The impact of processing meat and fish products on phosphorus intake in chronic kidney disease patients.

INTRODUCTION AND OBJECTIVES: The use of phosphate additives in meat and fish processing leads to a phosphorus overload that we cannot quantify through labelling or food composition tables. We analysed this increase by measuring phosphorus content in these products by spectrophotometry. MATERIALS AND METHOD: We determined the phosphorus/protein ratio in fresh meat and fish products with varying degrees of processing by spectrophotometry (phosphorus) and the Kjeldahl method (proteins). We contrasted these results with those reflected in the food composition tables. RESULTS: The phosphorus/prot

Amazonian fruits with potential effects on COVID-19 by inflammaging modulation: A narrative review.

The COVID-19 pandemic had a great impact on the mortality of older adults and, chronic non- transmissible diseases (CNTDs) patients, likely previous inflammaging condition that is common in these subjects. It is possible that functional foods could attenuate viral infection conditions such as SARS-CoV-2 (severe acute respiratory syndrome coronavirus 2), the causal agent of COVID-19 pandemic. Previous evidence suggested that some fruits consumed by Amazonian Diet from Pre-Colombian times could present relevant proprieties to decrease of COVID-19 complications such as oxidative-cytokine storm. Development of a liquid chromatography-tandem mass spectrometry method for the determination of sulfite in food.

Sulfites are widely used food preservatives that can cause severe reactions in sensitive individuals. As a result, the U.S. FDA requires that sulfites be listed on the label of any food product containing >10 mg/kg (ppm) sulfite (measured as sulfur dioxide). Currently, the optimized Monier-Williams (MW) method (AOAC Official Method 990.28) is the most common approach for determining sulfite concentrations in food samples. However, this method is time-consuming and lacks specificity in certain matrices. An improved rapid, sensitive, and selective method has been developed using electrospray ion

Susceptibility of Listeria monocytogenes strains isolated from dairy products and frozen vegetables to antibiotics inhibiting murein synthesis and to disinfectants.

The susceptibility of 96 strains of Listeria monocytogenes isolated from food to antibiotics and disinfectants currently used in human therapy, veterinary, medicine and food industry was determined by a standard operating procedure--broth dilution method. Antimicrobial agents included the beta-lactams ampicillin and penicillin, the lantibiotic nisin, and the disinfectants benzalkonium chloride and chlorhexidine gluconate. Among the studied strains we found 13 strains with 8-fold, 7 strains with 16-fold and 2 strains with 32-fold decreased susceptibility to ampicillin, as determined by MIC, com

The occurrence and antimicrobial susceptibility of salmonellae isolated from commercially available canine raw food diets in three Canadian cities.

The purpose of the present study was to evaluate the prevalence and antimicrobial resistance patterns of Salmonella isolated from commercially available canine raw food diets in Canada. A total of 166 commercial frozen raw food diet samples were purchased from randomly selected local pet stores in three Canadian cities for a period of 8 months. All samples were evaluated for the presence of Salmonella, serotyped and tested for antimicrobial susceptibility. There was an overall Salmonella prevalence of 21%; chicken was an ingredient for 67% of the Salmonella-positive diets. Eighteen different S

Characterization of the prevalence of Salmonella in different retail chicken supply modes using genome-wide and machine-learning analyses.

Salmonella is a foodborne pathogen that causes salmonellosis, of which retail chicken meat is a major source. However, the prevalence of Salmonella in different retail chicken supply modes and the threat posed to consumers remains unclear. The prevalence, serotype distribution, antibiotic resistance, and genomic characteristics of Salmonella in three supply modes of retail chicken (live poultry, frozen, and chilled) were investigated using whole-genome sequencing (WGS) and machine learning (ML). In this study, 480 retail chicken samples from live poultry, frozen, and chilled supply modes in Gu

Use of novel PCR primers specific to the genes of staphylococcal enterotoxin G, H, I for the survey of Staphylococcus aureus strains isolated from food-poisoning cases and food samples in Taiwan.

Data regarding the incidence of the newly found enterotoxigenic Staphylococcus aureus strains in food poisoning cases and in food samples were to date not available in Taiwan. In this study, PCR primers specific for the detection of SEG, H and I genes, i.e., seg, seh and sei, were used for the assay of 55 human isolates of S. aureus negative to the classical enterotoxins (SEA-->SEE) detection. These isolates were from the fecal specimens of the patients suffering from food poisoning outbreaks. Only eight strains were found to have the seg, seh and sei. The presence of other bacterial pathogens

Phenotypic and genotypic antimicrobial resistance traits of foodborne Staphylococcus aureus isolates from Shanghai.

Staphylococcus aureus is a recognized pathogen in humans, which causes nosocomial infections and food poisoning. The transmission of antibiotic resistant S. aureus (ARSA), especially methicillin-resistant S. aureus, between food products and humans has become a serious problem. Hence, it is necessary to monitor S. aureus through the food supply chain. In this study, the disk diffusion method and epsilometer test were performed to determine the prevalence of ARSA in 78 foodborne isolates using 18 antibiotics. The highest resistance frequency was found for penicillin G (74.4%), followed by eryth

Molecular insights into freeze-induced quality deterioration in surimi: Mechanisms and mitigation strategies.

Surimi, a concentrated myofibrillar protein product derived from fish muscle, serves as a fundamental raw material in a wide range of processed aquatic foods. Although freezing and frozen storage are essential for ensuring microbial safety and extending shelf life, it inevitably leads to quality deterioration. This review critically examines the molecular mechanisms underlying freeze-induced quality degradation in surimi, emphasizing the roles of ice crystal formation, protein denaturation, and lipid oxidation. Furthermore, recent advances in novel technologies, including liquid nitrogen freez

Neurotoxins: Current Concepts in Cosmetic Use on the Face and Neck--Upper Face (Glabella, Forehead, and Crow's Feet).

There are 3 Food and Drug Administration-approved botulinum toxin formulations now being successfully used for treatment in the upper face. The most common areas for botulinum toxin treatment are the upper face, including the glabella, forehead, brows, and lateral canthal lines or crow's feet. The frozen look is no more desired in patients. Thus, physicians are more commonly individualizing dosage based on the patient's variation in anatomy, muscle mass, asymmetry, and, most importantly, desired outcome.

Anticoagulation instability with life-threatening complication after dietary modification.

Anticoagulation instability due to a change in intake of vitamin K after dietary modification was observed in 2 patients on long-term oral anticoagulants. One patient developed diffuse bruises treated conservatively with fresh frozen plasma transfusion and the other had a thrombosed aortic prosthesis which required emergency operation. To prevent such complications, dietary modification especially with food rich in vitamin K should be undertaken with care in patients on long-term oral anticoagulants.

Free summer programming on elementary-aged children's food and beverage consumption: a randomized clinical trial.

PURPOSE: During summer vacation, many children in households with low income lose access to federally-funded, healthful school meals. Summer day camps (SDCs) provide access to healthful meals and a structured environment; yet low-income families often cannot afford SDCs which may influence food/beverage consumption. This study examined the impact of receiving a free SDC versus experiencing summer as usual (SAU) on dietary intake during summer among children from low-income families. METHODS: Parent-child dyads (N = 422; child age: 8.2 ± 1.5 yrs; 48% female; 51% Black) were recruited over 3 yea

Lychee-flavored gel candies: a potentially lethal snack for infants and children.

A 10 month-old infant was given a Lychee Mini Fruity Gel (AP Frozen Foods Ltd, Thailand) by his mother while shopping in a supermarket. The child was sucking on the gel when he began to choke and have difficulty breathing. Emergency medical services were called, and paramedics found the child to be in respiratory arrest with a palpable pulse of 40 beats/min. They transported him to the pediatric emergency department, performing bag-valve-mask ventilation with a manual resuscitator. The child was intubated and taken to the operating room for bronchoscopy and then the pediatric intensive care un

Quantitative fatty acid signature analysis (QFASA) to explore the diet of the plateau pika (Ochotona curzoniae) during winter on the Qinghai-Xizang (Tibetan) plateau.

The plateau pika, a keystone species of the Tibetan Plateau, is also widely poisoned as an agricultural pest. An intriguing observation is that pika are more abundant where their main competitor (domestic yak) is also most abundant. A recent study showed that this may be because pika supplement their diet in winter by consuming yak feces. Here we used quantitative fatty acid signatures analysis to explore pika diet and detect the possibility of coprophagy. We collected fat tissue from pika at 3 sites of varying elevation, and compared the abundance of 10 fatty acids (FA) in their body fat with

Coagulase-positive staphylococci isolated from chicken meat: pathogenic potential and vancomycin resistance.

Coagulase-positive staphylococci (CPS) cause staphylococcal food poisoning. Recently, these bacteria have received increasing attention due to their potential role in the dissemination of antibiotic resistance markers. The present study aimed to evaluate coagulase-positive staphylococci counts, species distribution, enterotoxin genes prevalence, and the antibiotic resistance profile of CPS isolated from in natura chicken meat. Fifteen frozen and 15 chilled industrialized, uncooked chicken parts or entire carcasses were used. Staphylococcal counts revealed that frozen chicken meat samples displ
