Salmonellosis is the second most reported gastrointestinal disorder in the EU resulting from the consumption of Salmonella-contaminated foods. Symptoms include gastroenteritis, abdominal cramps, bloody diarrhoea, fever, myalgia, headache, nausea and vomiting. In 2018, Salmonella accounted for more than half of the numbers of foodborne outbreak illnesses reported in the EU. Salmonella contamination is mostly associated with produce such as poultry, cattle and their feeds but other products such as dried foods, infant formula, fruit and vegetable products and pets have become important. Food sensitivity is only one of several types of food-related reactions. Symptoms are not pathognomonic; hence, a broad differential diagnosis is often considered. Unless the anticipated reaction is systemic anaphylaxis, the role of any food suspected (by history, skin testing, and/or radioallergosorbent test) of causing the patient's symptoms should be verified by elimination-challenge testing. Dietary elimination is the most effective treatment, but its success depends on several factors.

The usefulness of microbiological standards for frozen foods is now a controversy in the trade and scientific literature. Most reviewers have given arguments both for and against, and have concluded that they should be applied with great caution. Such standards have the advantage of putting questions of safety on a convenient numerical basis. Canadian workers have reported that promulgation of standards has invariably raised the hygienic level of the products controlled. Bacteriological standards have often been associated with the question of safety to the consumer. Everyone recognizes that f

OBJECTIVES: Food handlers are individuals who are involved in food preparation, storage or service of food in a food facility. Unless they keep their personal hygiene, they are highly responsible for contaminating food or transmitting microbes to consumers. Thus, the main aim of this review was to pool the level of good food handling practice among food handlers working in public food establishments in Ethiopia.
DESIGN: A systematic review and meta-analysis using the Joanna Briggs Institute (JBI) Critical Appraisal tool.
DATA SOURCES: PubMed, Google Scholar and Advanced Google were searched

Data was collected from food vendors in a poor resource community in Ghana, which showed that the vendors constituted an important source of oro-faecal transmission. Following this, the WHO five keys of safer food were utilized in an evidence based training programme for the vendors to improve their food handling practices. Impact assessment of the food safety training showed that 67.6% of the vendors had acquired some knowledge from the workshop and were putting it into practice. Lack of food safety equipment was a major hinderance to behavioral change among the vendors as far food handling p

BACKGROUND: Lack of adequate sanitation and refuse disposal facilities are among the factors found to contribute to food contamination among street food vendors. Most vending facilities are near crowded places, such as bus terminals or markets to attract consumers, and the few basic amenities, such as toilets, are inadequate. The objective of the study was to determine which sanitation practices were associated with food contamination in Githurai and Gikomba markets in Nairobi County.
METHODOLOGY: Using a cross-sectional study design, we systematically randomly sampled 149 street food vendors

Unsafe food handling practices by food handlers have dire health and financial implications worldwide. Each year, approximately 600 million people, or about 1 in 10 people, are said to become ill from eating contaminated food, and 420,000 people inadvertently die. According to the 2019 World Bank report on the economic burden of foodborne diseases, the annual cost of treating foodborne illnesses is estimated to be US$ 15 billion, and the total productivity loss caused by foodborne diseases in low- and middle-income countries is estimated to be US$ 95.2 billion annually. The purpose of this stu

Monkeypox (MPX) is a zoonotic infectious disease caused by Monkeypox virus (MPXV), an enveloped DNA virus belonging to the Poxviridae family and the Orthopoxvirus genus. Since early May 2022, a growing number of human cases of Monkeypox have been reported in non-endemic countries, with no history of contact with animals imported from endemic and enzootic areas, or travel to an area where the virus usually circulated before May 2022. This qualitative risk assessment aimed to investigate the probability that MPXV transmission occurs through food during its handling and consumption. The risk asse

Celiac disease (CD) is an autoimmune disease triggered by the ingestion of gluten in genetically predisposed individuals, affecting 1.4% of the world population. CD induces an inflammatory reaction that compromises small intestine villi, leading to nutrient malabsorption, and gastro and extraintestinal manifestations. Although other treatment approaches are being studied, adherence to a gluten-free diet (GFD) is the only effective intervention to date. Despite this, about 50% of patients experience persistent inflammation, often associated with unintentional gluten ingestion through contaminat

Food-handling time, or the time elapsed between capturing a food item and consuming it, is a key factor in foraging decisions. For example, quickly consuming more items that are easier to handle, but of lower nutritional value, can be more beneficial than attempting to consume items that are harder to handle but more nutritious. Infection likely alters such foraging decisions, as sick animals often express sickness behaviours (lethargy and anorexia), which could affect both motivation and foraging proficiency. Although such changes could alter interindividual contact rates at food patches, and

Emerging foodborne pathogens present a threat to public health. It is now recognized that several foodborne pathogens originate from wildlife as demonstrated by recent global disease outbreaks. Zoonotic spillover events are closely related to the ubiquity of parasitic, bacterial, and viral pathogens present within human and animal populations and their surrounding environment. Foodborne diseases have economic and international trade impacts, incentivizing effective wildlife disease management. In North America, there are no food safety standards for handling and consumption of free-ranging gam

Esophageal thermal injury (ETI) is an uncommon occurrence in both children and adults. Therefore, little is known about the diagnosis and clinical course of patients suffering from these injuries. We present the case of an 11-year-old female with macrocephaly capillary malformation syndrome and developmental delay suffering from ETI after ingestion of a piece of hot butternut squash. Endoscopy revealed linear, white plaques consistent with thermal burns. Management involved respiratory support, local and systemic analgesia, antibiotics, and nasogastric tube feedings. Our case highlights the nu

Known amounts of acephate, chlorpyrifos, and diazinon were applied to Formica, unfinished plywood, stainless steel, and vinyl tile. Cotton-ball and dental wick materials were dipped in 2-propanol and "swiped" over the treated surface area two time. More acephate was found on the second swipe compared to the first from vinyl tile, similar amounts on both swipes from plywood, and less on the second swipe from formica and stainless steel. The ratio of chlorpyrifos on Swipe 1 compared to Swipe 2 found with cotton-ball on both formica and stainless steel surfaces was equivalent (6:1), but a conside

The prevalence of listeriosis in China has been increasing in recent years. Listeriosis primarily spreads through contaminated food. However, the resilient causative organism, Listeria monocytogenes, and its extended incubation period pose challenges in identifying risk factors associated with food consumption and food-handling habits. This study aimed to identify the risk factors associated with food consumption and food-handling habits for listeriosis in China. A matched case-control study (1:1 ratio) was conducted, which enrolled all eligible cases of listeriosis between 1 January 2013 and

Households represent a primary setting for foodborne diseases, where consumers' food handling practices play a critical role in the growth and transmission of pathogens, yet the risk prioritization of poor hygienic practices remains unclear. This study proposes a Fuzzy Failure Mode and Effect Analysis (Fuzzy-FMEA) approach that integrates fuzzy logic into the traditional FMEA framework to prioritize poor hygienic practices in Chinese households. The Fuzzy-FMEA considered three dimensions-occurrence (the proportion of consumers engaging in poor hygienic practices), severity (the extent to which
