Skin protection in the food industry.

In food occupations, like in many other skin risk occupations, the regular use of personal protection equipment, i.e. of skin protection ointments and protective gloves, is recommended as well as regular skin care for the prevention of occupational hand dermatitis. We investigated the uptake and maintenance of different prevention strategies (instructions for skin protection and skin care, prevocational skin hardening with UV light) in food occupations and their efficacy in the primary prevention of vocationally caused hand dermatitis. We could show that the acceptance and regular use of skin

Encapsulation in the food industry: a review.

Encapsulation involves the incorporation of food ingredients, enzymes, cells or other materials in small capsules. Applications for this technique have increased in the food industry since the encapsulated materials can be protected from moisture, heat or other extreme conditions, thus enhancing their stability and maintaining viability. Encapsulation in foods is also utilized to mask odours or tastes. Various techniques are employed to form the capsules, including spray drying, spray chilling or spray cooling, extrusion coating, fluidized bed coating, liposome entrapment, coacervation, inclus

Causes of eczema in the food industry.

In a retrospective study covering a five-year period, 3664 consecutive patients suspected to suffer from contact dermatitis were patch tested in a private dermatology clinic. 180 of these patients had food handling occupations; they were employed in restaurant or institutional kitchens, fish factories, bakeries, or slaughterhouses. 25 of the 180 patients had protein dermatitis caused by meat or vegetables. This particular dermatitis was most common among restaurant personnel who make openface sandwiches and fish factory workers. 59 of the 180 patients had positive patch tests: 9 of these were

Food allergy and its relevance to industrial food proteins.

Food allergies can be defined as IgE-mediated hypersensitivity reactions and are quite distinct from food intolerances, such as Coeliac disease, with symptoms usually appearing within a matter of minutes of exposure. Around 1-2% of adults and up to 5-7% of children suffer from some type of food allergy with foods such as peanuts, tree nuts, wheat and soy, cow's milk, egg, fish and shellfish being responsible for the majority of reactions. The macromolecules recognised by IgE (generally proteinaceous in nature) are termed allergens. A brief description of the allergenic components present in th

Laccases in Food Industry: Bioprocessing, Potential Industrial and Biotechnological Applications.

Laccase is a multi-copper oxidase that catalyzes the oxidation of one electron of a wide range of phenolic compounds. The enzyme is considered eco-friendly because it requires molecular oxygen as co-substrate for the catalysis and it yields water as the sole by-product. Laccase is commonly produced by fungi but also by some bacteria, insects and plants. Due it is capable of using a wide variety of phenolic and non-phenolic substrates, laccase has potential applications in the food, pharmaceutical and environmental industries; in addition, it has been used since many years in the bleaching of p

Solutions to obesity: perspectives from the food industry.

Obesity has become an epidemic and an important public health concern. Because the problem is multidimensional, the solution will require an interdisciplinary approach involving the cooperation of the food industry with other stakeholders, such as the government, academia, and health care providers. The consumer is an important player in the solution to obesity because the consumer can make healthy lifestyle choices at the individual level. The food industry is committed to providing the consumer with healthy food options and reliable nutrition information.

Listeria in effluents from the food-processing industry.

There is general agreement that listeriosis has a significant impact on Man as well as on animals. Listeria monocytogenes has been isolated from the faeces of healthy human and animal carriers and from various environmental sources. L. monocytogenes is the pathogenic species most responsible for abortion, septicaemia and meningitis in animals and Man. Listeria ivanovii is a primary cause of abortion in animals. Owing to a number of epidemics and single cases caused by food contaminated with L. monocytogenes, listeriosis has received more attention in the past ten years than ever before. Entry

Insects in Pet Food Industry-Hope or Threat?

Due to the increasing global population, the world cannot currently support the well-known techniques of food production due to their harmful effects on land use, water consumption, and greenhouse gas emissions. The key answer is a solution based on the use of edible insects. They have always been present in the diet of animals. They are characterized by a very good nutritional value (e.g., high protein content and contents of essential amino acids and fatty acids, including lauric acid), and products with them receive positive results in palatability tests. Cryptosporidium : An Emerging Concern for the Food Industry.

Cryptosporidium is a protozoon producing infective oocysts causing human diarrhea that is fatal under certain conditions. The disease, Cryptosporidiosis, has been reported in 18 animal species to date. Each species can transmit the disease to man. No drug or treatment regime has effected a cure of cryptosporidiosis in man or animals. Standard cleaning and sanitizing solutions are not effective against Cryptosporidium , but the oocysts are susceptible to heat and drying. Simple diagnostic tests are available for detection of oocysts in feces; however, they are not devised for food materials. Te

The infant food industry and international child health.

Declining breast-feeding, with accompanying increased marasmus and diarrhea, has occurred in developing countries because of many factors, including inappropriate health services, new urban life styles, and so forth. The infant food industry must bear a considerable burden of blame as a result of "unethical" advertising. Responses have most recently included various journalistic and legal actions. There is a need for revised roles for the infant food industry, and for mechanisms to monitor intrinsically harmful practices.

[Talcosis-asbestosis: an unusual risk in a food industry].

In a 37 years-old female worker, who had undergone surgical excision of a segment of the right lower lobe for a chronic aspecific pleuropneumonitis, the histological examination of the excised lung tissue showed asbestos alveolitis with diffuse interstitial fibrosis, and multiple granulomata containing talc particles. An investigation at the work site showed that the worker had been engaged for 22 years in dusting salami with a mixture of rice flour and talc contaminated with chrysotile asbestos. Thirteen work-mates engaged in the same job were studied. In two of them, with chest X-rays negati

Phytosterols: Potential Therapeutic Effects and Challenges in Food Industry.

Increases in serum total and low-density lipoprotein (LDL) cholesterol are known as hypercholesterolemia, and it is a significant risk factor for the emergence of cardiovascular illnesses. Any action strategy for lowering serum cholesterol is supported by lifestyle changes. Phytosterols are organic substances from the triterpene family. Phytosterols can lower serum LDL cholesterol levels because of their structural resemblance to cholesterol. Phytosterols are used to enrich or fortify a broad spectrum of food products. Phytosterols are quickly oxidized, just like cholesterol and unsaturated fa

Microbial Phytases: Properties and Applications in the Food Industry.

Microbial phytases are enzymes that break down phytic acid, an anti-nutritional compound found in plant-based foods. These enzymes which are derived from bacteria and fungi have diverse properties and can function under different pH and temperature conditions. Their ability to convert phytic acid into inositol and inorganic phosphate makes them valuable in food processing. The application of microbial phytases in the food industry has several advantages. Firstly, adding them to animal feedstuff improves phosphorus availability, leading to improved nutrient utilization and growth in animals. Th

Lifestyle of Listeria monocytogenes and food safety: Emerging listericidal technologies in the food industry.

Listeria monocytogenes, a causative agent of listeriosis, is a major foodborne pathogen. Among pathogens, L. monocytogenes stands out for its unique ecological and physiological characteristics. This distinct lifestyle of L. monocytogenes has a significant impact on food safety and public health, mainly through the ability of this pathogen to multiply at refrigeration temperature and to persist in the food processing environment. Due to a combination of these characteristics and emerging trends in consumer preference for ready-to-eat and minimally processed food, there is a need to develop eff
