia is the subject of many studies. There have been reports of taste disturbances in mental disorders. We found a possible relationship between deficit symptoms of schizophrenia and the dysgeusia of monosodium glutamate (MSG). Dysgeusia is a disorder that distorts the sense of taste. People describe all foods as tasting sweet, sour, bitter, or metallic. We aimed to verify whether the level of MSG taste perception may be related to the severity of deficit symptoms. MSG detection threshold was assessed via sublingual administration of three fluid samples containing MSG or water. The MS

Quantitative evaluation of taste dysfunction using electrogustometry in patients with head and neck cancer undergoing intensity-modulated radiation therapy and intensity-modulated proton therapy.

Taste disorders are common adverse events in patients undergoing radiotherapy (RT) for head and neck cancer (HNC), significantly impairing quality of life. This study was performed to quantitatively evaluate taste function using electrogustometry (EGM) in patients treated with intensity-modulated radiation therapy (IMRT) or intensity-modulated proton therapy (IMPT). This retrospective study included 18 patients with HNC (15 men, 3 women; median age 61 years) treated with IMRT or IMPT. EGM and patient-reported taste questionnaires were assessed at baseline, completion of RT and 3, 6, and 12 mon

Post-tonsillectomy taste dysfunction: Myth or reality?

Lingual branches of the glossopharyngeal nerve (CN Ⅸ) are at risk of injury during tonsillectomy due to their proximity to the muscle layer of the palatine tonsillar bed. However, it is unclear how often this common surgery leads to taste disturbances. We conducted a literature search using PubMed, Embase, Cochrane Library, Google Scholar, PsychInfo, and Ovid Medline to evaluate the available literature on post-tonsillectomy taste disorders. Studies denoting self-reported dysfunction, as well as those employing quantitative testing, i.e., chemogustometry and electrogustometry, were identified.

The Interplay of Salivary Leptin, Taste Perception, and Dental Caries in Adolescent Girls: A Cross-Sectional Analysis Across Body Mass Index Categories.

OBJECTIVES: The biological mechanisms linking obesity to dental caries (DC) remain multifaceted. Salivary leptin, an adipokine known to modulate sweet taste sensitivity, may play a pivotal role in dietary choices and subsequent caries development. The aim was to evaluate the association between salivary leptin levels, taste perception thresholds, and DC severity among adolescent girls across different body mass index (BMI) categories. METHODS: This cross-sectional study included adolescent girls in Baghdad, Iraq. Participants were categorized by BMI (normal, overweight, obese) using the Cente

Bitter taster status predicts susceptibility to vection-induced motion sickness and nausea.

BACKGROUND: Sensitivity to bitter taste and susceptibility to nausea are both protective mechanisms that guard against toxin ingestion, and both these traits vary within and between populations. Thus, we postulated that they may have co-evolved, such that they are associated. METHODS: Bitter taster status was determined in 40 subjects (13 men, 27 women) by measuring the differential perceived taste intensity between salt and n-propylthiouracil using a labeled magnitude scale; susceptibility to vection-induced motion sickness and nausea was assessed using an optokinetic drum, a validated multi

Intensity of regionally applied tastes in relation to administration method: an investigation based on the "taste strips" test.

To compare various methods to apply regional taste stimuli to the tongue. "Taste strips" are a clinical tool to determine gustatory function. How a patient perceives the chemical environment in the mouth is a result of many factors such as taste bud distribution and interactions between the cranial nerves. To date, there have been few studies describing the different approaches to administer taste strips to maximize taste identification accuracy and intensity. This is a normative value acquisition pilot and single-center study. The investigation involved 30 participants reporting a normal sens

Embryonic geniculate ganglion neurons in culture have neurotrophin-specific electrophysiological properties.

Geniculate ganglion neurons provide a major source of innervation to mammalian taste organs, including taste buds in the soft palate and in fungiform papillae on the anterior two thirds of the tongue. In and around the fungiform papillae, before taste buds form, neurotrophin mRNAs are expressed in selective spatial and temporal patterns. We hypothesized that neurotrophins would affect electrophysiological properties in embryonic geniculate neurons. Ganglia were explanted from rats at gestational day 16, when growing neurites have entered the papilla core, and maintained in culture with added b

Chemosensory function and food perception is affected in COPD, but unrelated to sarcopenia risk.

BACKGROUND & AIMS: Patients with advanced COPD often have difficulty maintaining sufficient dietary intake. Chemosensory function influences food choice and intake but is often overlooked in dietary assessment and intervention strategies. This study aimed to assess differences in chemosensory function and hedonic evaluation of food between patients with COPD and age- and gender-matched healthy controls. Additionally, a possible association between increased risk of sarcopenia or frailty and chemosensory impairments was explored. METHODS: We recruited 53 COPD patients (34 males, mean age 66.6

[Taste disturbance after tonsillectomy].

There are some patients, though few in number, who complain of taste disturbance after tonsillectomy. Actual measurement of the distance between the lingual branch of the glossopharyngeal nerve, which controls taste in the posterior portion of the tongue, and the lower pole of the palatine tonsil, using a cadaver, showed the distance to be only 2-4 mm, thereby suggesting the danger of direct or indirect disturbance of this nerve by tonsillectomy. Among the 3,583 outpatients complaining of taste disturbance whom we have treated at our taste disorder clinic in the last 15 years, 11 (0.31%) were
