Fermented foods and probiotics represent complementary yet distinct components of human nutrition. Fermented foods are shaped by biochemical transformations driven by microbial metabolism, whereas probiotics are live microorganisms that may confer health benefits to the host. In both cases, bacteria, yeasts, and filamentous fungi mediate key metabolic activities that generate bioactive compounds and modulate host-microbiota interactions. During fermentation, microbial communities synthesize organic acids, peptides, exopolysaccharides, vitamins, and other metabolites that enhance food safety, s

Yeast biosensors represent a promising biotechnological innovation for ensuring the safety and quality of fermented beverages such as beer, wine, and kombucha. These biosensors employ genetically engineered yeast strains to detect specific contaminants, spoilage organisms, or hazardous compounds during fermentation or the final product. By integrating synthetic biology tools, researchers have developed yeast strains that can sense and respond to the presence of heavy metals (e.g., lead or arsenic), mycotoxins, ethanol levels, or unwanted microbial metabolites. When a target compound is detecte

Fermented foods are increasingly recognized for their potential benefits in supporting bone health, attributed to their rich content of bioactive compounds including vitamins K and B, polyphenols, peptides, and fermentation-modified phytates. This review examines how these components, enhanced in bioavailability through fermentation, may modulate bone metabolism via multiple mechanisms: improving mineral absorption, reducing inflammation, regulating oxidative stress, and influencing osteoblast and osteoclast activity. Special attention is given to the gut-bone axis, where fermented foods inter

In this article we explore the intersection of science and art through a collaboration between us scientists and the bioartists Anna Dimitriu and Alex May, focusing on the interface of yeast biotechnology and art. The collaboration, originally initiated in 2018, resulted in three major artworks: CULTURE, depicting the evolution of yeast and human societies; FERMENTING FUTURES, illustrating a synthetic autotrophic yeast and its link to lactic acid production; and WOOD SPIRIT-AMBER ACID, inspired by the VIVALDI project targeting CO2 reduction to methanol. We emphasize the reciprocal nature of th

The research focused on the glucosinolate (GLS) breakdown products formed during the fermentation of cabbage. A relationship between the contents of degradation products in fermented cabbage and native GLS in raw cabbage was investigated. The effect of fermented cabbage storage on the contents of individual compounds was also assayed. Ascorbigen formed from one of the degradation products of glucobrassicin (indole GLS) was found to be a dominating compound in fermented cabbage. Irrespective of the time of fermented cabbage storage, the content of ascorbigen reached approximately 14 micromol/10

1. Sera from which the protective lipoids (unsaturated fatty acids) have been removed are toxic for the homologous animal. 2. The toxicity is due to three factors: (a) an alteration in the mechanism of coagulation, with resulting intravascular coagulation; (b) the exposure of the native serum proteins; (c) the formation of toxic split products (primary proteoses) by autolysis. 3. A definite maximum of toxicity can be determined, with a final stage of atoxicity due to continued autolysis. 4. Hirudin and sodium citrate do not protect animals. 5. Heating to 70 degrees C. destroys, or greatly less

The lactose, glucose, and galactose content in various fermented milk products was studied by enzymatic methods. Lactose was decreased in all fermented products. After 11 days storage of yogurt the lactose content decreased to about 2.3 g/100 compared to 4.8 g/100 g in nonfermented milk. During the same period, galactose content increased from traces in milk to 1.3 g/100 g in yogurt. Results were similar with acidophilus and bifidus milk. Buttermilk, kefir, and ropy milk showed 26, 30, and 20% decreases in lactose content. Eight lactose intolerant individuals showed symptoms of abdominal distr

Lipid metabolism and fatty acid-derived volatiles (FADVs) are crucial in black tea aroma formation. Herein, dynamic variations of 458 lipids and 59 volatiles during black tea fermentation were investigated by multi-omics using UHPLC-Q-Exactive/MS and GC-MS. 120 lipids and 27 FADVs were predominantly altered during fermentation. Glycerophospholipids and glycoglycerolipids harboring 18:2 and 18:3 fatty acyls were highlighted as potential aromatic precursors. Model experiments using linoleic acid revealed firstly that both non-enzyme auto-oxidation and enzyme oxidation participated in FADVs forma

The toxicity of lignocellulosic hydrolysate has long plagued the alcoholic fermentation industry, whereas elevating dissolved oxygen concentrations can effectively enhance microbial tolerance and fermentation efficiency. This study further elucidates the rapid sugar metabolism mechanism of Candida glycerinogenes under aerobic conditions by examining its carbon flux allocation and sugar metabolic rates. C. glycerinogenes has an excellent performance on glycolytic rate and ethanol productivity compared to Saccharomyces cerevisiae under aerobic conditions. Unlike S. cerevisiae W303, C. glycerinog

As the demand for sustainable and cost-effective bioprocesses intensifies, acetogenic bacteria have gained renewed attention for their unique metabolic capabilities. Traditionally recognised for their role in gas fermentation, these anaerobes fix CO2 and other C1 substrates via the Wood-Ljungdahl pathway, enabling carbon-neutral production of platform chemicals and biofuels. However, recent research has expanded their potential well beyond gaseous substrates. Acetogens exhibit remarkable metabolic flexibility, utilising a wide array of organic compounds, including saccharides, alcohols, organi

Butanol represents a high-energy-density advanced biofuel with superior compatibility to conventional fuel infrastructures and broad industrial significance. As a promising second-generation biofuel, biobutanol is predominantly produced via acetone-butanol-ethanol (ABE) fermentation by solventogenic Clostridium species. This chapter focuses on biobutanol production from lignocellulosic agricultural residues, a non-food and sustainable feedstock. It illustrates the composition of lignocellulosic hydrolysates and the inhibitory effects of toxic byproducts on microbial metabolism and butanol bios

Dietary strategies and plant-based fermented foods have attracted increasing interest for supporting gastrointestinal health, particularly under conditions of drug-induced mucosal stress. Soybean fermentation broth (SFB), a fermented soybean-derived product, may possess enhanced nutritional and functional properties through fermentation-associated generation of bioactive peptides and antioxidant metabolites. This study evaluated the gastroprotective effects of SFB in an indomethacin-induced gastric injury model in rats and investigated the underlying mechanisms. Indomethacin markedly induced g

Protein fermentation is associated with diarrhoea in pigs through the presence of potentially toxic metabolites, including ammonia, branched-chain fatty acids, biogenic amines, and indolic and phenolic compounds. One approach to reduce these metabolites is the dietary inclusion of fibres. In this experiment, 128 boars (mean BW ± SEM; 24 ± 1.5 kg) were assigned to diets without added fermentable fibres (NFF), with rapidly fermentable fibres (RFF), or with slowly fermentable fibres (SFF), using either bovine collagen (BC) or zein (ZE) as the only, low-digestible protein source. In addition, two

Olive mill wastewater is a by-product of olive oil extraction, characterized by a high concentration of organic matter, which presents a significant environmental challenge if not properly managed. This study was aimed at valorizing olive mill wastewater through selective fermentations to produce acetic beverages with low or no alcohol content. Olive mill wastewaters at three different dilutions (100%, 75% and 50%) were inoculated with Saccharomyces cerevisiae UMCC 855 for alcoholic fermentation. The resulting alcoholic product, with 75% olive mill wastewater, was then used as a substrate for

Activation of the Nod-like receptor 3 (NLRP3) inflammasome is important for activation of innate immune responses, but improper and excessive activation can cause inflammatory disease. We previously showed that glycolysis, a metabolic pathway that converts glucose into pyruvate, is essential for NLRP3 inflammasome activation in macrophages. Here, we investigated the role of metabolic pathways downstream glycolysis - lactic acid fermentation and pyruvate oxidation-in activation of the NLRP3 inflammasome. Using pharmacological or genetic approaches, we show that decreasing lactic acid fermentati

Tylosin fermentation residues (TFR) pose an ecotoxicological risk through antibiotic resistant bacteria (ARBs) and their corresponding genes (ARGs). This study evaluated the ecotoxicity of TFR to soil biological activity, and further explored the mechanisms of vermicomposting to reduce the toxicological risk. The results showed that tylosin (TYL) was moderately degradable with a half-life (t1/2) of 37.5 d, inducing 28-44% inhibition rate of nitrogen transformation in soil, and the EC50 of earthworm avoidance was 880 mg/kg. The 30-d vermicomposting reduced the pH and OM content, while increased
