Antimicrobial Resistance and Virulence-Associated Traits of Campylobacter jejuni Isolated From Poultry Food Chain and Humans With Diarrhea.

The objective of this study was to test the prevalence of virulence-associated markers and antimicrobial resistance in 624 C. jejuni isolated from poultry food chain, i. e., chicken feces (n = 160), poultry carcasses (n = 157), poultry meat (n = 152) and from humans (n = 155). All human strains were positive for 9 out of 13 putative virulence genes responsible for expression of pathogenic factors involved in different stages of the infection. The presence of all markers was also high in strains from chicken feces, carcasses and meat although not all of them were identified in 100% of the isola

Brief aerobic pretreatment for stabilizing long-term caproate production from food waste via fungi-bacteria chain-elongating consortia.

Recovery of medium-chain carboxylic acids (MCCA) from food waste is constrained by low efficiency and instability. This study validated a short-term aerobic pretreatment (AP) strategy to enhance fungi-bacteria synergy. In batch tests, AP (0.2 vvm) achieved optimal caproate titers of 22.32 ± 1.56 g COD/L. The pretreatment enriched ethanol-producing yeasts and lactate-producing bacteria, establishing a robust co-electron donor pool. Metagenomic analysis revealed that this synergy suppressed the competing tricarboxylic acid cycle, redirecting carbon flux towards reverse β-oxidation (RBO) pathway

Mature Listeria monocytogenes Biofilms Exhibit Reduced Susceptibility to Sanitizers - Relevance to the (Leafy Green) Fresh Food Supply Chain.

Salads and herbs are important for a healthy diet but during their processing and packaging, they may be exposed to environmental contamination from foodborne pathogens. Of particular concern is Listeria monocytogenes, a Gram-positive, facultative anaerobe, found ubiquitously in the environment. L. monocytogenes can survive and grow under harsh conditions such as refrigeration temperatures, low oxygen or nutrient concentrations, which is why it is a problem in the fresh food supply chain. Infection with L. monocytogenes can result in listeriosis, potentially fatal in immunocompromised patients

Characterization of E. coli Isolates Producing Extended Spectrum Beta-Lactamase SHV-Variants from the Food Chain in Germany.

Resistance of bacteria to 3rd generation cephalosporins mediated by beta-lactamases (ESBL, pAmpC) is a public health concern. In this study, 1517 phenotypically cephalosporin-resistant E. coli were screened for the presence of blaSHV genes. Respective genes were detected in 161 isolates. Majority (91%) were obtained from poultry production and meat. The SHV-12 beta-lactamase was the predominant variant (n = 155), while the remaining isolates exhibited SHV-2 (n = 4) or SHV-2a (n = 2). A subset of the isolates (n = 51) was further characterized by PCR, PFGE, or whole-genome sequencing and bioinf

Proteomic approach for identifying gonad differential proteins in the oyster (Crassostrea angulata) following food-chain contamination with HgCl2.

UNLABELLED: Hg discharged into the environmental waters can generally be bioaccumulated, transformed and transmited by living organisms, thus resulting in the formation of Hg-toxicity food chains. The pathway and toxicology of food chain contaminated with environmental Hg are rarely revealed by proteomics. Here, we showed that differential proteomics had the potential to understand reproduction toxicity mechanism in marine molluscs through the Hg-contaminated food chain. Hg bioaccumulation was found in every link of the HgCl2-Chlorella vulgaris-oyster-mice food chain. Morphological observation

Microbial Survival, Sublethal Injury, and Recovery in Frozen Food Systems: Implications for Safety, Quality Deterioration, and Cold-Chain Control.

Freezing is widely regarded as a microbiologically protective process that suppresses growth and extends shelf life but rarely eliminates microorganisms. Microbial risk in frozen foods is, therefore, determined not only by survival during storage at -18°C but by post-thaw repair and growth during thawing and handling. This review synthesizes freeze-induced injury mechanisms, including membrane damage, osmotic stress, oxidative injury, and macromolecular disruption, and links them to physiological state transitions, lag phase behavior, and recovery potential. Rather than treating sublethal inju

Multiplex polymerase chain reaction and testing of complex food matrices: A preliminary study on E. coli and Salmonella spp.

Foodborne diseases are caused by various pathogens and generally present with similar symptoms, mainly digestive disorders. Adopting a syndromic approach is therefore important when investigating foodborne disease outbreaks. This involves using multiplex PCR-based methods to test stool and food samples. In this study, the BioFire® FilmArray® Gastrointestinal Panel (BF-GIP) was evaluated as an alternative food microbiology method, in compliance with the ISO 16140-2 standard. We tested 205 naturally and artificially-contaminated mixed salad samples for Escherichia (E.) coli and Salmonella spp.,

Antibiotics and Pesticides Enhancing the Transfer of Resistomes among Soil-Bayberry-Fruit Fly Food Chain in the Orchard Ecosystem.

While substantial amounts of antibiotics and pesticides are applied to maintain orchard yields, their influence on the dissemination and risk of antibiotic resisitome in the orchard food chain remains poorly understood. In this study, we characterized the bacterial and fungal communities and differentiated both antibiotic resistance genes (ARGs) and virulence factor genes (VFGs) in the soil, Chinese bayberry (matured and fallen), and fruit fly gut, collected from five geographic locations. Our results showed that fruit fly guts and soils exhibit a higher abundance of ARGs and VFGs compared wit

Robust optimization and strategic analysis for agri-food supply chain under pandemic crisis: Case study from an emerging economy.

Pandemic crises like the coronavirus disease 2019 (COVID-19) have severely influenced companies working in the Agri-food industry in different countries. Some companies could overcome this crisis by their elite managers, while many experienced massive financial losses due to a lack of the appropriate strategic planning. On the other hand, governments sought to provide food security to the people during the pandemic crisis, putting extreme pressure on companies operating in this field. Therefore, the aim of this study is to develop a model of the canned food supply chain under uncertain conditi

Processing-Dependent and Clonal Contamination Patterns of Listeria monocytogenes in the Cured Ham Food Chain Revealed by Genetic Analysis.

The quantitative and qualitative patterns of environmental contamination by Listeria monocytogenes were investigated in the production chain of dry-cured Parma ham. Standard arrays of surfaces were sampled in processing facilities during a single visit per plant in the three compartments of the food chain, i.e., ham production (19 plants) and postproduction, which was divided into deboning (43 plants) and slicing (25 plants) steps. The numbers of sampled surfaces were 384 in ham production, with 25 positive for L. monocytogenes, and 1,084 in postproduction, with 83 positives. Statistical analy

Reconstructing food colorants via synthetic biology: From microbial cell factories to sustainable biomanufacturing supply chains.

Food colorants constitute a critical segment of the global food industry, with an anticipated market valuation of USD 36.58 billion by 2030. Mounting safety apprehensions regarding synthetic dyes, illustrated by the recent ban on FD&C Red No. 3, have intensified the pursuit of sustainable natural substitutes. Concurrently, progress in synthetic biology and metabolic engineering has established microbial cell factories as a revolutionary system for the environmentally benign, large-scale production of these colorants. This review focuses on the microbial synthesis of food colorants in the three

Exploring gut microbiota responses to low-dose thallium exposure via food chain transfer: insights from soil-plant-human systems.

Thallium (Tl) is a toxic metal and priority pollutant, its soluble Tl levels in soil drive Tl accumulation in edible plants, posing health risks to gut microbiota via dietary exposure even at low doses. This study investigated Tl accumulation in sweet potatoes (4.45-32.87 µg/kg dry weight, 0.2442-1.7368 µg/kg wet weight) from soils (282.89-699.50 µg/kg) and its impact on a single pooled microbial community derived from fecal samples of three healthy adults (2 females, 1 male, 20-30 years) using an in vitro digestion-colon fermentation model. Low-dose Tl exposure drove significant, dose- and ti

Combined effect of Tetracycline compounds and essential oils on antimicrobial resistant Salmonella enterica isolated from the swine food chain.

Antimicrobial resistance (AMR) poses risks for food stakeholders because of the spread of resistant microbes and potential foodborne diseases. In example, pigs may carry Salmonella strains, which can infect humans through contaminated food preparations. Due to their antibacterial properties and capacity to modulate bacterial drug resistance, essential oils (EOs) are attracting interest as prospective substitutes for synthetic antimicrobials which can help to reverse microbial resistance. Hence, the present study evaluates the antimicrobial effectiveness of the combination of tetracycline (Tc)

Phenotypic and Genotypic Properties of Fluoroquinolone-Resistant, qnr-Carrying Escherichia coli Isolated from the German Food Chain in 2017.

Fluoroquinolones are the highest priority, critically important antimicrobial agents. Resistance development can occur via different mechanisms, with plasmid-mediated quinolone resistance (PMQR) being prevalent in the livestock and food area. Especially, qnr genes, commonly located on mobile genetic elements, are major drivers for the spread of resistance determinants against fluoroquinolones. We investigated the prevalence and characteristics of qnr-positive Escherichia (E.) coli obtained from different monitoring programs in Germany in 2017. Furthermore, we aimed to evaluate commonalities of

Estimating the impact on the food chain of changing bovine spongiform encephalopathy (BSE) control measures: the BSE control model.

The decline in the bovine spongiform encephalopathy (BSE) epidemic in Great Britain (GB) demands a review of control strategies to ensure that they remain proportionate. Amongst controls that are subject to review are those intended to minimise the risk of BSE exposure of consumers through food. Such risk mitigation steps are costly, and the relative impact of each in terms of human exposure to BSE infectivity is not known. This risk assessment, termed the BSE Control Model, aims to estimate by use of stochastic simulation the impact of testing of cattle at slaughter and the removal of Specifi

A Systematic Review of Microplastic Contamination in Tuna Species: General Pathways into the Food Chain with Ecotoxicological and Human Health Perspectives.

Tuna species, as highly migratory apex predators of major commercial significance, play a vital role as biological indicators of microplastics (MPs) contamination due to their trophic position and wide geographic distribution. Current systematic review aims to analyze the occurrence, characteristics, and concentrations of MPs in various tuna species. Data from 19 studies were compiled, focusing on the presence of MPs in different organs (gills, muscles, gastrointestinal tracts). High concentrations of MPs were found in tuna species from the Bay of Bengal (42.13 ± 13.58 MPs/individual in Thunnu

Enhancing the Community Chain of Survival: A Simulation Study of Defibrillator Delivery by Food Delivery Riders in a High-Density City.

BACKGROUND: Timely defibrillator delivery for out-of-hospital cardiac arrests (OHCAs) remains challenging, with most cases relying on emergency medical services (EMSs) for response. In this simulation study we examined the feasibility of using food delivery (FD) scooter riders as first responders for defibrillator delivery in OHCA incidents and compared simulated defibrillator arrival times with documented times. METHODS: This simulation study was conducted in Taipei, a densely populated city with a high concentration of scooter-based FD riders. OHCA cases were retrieved from the OHCA Registr

"The ones at the bottom of the food chain": structural drivers of unintended pregnancy and unsafe abortion amongst adolescent girls in Zambia.

BACKGROUND: Access to safe abortion care is highly unequal and fundamentally rooted in socioeconomic inequalities which are amplified by restrictive social norms and legal systems. We analyse these inequalities along the reproductive health continuum amongst adolescent girls in Zambia. METHODOLOGY: This paper draws from 20 focus group discussions conducted in 2021 with community members (young/adult) in five urban, peri urban, and rural sites in Zambia. Data was analysed using thematic analysis. RESULTS: Adolescent pregnancy in the community was reported to be very common across the communit

Phenotypic and Genotypic Analysis of Antimicrobial Resistance among Listeria monocytogenes Isolated from Australian Food Production Chains.

The current global crisis of antimicrobial resistance (AMR) among important human bacterial pathogens has been amplified by an increased resistance prevalence. In recent years, a number of studies have reported higher resistance levels among Listeria monocytogenes isolates, which may have implications for treatment of listeriosis infection where resistance to key treatment antimicrobials is noted. This study examined the genotypic and phenotypic AMR patterns of 100 L. monocytogenes isolates originating from food production supplies in Australia and examined this in the context of global popula
