Multistate Outbreak of Salmonella Thompson Infections Linked to Seafood Exposure - United States, 2021.

In July 2021, the Colorado Department of Public Health and Environment (CDPHE) laboratory identified a cluster of five Salmonella enterica serotype Thompson isolates related to one another within one allele difference, using whole genome multilocus sequence typing (wgMLST). These five isolates, submitted to the public health laboratory as is routine process for confirmatory testing of Salmonella, were highly related to those identified in a 2020 multistate investigation, during which traceback was conducted for sushi-grade tuna and salmon; a common supplier was not identified. The 2021 investi

IMEP-115: determination of methylmercury in seafood by elemental mercury analysis: collaborative study.

A collaborative study IMEP-115 was organized by the European Union Reference Laboratory for Heavy Metals in Feed and Food (EURL-HM) to validate a method for the determination of methylmercury in seafood. The method was based on a liquid-liquid extraction with an organic solvent and with an aqueous cysteine solution. The final quantitation was done with an elemental mercury analyzer. Fifteen laboratories experienced in elemental mercury analyses, from 10 European countries, took part in the exercise. Five test items were selected to cover the concentration range from 0.013 to 5.12 mg/kg. All te

Intake and potential health risk of butyltin compounds from seafood consumption in Korea.

Concentrations of butyltin compounds (BTs) were determined in 47 species of seafood commonly consumed in Korea to investigate intakes of BTs from seafood consumption and the potential health risks to the Korean population. The concentrations of BTs (the sum of dibutyltin and tributyltin) in seafood ranged from less than the limit of detection to 96.3 ng/g wet weight, which are levels similar to those reported for other countries. The intake of BTs from seafood consumption by the general population was estimated to be 17.2 ng/kg body weight/day. Fish accounted for 50% of the total intakes of BT

Biofilm formation ability of Listeria monocytogenes isolates from raw ready-to-eat seafood.

Listeria monocytogenes is of great concern as a foodborne pathogen. Many ready-to-eat foods are widely contaminated with this organism and have caused listeriosis outbreaks and sporadic cases in many countries. In Japan, there is a high incidence of L. monocytogenes contamination, specifically in raw ready-to-eat seafood. Identical L. monocytogenes subtypes have been isolated repeatedly from samples of food manufactured at a given store or processing plant, and researchers suspected that certain L. monocytogenes isolates have formed biofilms at these sites. A microtiter plate biofilm formation

Regular exposure to low dose of diarrheic shellfish toxins: Implications for the seafood consumer.

Diarrhetic shellfish toxins (DSTs) are marine biotoxins produced by the dinoflagellates Dinophysis and Prorocentrum that cause gastrointestinal illness in humans worldwide. While European legislation avoids the risk of acute poisoning, the toxicity associated with repeated dietary exposure to DSTs in low quantities remains incompletely characterized. To address knowledge gaps regarding long-term exposure, we evaluated the toxicity of okadaic acid (OA), dinophysistoxin-1 (DTX1) and dinophysistoxin-2 (DTX2) administered by voluntary ingestion to male and female mice. Toxins were administered for

Intra-seafood strain diversity and temporal dynamics of Vibrio parahaemolyticus in a retail stall.

Understanding the reservoirs and transmission dynamics of foodborne pathogens is critical for developing effective surveillance and control strategies. Here, we investigate the strain-level diversity and temporal dynamics of Vibrio parahaemolyticus, the leading cause of seafood-associated infections worldwide, through a three-month longitudinal sampling of a single retail seafood stall. Whole-genome sequencing of 238 isolates (2-38 per item) from individual oysters and clams revealed exceptionally high intra-seafood strain diversity, with a median of eight (range: 2-32) distinct sequence types

Performance assessment of ISO 23036-1:2021 for parasite detection in the seafood industry.

A verification plan was carried out to assess the reliability of seafood companies (operators) in complying with the standard ISO 23036-1:2021, an international voluntary benchmark method specifically designed for detecting zoonotic Anisakidae larvae in fish musculature (edible part). This plan involved the intensive inspection of 19,465 individual fish across various sample batches (three consecutive one year projects), fish species, NE Atlantic fishing grounds and seasons. A verification process was carried out on 5600 fish pressed portions, which were primarily inspected by operators at the

Monitoring of Cadmium, Lead, and Mercury Levels in Seafood Products: A Ten-Year Analysis.

The European Food Safety Authority (EFSA) monitors the presence and concentration of contaminants in food to mitigate health risks. EU legislation sets maximum levels of heavy metals in foods, including cadmium (Cd), lead (Pb), and total Hg (THg) in seafood, due to their toxicity. In the framework of official control, between 2014 and 2023, 5854 seafood samples were collected and 4300 analyses for THg, 3338 for Cd, and 2171 for Pb were performed using Inductively Coupled Plasma Mass Spectrometry (ICP-MS) and cold vapor atomic absorption spectrometry (CVAAS). The aim was to assess the proportio

Global mercury dataset with predicted methylmercury concentrations in seafoods during 1995-2022.

Mercury exposure poses significant threats to human health, particularly in its organic form, methylmercury (MeHg). Diet is the main pathway for human MeHg exposure, especially through seafood consumption. In this context, numerous studies have established seafood MeHg concentration datasets to assess MeHg-related health risks from seafood consumption. However, existing datasets are limited to specific regions and short-term observations, making it difficult to support continuous and dynamic assessments of global MeHg-related health risks. This study takes a bottom-up approach to construct a g

Methods for inactivation of seafood Anisakis larvae and prevention of human anisakiasis: a mini-review.

Anisakiasis is an arising zoonosis induced by parasitic nematodes belonging to the family Anisakidae. Anisakiasis is often caused by the ingestion of larval nematodes in uncooked or minimally processed seafood dishes, which are regularly consumed by humans. Significant potential sources of infection are raw fish (e.g., sushi and sashimi) that can be found in traditional Japanese cuisine and can be part of the culinary tradition of consumption of raw or marinated fish that is particularly diffused in European countries. During the last five decades, the global prevalence of human anisakiasis ha

Presence of nano-sized mercury-containing particles in seafoods, and an estimate of dietary exposure.

The toxicity of nano-sized particles of mercury (NP-Hg), which are thought to be generated during the detoxification of methyl mercury (MeHg), may differ from that of MeHg, elemental Hg (Hg0), and inorganic Hg (I-Hg). From a human health perspective, it is important to evaluate the presence of NP-Hg in seafoods. We investigated the in vivo formation of NP-Hg in fish and shellfish, which are the main sources of Hg exposure in humans. NP-Hg was measured in 90 fish samples with single-particle inductively coupled plasma mass spectrometry (spICP-MS) after enzyme degradation with pancreatin and lip

Exposure Assessment of methyl mercury from consumption of fish and seafood in Peninsular Malaysia.

The concentration of meHg in freshwater fish and seafood was investigated, as well as the consumption patterns of fish and seafood by different demographic groups (age, ethnicity, gender). A potential alarm for human health hazards was also assessed, and the results were compared to the provisional tolerable weekly intakes (PTWIs) and the hazard quotient parameter (HQ). The results showed that meHg levels of 67 species ranged from 0.013 to 0.252 mg/kg of wet weight (WW) with significant differences between different fish and seafood groups (χ2KW = 49.09; p < 0.001). Median concentrations of me

Does the addition of ingredients affect mercury and cadmium bioaccessibility in seafood-based meals?

Despite the bioaccessibility of nutrients and contaminants present in individual seafood products has been thoroughly studied, information is extremely limited in what concerns complete seafood-based meals, where interactions between ingredients may occur. Hence, this study aimed to evaluate the effect of different ingredients and cooking processes in mercury (Hg) and cadmium (Cd) bioaccessibility in complete meals of tuna (Thunnus spp.) and edible crab (Cancer pagurus), respectively. The addition of ingredients/side dishes decreased Hg levels in cooked tuna meals, but increased Hg bioaccessib

Preliminary results of mercury levels in raw and cooked seafood and their public health impact.

Mercury is toxic for human health and one of the main routes of exposure is through consumption of contaminated fish and shellfish. The objective of this work was to assess the possible mercury contamination of bivalves (Anomalocardia brasiliana, Lucina pectinata, Callinectes sapidus), crustacean (C. sapidus) and fish (Bagre marinus and Diapterus rhombeus) collected on Salinas da Margarida, BA (Brazil), a region which carciniculture, fishing and shellfish extraction are the most important economic activities. The effect of cooking on Hg concentration in the samples was also studied. The result

Examination of Listeria monocytogenes in Seafood Processing Facilities and Smoked Salmon in the Republic of Ireland.

Listeria monocytogenes is a foodborne pathogen that causes listeriosis, a relatively rare but life-threatening disease primarily affecting immunocompromised individuals. The aim of this study was to determine the prevalence of L. monocytogenes in the seafood processing industry in the Republic of Ireland. The occurrence of L. monocytogenes was determined by regular sampling of both food samples and processing environment swabs at eight seafood processing facilities over two calendar years. All samples were analyzed by the International Organization for Standardization 11290-1 standard method,

Effects of breast feeding on neuropsychological development in a community with methylmercury exposure from seafood.

Breastfeeding has been associated with an advantage to infant neurobehavioral development, possibly in part due to essential nutrients in breast milk. However, breast milk may be contaminated by environmental neurotoxicants, such as methylmercury. In the Faroe Islands, where maternal consumption of pilot whale may cause transfer of marine toxicants into breast milk, a cohort of 1022 consecutive singleton births was generated during 1986-87. Methylmercury exposure was assessed from mercury concentrations in cord blood and in the hair of the child at age 12 months, and the duration of breastfeed
