Simultaneous thermo-enzymatic modification of pea starch at atmospheric and high temperature-pressure conditions: Implications for structure and resistance to digestibility.

This study evaluated the simultaneous effect of processing temperature (95, 120, and 140 °C), α-amylase-mediated hydrolysis (0-75% peak viscosity reduction), and 72 h storage on the structure and functionality of pea starch. Pasting properties and gel hardness were significantly affected by all factors, with peak viscosity decreasing from 2924 to 682 cP and setback approaching zero at high hydrolysis levels. Gel hardness showed a non-linear response: low hydrolysis enhanced gel strength at 120 °C (1725 ± 31 g), whereas extensive hydrolysis consistently weakened gel formation. Storage promoted

Effect of branched 1,4-butanediol citrate oligomers with different molecular weights on toughness and aging resistance of glycerol plasticized starch.

The thermoplastic starch with glycerol is easy to retrograde and sensitive to hygroscopicity. In this study, branched 1,4-butanediol citrate oligomers with different molecular weights (P1, P2, and P3) are synthesized, and then mixed with glycerol (G) as the co-plasticizers to prepare thermoplastic starch (CS/PG). The results show that the molecular weight and branching degree of the branched 1,4-butanediol citrate oligomers increase as reaction time prolongs. Compared with glycerol plasticized starch, the thermoplastic starch films with branched 1,4-butanediol citrate oligomers/glycerol (10 wt

Gut microbiota-derived propionate mediates the protective effects of green banana resistant starch on ulcerative colitis by inhibiting HDAC1 to promote HIF-1α acetylation.

Ulcerative colitis (UC) is a chronic inflammatory bowel disease with increasing global incidence, lacking specific targeted drugs. Green banana resistant starch (RS) has been shown to possess antioxidant effects and alleviate gastric ulcers and diarrhea, suggesting its potential therapeutic value for UC. However, its specific efficacy and mechanism of action remain unclear. In a dextran sulfate sodium-induced mouse model of UC, this study demonstrated that RS attenuates inflammatory responses and oxidative stress, preserves intestinal barrier function, and enriches beneficial commensals includ

Restoration of the integrity of rat caeco-colonic mucosa by resistant starch, but not by fructo-oligosaccharides, in dextran sulfate sodium-induced experimental colitis.

Butyrate is recognised as efficient in healing colonic inflammation, but cannot be used as a long-term treatment. Dietary fibre that produces a high-butyrate level when fermented represents a promising alternative. We hypothesised that different types of dietary fibre do not have the same efficiency of healing and that this could be correlated to their fermentation characteristics. We compared short-chain fructo-oligosaccharides (FOS) and type 3 resistant starch (RS) in a previously described dextran sulfate sodium (DSS)-induced colitis model. Seventy-two Sprague-Dawley rats received water (co

Complexed Tartary buckwheat starch with ginger exosomes modulates digestion resistance and gut microbiota to alleviate metabolic dysregulation in T2DM mice.

Resistant starch (RS) stabilizes postprandial blood glucose levels through multiple mechanisms and offers distinct advantages in preventing and managing metabolic diseases such as diabetes. This study introduces a novel plant exosome-starch composite system, combining Tartary buckwheat starch (TBS) and ginger exosomes (GELNs), referred to as the TBS-GELNs composite resistant starch (GTBS). Multi-scale physicochemical analysis revealed the molecular interaction mechanisms: composite formation significantly altered the microstructure of gelatinized starch. GELNs interacted with TBS through hydro

A comparison of the effects of resistant starch types on glycemic response in individuals with type 2 diabetes or prediabetes: A systematic review and meta-analysis.

BACKGROUND: Type 2 diabetes (T2D) diagnoses are predicted to reach 643 million by 2030, increasing incidences of cardiovascular disease and other comorbidities. Rapidly digestible starch elevates postprandial glycemia and impinges glycemic homeostasis, elevating the risk of developing T2D. Starch can escape digestion by endogenous enzymes in the small intestine when protected by intact plant cell walls (resistant starch type 1), when there is a high concentration of amylose (resistant starch type 2) and when the molecule undergoes retrogradation (resistant starch type 3) or chemical modificati

Consumption of resistant potato starch produces changes in gut microbiota that correlate with improvements in abnormal bowel symptoms: a secondary analysis of a clinical trial.

BACKGROUND: Studies have linked a lack of dietary fibre, including resistant starch (RS), to disease-associated changes in intestinal bacteria. Healthy people often report abnormal bowel symptoms (ABS), including bloating, constipation, abdominal pain, and diarrhea, however, connections between these symptoms and the gut microbiota are poorly understood. Determining correlations between ABS and taxonomic groups may provide predictive value for using prebiotics to mitigate ABS in combination with stool microbiome testing. METHODS: Post hoc analysis of a three-arm randomized, double-blind, plac

Facile fabrication of a starch-based wood adhesive showcasing water resistance, flame retardancy, and antibacterial properties via a dual crosslinking strategy.

The demand for non-toxic, environmentally friendly, easily processable, water-resistant, flame-retardant and antimicrobial adhesives in the wood processing industry is becoming increasingly urgent. Few adhesives can possess these functions altogether while being synthesized easily. This paper presents a one-pot process utilizing corn starch, sodium hypochlorite, itaconic acid, and borax to synthesize a starch-based adhesive with dual crosslinking. Initial crosslinking takes place between the carboxyl groups of itaconic acid and hydroxyl groups on oxidized starch due to the formation of ester b

Type 3 resistant starch from Canna edulis improves Parkinson's symptoms, including behavioral function and nerve damage, in Parkinson's model rats by regulating the gut-brain axis.

Intestinal microorganisms affect the pathogenesis of Parkinson's disease (PD) and, therefore, are a new research focus of PD treatment. Type 3 resistant starch from Canna edulis (Ce-RS3) regulates gut microbes and has prebiotic properties. The effects include decreased blood lipids, weight, and inflammation, as well as increased glycolipid metabolism. There are few reports on the use of prebiotics alone in the treatment of Parkinson's. In this study, based on the gut-brain axis, the pharmacological effects and related mechanisms of Ce-RS3 on PD were studied by analyzing intestinal bacteria and
