Antimicrobial resistance of Enterococcus species from meat and fermented meat products isolated by a PCR-based rapid screening method.

Enterococci are predominantly found in the gastrointestinal tract of humans and animals, but species commonly resident on vegetation are known. Their presence in large numbers in foods may indicate a lapse in sanitation and their ability to serve as a genetic reservoir of transferable antibiotic resistance is of concern. Conventional culture methods for identification of enterococci are slow and sometimes give false results because of the biochemical diversity of the organisms in this genus. This work reports the development of a PCR-based assay to detect enterococci at the genus level by targ

Alterations of meat quality, lipid composition and flavor in breast meat of laying hens with fatty liver hemorrhagic syndrome.

Fatty liver hemorrhagic syndrome (FLHS) has a high incidence rate in laying hens, and lots of FLHS-affected meat products enter the market every year. At the same time, the meat of laying hens is an important component of the human diet. However, the impact of FLHS on meat of laying hens is unknown, which could have a negative impact on consumers. To explore the effects of FLHS on chicken breast meat, a total of 36 twenty-five-wk-old Jingfen laying hens were used in the experiment. The hens were randomly divided into Control group and Model group, with 6 replicates per group and 3 hens per rep

Effects of high frequency electrical stunning and decapitation on early rigor development and meat quality of broiler breast meat.

Three independent trials were conducted to determine the effects of high frequency electrical stunning followed by decapitation on broiler breast meat rigor development and meat quality. All birds were stunned and half of the birds were killed using a conventional unilateral neck cut, half were killed by decapitation, and both groups were allowed to bleed for 90 s prior to scalding and picking. New York dressed carcasses were chilled in a static ice-water bath for 90 min and held at 2 degrees C prior to deboning. Breast fillets were removed from the carcasses at 2, 4, and 24 h postmortem. Hepatitis E virus in meat and meat products without liver contents - Detection methods, occurrence and implications for public health.

Hepatitis E virus (HEV) is the causative agent of an acute or chronic hepatitis in humans. Genotypes 3 and 4 are zoonotic and mainly infect domestic pigs, wild boars and deer. Consumption of liver and liver-containing products from these animals pose a high risk of human infection. However, the role of undercooked meat and meat products in HEV transmission is less clear. This review therefore summarizes the current knowledge on HEV detection in meat and meat products and the infection risks associated with their consumption. Detection of HEV RNA in muscles of experimentally infected pigs and i

Urinary Response to Consuming Plant-Based Meat Alternatives in Persons with Normal Kidney Function: The SWAP-MEAT Pilot Trial.

BACKGROUND: Consuming excess animal meat may exacerbate kidney disorders, such as urinary stone disease and CKD. Plant-based meat alternatives imitate animal meat and replace animal with vegetable protein, but it is unclear whether eating plant-meat confers similar health benefits as eating whole vegetables. We hypothesized that eating plant-meat when compared with animal meat decreases dietary acid load but increases dietary phosphorus and nitrogen. METHODS: The Study With Appetizing Plantfood—Meat Eating Alternatives Trial was a randomized 8-week, crossover trial (NCT03718988) of participan

Growth performance, carcass traits, meat quality, and blood variables of small-sized meat ducks with different feed efficiency phenotypes.

The study investigated the effects of feed efficiency (residual feed intake, RFI and residual intake and gain, RIG) on the production performance of small-sized meat ducks. Ninety ducks with intermediate and extreme (high and low) RFI values were selected from 1,083 male ducks of similar body weight, and the 3 groups were then redivided according to RIG. For both efficiency measures, the feed conversion ratio (FCR) and average daily feed intake (ADFI) of efficient ducks were significantly lower than those of inefficient ducks (P < 0.05), while the residual body weight gain (RG) was significant

Effect of Carnosine Supplementation on Warmed-Over Flavor, Volatile Compounds, and Meat Quality in Ground Chicken Breast and Thigh Meat.

Lipid oxidation produces an unpleasant warmed-over flavor (WOF) in meat. In this study, the antioxidant peptide carnosine (Car) was added to minced chicken breast and thigh meat, and its effect on WOF, volatile compounds, and meat quality during refrigerated storage was assessed. Breast and thigh meat patties were supplemented with four levels of Car (0, 1.0, 2.5, and 15 mg/g meat) and stored under refrigerated conditions for 1, 3, and 7 days. After that, WOF, volatile components, and meat quality factors were analyzed. The sensory attribute 'oxidized oil odor', a WOF indicator, was affected b

Research progress in the use of lactic acid bacteria as natural biopreservatives against Pseudomonas spp. in meat and meat products: A review.

Meat and meat products represent excellent sources of key nutrients for human health, such as protein, essential amino acids, B vitamins, and minerals. However, they are recognized as highly perishable foods since they represent an ideal substrate for the growth of spoilage and pathogenic microorganisms. Meat spoilage is a complex process that involves multiple microorganisms and a combination of intrinsic and extrinsic ecological factors. One of the most common causative agents of meat spoilage is represented by species of the genus Pseudomonas. To prevent the development of such undesired mi
