Development of novel microbial synthetic consortia for the production of antimicrobial fermentates containing caproate.

Short- and medium chain carboxylic acids (SCCA/MCCA) are natural antimicrobials produced by fermentation and chain elongation, but currently only a few SCCA/MCCA are used in food-related applications. With the aim to diversify the SCCA/MCCA profile of fermentates for biopreservation, we designed bioprocesses employing bacterial or multi-kingdom consortia to produce caproate-containing fermentates using a targeted cross-feeding strategy. We combined Limosilactobacillus reuteri, Clostridium kluyveri, and Saccharomyces cerevisiae, and quantified substrates utilization and metabolites. The antimic

[Experimental study of mixed infection by Vibrio cholerae and Salmonella typhi].

Mixed infection caused by V.cholerae and S.typhi was studied on guinea pig gall-bladder, used as an experimental model. These microorganisms coexisted in association in animals and exhibited no pronounced antagonistic properties in vitro. The cultures isolated from the organs of infected guinea pigs did not differ from initial ones. The study revealed that in nutrient broth containing 50% of dried bile salmonellae were preserved, but not V.cholerae. The latter could co-exist with S.typhi in 1% biliary medium prepared on meat-peptone broth (MPB). The use of bile and MPB as the basis for media i

Balancing myogenic purity, expansion stability, and apoptotic resilience in Hanwoo muscle-derived cell sources for cultivated meat biomanufacturing.

The scalability of cultivated meat production depends on the establishment of bovine satellite cell (SC) populations that combine high myogenic purity with stable long-term expansion. This study compared three post-isolation fractionation strategies for expanded Hanwoo muscle-derived cells-fluorescence-activated cell sorting (FACS), pre-plating, and Percoll density gradient centrifugation-with respect to initial myogenic enrichment, proliferative dynamics, apoptotic susceptibility, and passage-dependent compositional stability. FACS provided the highest initial enrichment of PAX7-positive SCs,

Antimicrobial potential of spray drying encapsulated thyme (Thymus vulgaris) essential oil on the conservation of hamburger-like meat products.

Synthetic preservatives can have harmful effects on the body, so plant essential oils appear to be an attractive natural alternative. However, the use of essential oils is limited due to the low stability and possible negative effects on the sensory properties of food. Oil encapsulation was suggested as a way to overcome these drawbacks. The objective of this study was to encapsulate thyme essential oil and to evaluate its antioxidant and antimicrobial potential in vitro and in situ in of hamburger-like meat products. The casein-maltodextrin capsules produced by spray-drying were assessed for

The m6A reader IGF2BP3 facilitates myogenesis by activating the CAMK2B-MEF2C axis.

Skeletal muscle development directly impacts meat quality and productivity in livestock. Although N6-methyladenosine (m6A) RNA methylation has been recognized as a crucial epigenetic mechanism governing myogenesis, the specific functions of Insulin-like Growth Factor 2 mRNA-binding Protein 3 (IGF2BP3), a key m6A reader protein, in goat muscle development remain elusive. This study was designed to dissect the role of IGF2BP3 and its m6A-mediated regulatory mechanisms during goat skeletal muscle development. Our results showed that IGF2BP3 expression was lower in the longissimus muscles of kids

Involvement of nitric oxide during in vitro oocyte maturation, sperm capacitation and in vitro fertilization in pig.

The importance of porcine species for meat production is undeniable. Due to the genetic, anatomical, and physiological similarities with humans, from a biomedical point of view, pig is considered an ideal animal model for the study and development of new therapies for human diseases. The in vitro production (IVP) of porcine embryos has become widespread as a result of these qualities and there is significant demand for these embryos for research purposes. However, the efficiency of porcine embryo IVP remains very low, which hinders its use as a model for research. The high degree of polyspermi

A vegetable to meat consumption ratio as a relevant factor determining cancer preventive diet. The Mediterranean versus other European countries.

The observed growth of cancer incidence in certain regions has been usually linked to frequent consumption of 'Требует внимания' food. Such food often contains genotoxic substances as heterocyclic aromatic amines (HAAs) and/or polycyclic aromatic hydrocarbones (PAHs), occurring during food preparation, which induce DNA damage in cells. These substances are mainly formed during frying or grilling of meat and they can be removed from the body in a two-stage metabolic process of detoxification (phase 1 and phase 2). If they are not excreted, they form DNA adducts. The effectiveness of detoxification dep

Heat stress affects the functionality of the ovine cumulus-oocyte complex and subsequent in vitro embryo production.

Global population growth requires an increase in the production of food, particularly meat, with an expected increase in sheep farming. However, climate change challenges livestock management, with heat stress negatively impacting reproductive performance. In vitro embryo production (IVP) in sheep farming is promising, although optimizing embryo quality and efficiency remains challenging. Heat stress impairs oocyte developmental competence, affecting IVP outcomes. This study investigated the effects of season on oocyte quality and embryo production given seasonal variations in the temperature

Strain- and Dose-Dependent Reduction of Toxoplasma gondii Burden in Pigs Is Associated with Interferon-Gamma Production by CD8+ Lymphocytes in a Heterologous Challenge Model.

Toxoplasma gondii is a worldwide prevalent parasite of humans and animals. The global infection burden exceeds yearly one million disability-adjusted life years (DALY's) in infected individuals. Therefore, effective preventive measures should be taken to decrease the risk of infection in humans. Although human toxoplasmosis is predominantly foodborne by ingestion of tissue cysts in meat from domestic animals such as pigs, the incidence risk is difficult to estimate due to the lack of screening of animals for infection and insights in location and persistence of the parasite in the tissues. Application of In Vitro Models for Studying the Mechanisms Underlying the Obesogenic Action of Endocrine-Disrupting Chemicals (EDCs) as Food Contaminants-A Review.

Obesogenic endocrine-disrupting chemicals (EDCs) belong to the group of environmental contaminants, which can adversely affect human health. A growing body of evidence supports that chronic exposure to EDCs can contribute to a rapid increase in obesity among adults and children, especially in wealthy industrialized countries with a high production of widely used industrial chemicals such as plasticizers (bisphenols and phthalates), parabens, flame retardants, and pesticides. The main source of human exposure to obesogenic EDCs is through diet, particularly with the consumption of contaminated

Methodological approaches to assess protein digestibility with an emphasis on plant-derived foods.

The shift towards sustainable diets has increased interest in plant-based proteins and meat alternatives. The quality of protein depends on the content and digestibility of indispensable amino acids, which are shaped by molecular structure, food matrix interactions and processing. These factors influence amino acid bioavailability, digestion rates and metabolic outcomes. This work provides an overview of protein digestion, highlighting the influence of amino acid sequence, folding, β-sheet prevalence, disulfide crosslinking, aggregation and interactions with anti-nutritional factors on enzymat

Interference of dietary polyphenols with potentially toxic amino acid metabolites derived from the colonic microbiota.

Each day, varying amounts of undigested or partially digested proteins reach the colon where they are metabolized by the microbiota, resulting in the formation of compounds such as ammonia, p-cresol, skatole, phenol, indole, and hydrogen sulfide (H2S). In farm animals, the excessive production of these metabolites can affect the quality of meat and milk and is a source of contaminating emissions from animal manure. In humans, their accumulation is potentially harmful, and it has been proposed that they could be involved in the development of pathologies such as colorectal cancer and ulcerative
