Lacto-fermented vegetables as dynamic food ecosystems: emerging mechanisms along the microbiome-gut-brain axis.

Lacto-fermented vegetables (LFVs) are traditional foods produced through the microbial transformation of plant materials by lactic acid bacteria, with additional contributions from yeasts and other microorganisms. Fermented foods have been increasingly investigated for their potential modulation of the microbiome-gut-brain axis. This research has mainly focused on dairy fermentations, leaving LFVs largely underexplored. This mini review examines LFVs and their emerging mechanisms within the microbiome-gut-brain axis (MGBA). It emphasizes their character as evolving microbial ecosystems and as

Do cooking techniques influence copper bioaccesibility in foods after in vitro digestion/fermentation in adults and children?

Cu is essential for the growth and organism health. Classically, its available fraction has been studied by in vitro digestion studies as a measure of bioaccessibility of Cu (Cu-BA). In this work we applied a novel in vitro digestion/fermentation method to multiple foods subjected to different home cooking techniques (raw form vs. frying, roasting, toasting, boiling and grilling) by metabolization with faecal inoculate from healthy adults (HE-AD), and healthy children (HE-CH) and sick children (children with gluten related disorders, GRD-CH; children with obesity, OB-CH; and children with alle

Fermentative production of 2,3-Butanediol using bread waste - A green approach for sustainable management of food waste.

Bread is Europe's most wasted food, and the second most wasted food after potatoes in UK. Bread waste (BW) is a clean source of high-quality fermentable sugars. In this study, the potential of Enterobacter ludwigii to accumulate 2,3-butanediol (BDO) from BW was evaluated. Initially, the optimal inoculum size and yeast extract concentration were determined, followed by extraction of sugars from BW using acid and enzymatic hydrolysis. A glucose yield of 330-530 g/kg BW was obtained, and the sugars released were utilised for BDO production by E. ludwigii. The fed-batch cultivation using pure gluc

Antihyperglycemic and anti-inflammatory effects of fermented food paste in high-fat diet and streptozotocin-challenged mice.

BACKGROUND: Fermented food has been widely consumed as health food to ameliorate or prevent several chronic diseases including diabetes. Xeniji™, a fermented food paste (FFP), has been previously reported with various bioactivities, which may be caused by the presence of several metabolites including polyphenolic acids, flavonoids, and vitamins. In this study, the anti-hyperglycemic and anti-inflammatory effects of FFP were assessed. METHODS: In this study, type 2 diabetes model mice were induced by streptozotocin and high-fat diet (HFD) and used to evaluate the antihyperglycemic and anti-inf

Liubao tea as a functional fermented food: multi-omics insights into its modulation of lymphatic endothelial cell metabolism.

BACKGROUND: The "metabolism-inflammation" vicious cycle is an important driving factor for lymphatic dysfunction in secondary lymphedema (SL). Among them, lymph endothelial cells (LECs) act as a key regulatory hub. Liubao tea (LBT), a traditional post-fermented black tea, has anti-inflammatory, anti-fibrotic and lipid-lowering effects. However, whether the effects of LBT can extend to the lymphatic system, especially whether it functions by regulating the metabolism and immune function of LECs, still needs further clarification. METHODS: This study combined single-cell transcriptomics, bulk t

Ethanolphilic lactic acid bacterium Fructilactobacillus fructivorans as the key microorganism for fermentation of narazuke, a traditional Japanese preserved food.

Narazuke is a traditional Japanese preserved food produced by repeatedly embedding salted vegetables in sake kasu, which is a byproduct remaining after pressing sake mash. While the prototype of narazuke existed as early as the 8th century and has long been enjoyed by Japanese people, whether microbial fermentation occurs during narazuke-making remained unclear. We first analyzed the microbiota of narazuke throughout manufacturing processes, showing that the prokaryotic microbial community gradually converged and was finally dominated by a single lactic acid bacterium (LAB), Fructilactobacillu

Effect of fermentation on nutrient composition, antinutrients, and mineral bioaccessibility of finger millet based Injera: A traditional Ethiopian food.

Finger millet, like other cereals, contains high amounts of antinutrients that bind minerals, making them unavailable for absorption. This study explores the effect of traditional fermentation on nutritional, antinutritional, and subsequent mineral bioaccessibility (specifically iron, zinc, and calcium) of finger millet based Injera. Samples of fermented dough and Injera prepared from light brown and white finger millet varieties were analyzed for nutritional composition, antinutritional content, and mineral bioaccessibility following standard procedures. With some exceptions, the proximate co

Harnessing the probiotic properties and immunomodulatory effects of fermented food-derived Limosilactobacillus fermentum strains: implications for environmental enteropathy.

INTRODUCTION: Environmental enteropathy (EE), a chronic small intestine disease characterized by gut inflammation, is widely prevalent in low-income countries and is hypothesized to be caused by continuous exposure to fecal contamination. Targeted nutritional interventions using potential probiotic strains from fermented foods can be an effective strategy to inhibit enteric pathogens and prevent chronic gut inflammation. METHODS: We isolated potential strains from fermented rice water and lemon pickle and investigated their cell surface properties, antagonistic properties, adhesion to HT-29 c

The contribution of cell wall integrity to gastric emptying and in vitro starch digestibility and fermentation performance of highland barley foods.

Studies have shown that the structure, composition, and bioavailability of compounds in whole grains are affected by processing and the role of cells walls. In this study, the effects of different processing methods on highland barley, one of the mostly widely produced whole grains worldwide, were investigated. The processing methods applied were flaking-boiling (HB flake), sand-roasting (Puffed HB), and sand-roasting-milling (Tsamba). Results showed Puffed HB and Tsamba had higher levels of damaged starch content, starch short-range molecular order, and relative crystallinity than HB flake. T

The altered production and property of saliva induced by ingesting fermented food ingredients affect the oral microbiome composition in mice.

Oral functions are diverse and critical to human health. Therefore, insufficient secretion or poor quality of saliva, which is secreted into the oral cavity and plays various roles, could have a crucial influence on the oral microenvironment and be associated with systemic disease development. Here, we investigated the effects of food ingredients on saliva quantity and quality, including fermented ones. Through the in vitro submandibular glands' organ culture analyses, we found that "Yomo gyutto," fermented Japanese mugwort (Artemisia princeps), altered the expression of aquaporin-5, a water c

Recombinant Production and Characterization of an Extracellular Subtilisin-Like Serine Protease from Acinetobacter baumannii of Fermented Food Origin.

Acinetobacter baumannii is a ubiquitous bacteria that is increasingly becoming a formidable nosocomial pathogen. Due to its clinical relevance, studies on the bacteria's secretory molecules especially extracellular proteases are of interest primarily in relation to the enzyme's role in virulence. Besides, favorable properties that extracellular proteases possess may be exploited for commercial use thus there is a need to investigate extracellular proteases from Acinetobacter baumannii to gain insights into their catalytic properties. In this study, an extracellular subtilisin-like serine prote

Effects of plant food potassium salts (citrate, galacturonate or tartrate) on acid-base status and digestive fermentations in rats.

Potassium (K) organic anion salts, such as potassium citrate or potassium malate in plant foods, may counteract low-grade metabolic acidosis induced by western diets, but little is known about the effect of other minor plant anions. Effects of K salts (chloride, citrate, galacturonate or tartrate) were thus studied on the mineral balance and digestive fermentations in groups of 6-week-old rats adapted to an acidogenic/5 % inulin diet. In all diet groups, substantial amounts of lactate and succinate were present in the caecum, besides SCFA. SCFA were poorly affected by K salts conditions. The K
