Fish, cephalopods and shellfish provide a healthy source of high-quality proteins, essential vitamins, minerals and polyunsaturated fatty acids. The beneficial effects of fish consumption on human health such as protection against coronary heart disease and certain cancer may be offset by fish decomposition and the formation of chemical contaminants such as biogenic amines. There are several toxicological effects of biogenic amines on humans, especially histamine. It is the causative agent of histamine or scombroid fish poisoning which is a significant public health problem. In individuals wit

BACKGROUND: An abundance of vitamins, minerals, and vital amino acids can be found in fish. The parasitic zoonotic disease anisakiasis is caused by ingesting the third larval stage of Anisakis spp., which is carried by nematodes called anisakids. Serious health problems, such as abdominal pain, nausea, vomiting, and allergic reactions that could approach anaphylactic level, are brought to the human body by ingesting undercooked fish, where this parasite is present.
AIM: Raw herrings, smoked herrings, raw sardines, salted sardines, raw mackerel, and raw saurus were all tested for the presence

The seafood industry is often left out of the food waste discussion, but this sector is no exception, as it generates large amounts of various by-products. This study aimed to explore the potential of the microwave-assisted extraction (MAE) technique to obtain high-quality oil from fish by-products. The independent variables, which were time (1-30 min), microwave power (50-1000 W), and solid/liquid ratio (70-120 g/L) were combined in a 20-run experimental design coupled with the response surface methodology (RSM) for process optimization. The obtained oil yield values were fitted to a quadrati

The rapid advancement of nanotechnology has driven a substantial expansion in the production and utilization of nanoproducts across diverse industries. However, the concomitant increase in nanoparticle entry into the water column has given rise to significant concerns, with mounting evidence indicating the potential for deleterious effects on the reproductive health of fish. This review assesses the effects of metal oxides, metals, polymers, and quantum dot nanoparticles on key aspects of fish reproductive physiology, including hormonal balance, gonadal development, gamete viability, and embry

INTRODUCTION: Histamine intoxication, known as scombroid fish poisoning, is caused by the consumption of foods with high levels of histamine. This biogenic amine is formed as a result of histidine decarboxylation by bacterial decarboxylases present in food, including fish and fish products. The aim of this study was to investigate the content of histamine at different production stages of canned, marinated and smoked fish.
MATERIAL AND METHODS: Raw fish, semi-finished fish products, and the final products of the same production batches were collected between 2019 and 2022 from different fish

The Western blotting method allowed us to confirm the diagnosis in 7 cases of acute anisakiasis, to assess it in 5 cases of chronic anisakiasis, and to follow up the evolution. These chronic frames according to the question of their long term evolution, and the part played by Anisakis simplex in fish nutritional allergy increase the negative score of that parasite. This situation should leave to discuss preventive rules.

In this work a total of 949 fish samples were analysed for the identification of nematode larvae belonging to the Anisakidae family. Biomolecular application for the identification of Anisakidae larvae can be an optimal instrument for the traceability of fish products, described on the Reg. EC 178/2002. Results confirm a correlation between geographical distribution of fishes and presence of specific Anisakid larvae. FAO 37 zone (Mediterranean sea) showed a prevailing distribution of Anisakis pegreffii and a minimal presence of A. simplex s.s. in hybrid form with Anisakis pegreffii. FAO 27 zon

Fish products are highly vulnerable to microbial contamination due to their soft tissues, making them perishable and harmful to consumers. The clinical and subclinical infections reported by fish consumers are mainly associated with pathogenic microorganisms in fish products. Therefore, this study aimed at establishing the molecular profiles and diversity of the bacterial isolates from fish and fish products obtained from Kirinyaga County markets in Kenya. A total of 660 samples were randomly sampled in six Kirinyaga County markets and transported to Kenyatta University for bacterial isolation

One of the parasite diseases associated with the consumption of raw fish that occurs with some frequency is the anisakiasis, a human disease caused by the accidental ingestion of larval nematodes of the genus Anisakis, family Anisakidae. At the National Reference Centre for Anisakiasis (C.Re.N.A.) from October 2012 to February 2013, a number of 231 bony fish (Trichiuridae, Engraulidae, Scombridae and Clupeidae) were received from different fishing sites in Sicily. Anisakis pegreffii is the main species detected in fish, as identified by molecular analysis based on polymerase chain reaction-res

The flavor profile of fermented fish products is influenced by the complex interplay of microbial and enzymatic actions on the raw materials. This review summarizes the various factors contributing to the unique taste and aroma of these traditional foods. Key ingredients include locally sourced fish species and a variety of spices and seasonings that enhance flavor while serving as cultural markers. Starter cultures also play a critical role in standardizing quality and accelerating fermentation. Flavor compounds in fermented fish are primarily derived from the metabolism of carbohydrates, lip

Fish and seafood products are one of the most common causes of listeriosis in humans. A systematic review and meta-analysis were conducted using scientific literature to summarize available data on the prevalence of Listeria monocytogenes and Listeria sp. in fish, fish products and fish processing environment. Meta-analysis models were used to estimate the mean prevalence of the pathogen and to compare prevalence among the most popular fishes. Data from a total of 14,496 samples were analysed. Pooled prevalence of L. monocytogenes and Listeria sp. in raw fish was 5.8 % (95 % CI: 4.7-6.9) and 1

The aim of this study was to develop a chilled, texture-modified salmon product for dysphagia patients, enriched with dairy and fish hydrolysate proteins. The challenge was to create a product with appealing sensory qualities and texture that meets level 5 (minced & moist) of the IDDSI framework. Atlantic salmon (Salmo salar) was heat-treated (95 °C/15 min), blended, and reconstructed by adding texture modifiers, casein and whey protein, and enzymatically derived fish hydrolysate. The products were packaged in oxygen-free plastic trays, heat-treated to a core temperature of 95 °C for 15 min, c

Fish products in Slovakia have been heavily infected with Anisakis spp. larvae, which causes human anisakiasis. We found larvae in all tested samples of frozen Atlantic herring. Anisakid allergen t-Ani s7 testing revealed 2 positive cases in humans, signaling need for health authorities to closely monitor zoonotic marine parasites, even in inland areas.

This paper presents analysis of malachite green (MG) and crystal violet (CV) residues in processed fish products. Samples were homogenized and extracted with ammonium acetate buffer and acetonitrile. The extracted residues were partitioned into dichloromethane, in situ oxidized to chromic forms with 2,3-dichloro-5,6-dicyano-1,4-benzoquinone, and cleaned up on neutral alumina and propylsulfonic acid cation-exchange solid-phase extraction (SPE) cartridges. MG and CV were determined at 618 and 588 nm using HPLC with a visible detector (LC-VIS) and confirmed by LC-electrospray ionization tandem ma

Seventy-two Listeria monocytogenes isolates originating from 10 different fish products of 12 producers and 47 isolates from human listeriosis cases were typed by serotyping and multilocus enzyme electrophoresis. Seventy-five of these isolates were further subtyped by restriction analysis of genomic DNA with the enzyme XhoI and by pulsed-field gel electrophoresis using the enzymes ApaI and SmaI. The results show that several L. monocytogenes clones identified by multilocus enzyme electrophoresis are frequently found in fish products of different origins. One of these clones is the same as anot

Microorganisms play a crucial and unique role in fish and fish product safety. The presence of human pathogens and the formation of histamine caused by spoilage bacteria make the control of both pathogenic and spoilage microorganisms critical for fish product safety. To provide a comprehensive and updated overview of the involvement of microorganisms in fish and fish product safety, this paper reviewed outbreak and recall surveillance data obtained from government agencies from 1998 to 2018 and identified major safety concerns associated with both domestic and imported fish products. Globalization opens new market areas and affects food consumption habits, resulting in rapid and remarkable cultural change. Food habits such as consumption of raw fish meat have become popular, resulting in increased risk of emerging infectious diseases. Anisakis simplex sensu stricto (s.s) and A. pegreffii are the most common and important fish-borne zoonotic nematodes responsible for human anisakiasis, which occurs through the consumption of raw or undercooked fish as well as cooked fish due to their heat-stable allergens. Here, we investigated the prevalence, intensity, and abundance of An

Mercury (Hg) in fish and aquatic products is a potential threat to human health and international trade, and guidelines of international advisory bodies are established for assessing Hg in these foods. As fish are the most consumed animal protein in Sri Lanka, this assessment summarises for the first-time total mercury concentrations in Sri Lankan marine and freshwater fish, invertebrates, aquatic plants, and fisheries products. It reveals that Hg levels in fish and other edible aquatic species are mostly below the published safety limits, except for certain top trophic level fish (swordfish,
