Embryonic origin of amphibian taste buds.

Despite numerous descriptive studies, the embryonic origin of vertebrate taste buds has never been experimentally determined. A number of different alternatives have been suggested for taste bud origins, including epibranchial placodes, the neural crest, and the local epithelium of the oropharyngeal cavity. The role of a series of epibranchial placodes and the cephalic neural crest, which together give rise to the cranial nerves innervating taste buds, was examined with regard to the development of oropharyngeal taste buds in an ambystomatid salamander, the axolotl. When pigmented placodal ect

[Healing process of taste receptor disturbance].

Patients with taste receptor disturbance were treated with zinc dosage, and their healing process was traced through the filter-paper-disc method and electrogustometry. The number of cases studied was 119,45 with idiopathic taste disturbance, 38 with drug-induced taste disturbance and 36 with zinc-deficient taste disturbance. 1) Three patterns of taste recovery were observed on the tongue surface. Out of a total of 119 cases, 54 cases (45.4%) were found to be improving on the anterior as well as posterior parts of the tongue simultaneously (simultaneous improvement type). Fifty-three cases (44

Sweet, Salty, and Umami Taste Sensitivity and the Hedonic Perception of Taste Sensations in Adolescent Females with Anorexia Nervosa.

OBJECTIVE: The aim of this study was to perform analysis of sensitivity to sweet, salty, and umami tastes based on three measurement methods and of the hedonic perception of taste sensations in adolescent females with anorexia nervosa (AN). The aim of the research was to confirm the results of other authors in terms of the perception of sweet and salty taste in patients with AN, and then develop knowledge about the perception of umami taste, which is still insufficiently studied. METHOD: A total of 110 females with an age ranging from 13 to 19 years, including 50 newly diagnosed patients with

Deciphering Peripheral Taste Neuron Diversity: Using Genetic Identity to Bridge Taste Bud Innervation Patterns and Functional Responses.

Peripheral taste neurons exhibit functional, genetic, and morphological diversity, yet understanding how or if these attributes combine into taste neuron types remains unclear. In this study, we used male and female mice to relate taste bud innervation patterns to the function of a subset of proenkephalin-expressing (Penk+) taste neurons. We found that taste arbors (the portion of the axon within the taste bud) stemming from Penk+ neurons displayed diverse branching patterns and lacked stereotypical endings. The range in complexity observed for individual taste arbors from Penk+ neurons mirror

Biochemical studies of taste sensation. XIII. Enantiomeric specificity of alanine taste receptor sites in catfish, Ictalurus punctatus.

Specific binding of amino acid taste stimuli is known to occur to a sedimentable fraction (P2) from catfish (Ictalurus punctatus) taste epithelium or to purified plasma membranes from that fraction. L-Alanine, a potent taste stimulus for the catfish, binds in a reversible and saturable manner to these preparations. The extent to which the enantiomeric stimuli, L- and D-alanine, interact with the same or different receptor/transduction processes is investigated here both electrophysiologically and biochemically. With an electrophysiological assay, L-alanine was the more potent stimulus across a

Texture-Taste Interactions: Exploring the Effect of Thickener Concentration on the Sensory Perception of Sweet, Sour, and Salty Tastes.

The addition of thickeners to beverages remains the primary strategy for managing dysphagia. However, thickened beverages have poor compliance among patients, primarily due to a dislike of the taste and flavor. While thickeners produce a higher viscosity, which helps reduce the risk of aspiration, there is evidence that they also reduce taste sensations. Previous research suggests that rheological properties might explain the impact on taste perception; however, recent findings do not demonstrate this interaction. Therefore, this study aims to explore the impact of Nestle ThickenUp Clear on th

Taste and odour-induced taste perception following unilateral lesions to the anteromedial temporal lobe and the orbitofrontal cortex.

Odour-induced tastes occur when smelling certain odours (e.g., sweet-smelling vanilla) and may represent a universal form of synaesthesia. If odour-induced tastes are perceptually akin to tastes generated by stimulating taste receptors on the tongue, as perceptual data imply, then these two forms of gustatory experience may also share common processing resources in the brain. In this study, we examine this hypothesis for two secondary gustatory processing areas--the orbitofrontal cortex (OFC) and amygdala. We compared nine patients with anteromedial temporal lobe (AMTL) resections that include

From Bitter Taste Perception to Anti-Cancer Weapons: New Directions for Bitter Taste Receptors in Malignant Tumor Treatment.

Cancer heterogeneity and drug resistance remain major challenges in current treatments. Bitter taste receptors (TAS2Rs), as members of the G protein-coupled receptor family, have demonstrated significant roles in tumor research in recent years. TAS2Rs are differentially expressed in various cancer cells and influence processes such as cell cycle progression, apoptosis, migration, and invasion by regulating intracellular Ca²⁺ concentrations. Their activation inhibits tumor proliferation, promotes apoptosis, and regulates angiogenesis, immune inflammation, and gut microbiota balance within the t

Altered taste perception in Type 2 Diabetes Mellitus: A case-control study on taste thresholds and glycemic control.

BACKGROUND AND OBJECTIVES: Diabetes Mellitus (DM) is associated with altered taste perception, often leading to cravings for carbohydrate-rich foods. Although taste dysfunction has been linked to diabetic neuropathy, this association is debatable. Few studies have evaluated taste thresholds in individuals with diabetes, necessitating further investigations. This study aimed to assess gustatory function in patients with Type 2 Diabetes Mellitus (T2DM). MATERIALS AND METHODS: A total of 138 participants were included in the study: 46 with controlled T2DM, 46 with uncontrolled T2DM, and 46 healt

Self-inhibition in Ca2+ -evoked taste responses: a novel tool for functional dissection of salt taste transduction mechanisms.

Rat chorda tympani (CT) responses to CaCl2 were obtained during simultaneous current and voltage clamping of the lingual receptive field. Unlike most other salts, CaCl2 induced negatively directed transepithelial potentials and gave CT responses that were auto-inhibitory beyond a critical concentration. CT responses increased in a dose-dependent manner to approximately 0.3 M, whereafter they decreased with increasing concentration. At concentrations where Ca2+ was self-inhibitory, it also inhibited responses to NaCl, KCl, and NH4Cl present in mixtures with CaCl2. Ca2+ completely blocked the am

[The relationship between oral microbiota and taste].

Disruption of the perception of taste can have severe consequences on general health. Although evidence suggests that the oral microbiota plays a role in taste perception, little is known about this possible influence. In this scoping review, the influence of oral microbiota on taste perception was studied. Current scientific literature is heterogeneous in study methods and study populations, which impedes comparison of results. Although the findings of this review provide insufficient evidence to confirm the influence of oral microbiota on taste perception, some results show a relationship be

Optogenetics in taste research: A decade of enlightenment.

The electrophysiological function of the tongue involves complicated activities in taste sense, producing the perceptions of salty, sweet, bitter, and sour. However, therapies and prevention of taste loss arising from dysfunction in electrophysiological activity require further fundamental research. Optogenetics has revolutionized neuroscience and brought the study of sensory system to a higher level in taste. The year 2022 marks a decade of developments of optogenetics in taste since this technology was adopted from neuroscience and applied to the taste research. This review summarizes a deca

Smell and Taste in Children with Covid-19.

OBJECTIVES: To assess the frequency of loss of smell and taste in children during Covid-19 infection and their prevalence along with other symptoms, as well as the recovery of chemosensory function once healed. METHODS: To evaluate symptoms during infection, we adapted the Scandinavian adaptation of the Multi-Clinic Smell and Taste Questionnaire and the modified Monel-Jefferson questionnaire. For smell analysis we used Odor Identification (OI) and two variants of the Odor Discrimination (OD) test, and we compared the results with those of a control group. RESULTS: We enrolled nine patients i

The sense of taste: Development, regeneration, and dysfunction.

Gustation or the sense of taste is a primary sense, which functions as a gatekeeper for substances that enter the body. Animals, including humans, ingest foods that contain appetitive taste stimuli, including those that have sweet, moderately salty and umami (glutamate) components, and tend to avoid bitter-tasting items, as many bitter compounds are toxic. Taste is mediated by clusters of heterogeneous taste receptors cells (TRCs) organized as taste buds on the tongue, and these convey taste information from the oral cavity to higher order brain centers via the gustatory sensory neurons of the

Xerostomia and Taste Alterations in COVID-19.

A recent letter published in the Ear, Nose & Throat Journal called attention to the hypothesis that the xerostomia reported in patients with the Coronavirus Disease 2019 (COVID-19) occurs due to the neuroinvasive and neurotropism potential of the severe acute respiratory syndrome coronavirus 2 (SARS-CoV-2). In fact, angiotensin-converting enzyme 2 (ACE-2), the main site of entry of SARS-CoV-2 into the cell, was found to be present in the ductal elements of salivary gland and several other tissues. However, some points are worth to be addressed.
