Maximizing the usefulness of food microbiology research.

Funding for food microbiology research often follows disease outbreaks: botulism from vacuum-packed white-fish chubs, listeriosis from soft cheeses, or illness due to Salmonella Enteritidis or Escherichia coli. As a consequence of research, detection, identification, and subtyping methods improve, and more is learned about pathogenicity and virulence. Research also explores the organisms' capacity to multiply or survive in food and to be killed by established or novel processes. However, rarely is there a critical overview of progress or trustworthy statements of generally agreed-on facts. Tha

[The new microbiological hazards in food].

This paper describes the new microbiological hazards in food. For protecting human health, nowadays food safety authorities face with many challenges, that years ago were largely unheard. In 2011 verocytotoxigenic Escherichia coli O104:H4 has been isolated in Germany. Strain came from fenugreek sprouts originated from Egypt. It was characterized by unique features such as presence of enteroaggregative Escherichia coli genes (aatA, aggR, aap, aggA, aggC) and resistance to most antibiotics. In Poland only three cases of disease caused by O104:H4 strain have been reported. Another emergence patho

Emerging issues in microbiological food safety.

Many microorganisms previously unrecognized as food-borne or harmful are emerging as human pathogens transmitted by food. This is a result of recent acquisition of key virulence factors, detection by newly developed isolation procedures, or astute detective-like laboratory skills of microbiologists. Six microbial pathogens, including Shiga toxin-producing Escherichia coli, Listeria monocytogenes, Arcobacter butzleri, Helicobacter pylori, Cryptosporidium parvum, and Cyclospora, have become recognized as significant causes of human illness. Although the ecology and epidemiology of illness caused

Microbiological food safety: a dilemma of developing societies.

Current food safety issues are deleteriously reshaping the life style of the population in the developing world. Socioeconomic status of the population in poorer economies is one of the major determinants to delineate the availability of safe food to the vulnerable population. Assessment of the prevalence of foodborne illness in developing world is the most neglected area to control disease. Botulism, Shigellosis, Campylobacteriosis, Escherichia coli infection, Staphylococcus aureus infection, Salmonellosis, Listeriosis and Cholerae are extensively prevalent and pose a major threat to human he

Context Is Everything: Harmonization of Critical Food Microbiology Descriptors and Metadata for Improved Food Safety and Surveillance.

Globalization of food networks increases opportunities for the spread of foodborne pathogens beyond borders and jurisdictions. High resolution whole-genome sequencing (WGS) subtyping of pathogens promises to vastly improve our ability to track and control foodborne disease, but to do so it must be combined with epidemiological, clinical, laboratory and other health care data (called "contextual data") to be meaningfully interpreted for regulatory and health interventions, outbreak investigation, and risk assessment. However, current multi-jurisdictional pathogen surveillance and investigation

Comparison of Listeria monocytogenes alternative detection methods for food microbiology official controls in Europe.

Listeriosis remains one of the most severe foodborne diseases regarding mortality rate. L. monocytogenes can grow under stressful conditions and contaminate various food categories. Regulation (EC) No 2073/2005 modified on microbiological criteria for foodstuffs includes either qualitative or quantitative food safety criteria on L. monocytogenes and mentions EN ISO 11290-1 Standard as the reference detection method. The use of alternative certified methods is allowed at European level for own checks and by certain European countries in the frame of official controls. Here we report the compari

Navigating Microbiological Food Safety in the Era of Whole-Genome Sequencing.

The epidemiological investigation of a foodborne outbreak, including identification of related cases, source attribution, and development of intervention strategies, relies heavily on the ability to subtype the etiological agent at a high enough resolution to differentiate related from nonrelated cases. Historically, several different molecular subtyping methods have been used for this purpose; however, emerging techniques, such as single nucleotide polymorphism (SNP)-based techniques, that use whole-genome sequencing (WGS) offer a resolution that was previously not possible. With WGS, unlike

Assessment of the content of macronutrients and microbiological safety of dry dog foods.

In Europe, there are no legal regulations specifying maximum allowable limits for pathogenic bacteria or fungi and yeasts in dog food. For proximate composition, the European Pet Food Industry Federation (FEDIAF) nutritional guidelines provide minimum recommended levels for protein and fat only, not for other ingredients and no safe maximum levels. Therefore, the aim of this study was to evaluate the microbiological safety of 35 dry dog foods, taking into account the division into foods with grains as the main plant ingredient and those described as grain-free. We assumed that grain-included f

Microbiological standards and handling codes for chilled and frozen foods. A review.

The usefulness of microbiological standards for frozen foods is now a controversy in the trade and scientific literature. Most reviewers have given arguments both for and against, and have concluded that they should be applied with great caution. Such standards have the advantage of putting questions of safety on a convenient numerical basis. Canadian workers have reported that promulgation of standards has invariably raised the hygienic level of the products controlled. Bacteriological standards have often been associated with the question of safety to the consumer. Everyone recognizes that f

Pathogen-Food Category Combinations and Recall-Associated Patterns in US Microbiological Food Recalls, 2012-2024.

BACKGROUND: Microbiological food recalls are commonly summarized by overall counts, but differences among pathogen-food category combinations remain unclear. This study characterized pathogen-food category patterns and reported nationwide distribution in U.S. Food and Drug Administration (FDA) microbiological recall records. METHODS: We analyzed FDA food enforcement records from 2012 to 2024 in openFDA. Microbiological recalls were identified using predefined screening rules and classified into five pathogens and 12 food categories. Frequencies, percentages, and descriptive cross-tabulations

Effects of irradiation on microbiological safety and physicochemical properties of dry pet food.

The objective of this study was to investigate the effects of electron beam (EB) and X-ray (XR) irradiation on dry pet food during long-term storage. The samples were irradiated with EB and XR at doses of 0, 2.5, 5, 10, and 20 kGy, and their microbial safety and quality/oxidation properties were analyzed over 56 days under storage conditions of 25°C and 70% relative humidity. As a result, total aerobic bacteria and yeasts and molds significantly decreased as the doses of EB and XR increased. When treated with 10 kGy for both irradiations, no bacteria were detected in the dry pet food, and this

The concept of using bacteriophages to improve the microbiological quality of minimally processed foods.

Phages were discovered relatively recently – at the turn of the 19th and 20th centuries. The idea of using bacteriophages for therapeutic purposes was promoted by d’Herelle, who conducted the first successful experiments with prokaryotic viruses. Works of contemporary scientists on phage therapy were, however, halted due to the discovery of penicillin by Alexander Fleming in 1928. Today, when many bacterial strains have developed resistance to common antibiotics offered by the pharmaceutical industry and when new, so far unknown, bacterial strains have appeared, the concept of usin

Piloting an intervention to improve microbiological food safety in Peri-Urban Mali.

INTRODUCTION: Diarrhoeal diseases remain a major cause of preventable death among children under five years old in developing countries. Studies related to infant diarrhoea causation have demonstrated a higher level of faecal contamination in weaning foods than in drinking water. Many studies have examined the microbiological quality of such foods, but few of them have resulted in an intervention. The present study builds upon an experiment in which the HACCP approach was applied to preparation of two common weaning foods (moni and fish soup) and used to develop simple hygiene measures which m

Potential microbiological hazards in the production of refined paper products for food applications.

This study sought to investigate the significance of raw materials (starch-based glues, raw material papers) at different microbiologically critical stages in the manufacturing process of refined paper products. The study examined the occurrence of microorganisms in the process and in end-product samples. Microbiological surveys verified that the production and use of pasteurized starch-based glue was the most important factor threatening the process hygiene and product safety. Subsequently, the production and use of starch-based glue was changed, and a follow-up programme targeting the microb

Influence of the external business environment on food safety management systems: a case study of microbiological food safety challenges.

Food businesses are operating in a complex and rapidly changing external environment, exerting drivers of change and thereby challenging food safety management systems (FSMS), their performance and related food safety output. This research aims to establish the influence of the external business environment on microbiological food safety performance as perceived by food businesses in Belgium. The driver-pressure-state-impact-response (DPSIR) analytical framework was applied to establish the relation of drivers of change, which are perceived as most relevant to food businesses, the resulting fo

Therapeutic Microbiology: The Role of Bifidobacterium breve as Food Supplement for the Prevention/Treatment of Paediatric Diseases.

The human intestinal microbiota, establishing a symbiotic relationship with the host, plays a significant role for human health. It is also well known that a disease status is frequently characterized by a dysbiotic condition of the gut microbiota. A probiotic treatment can represent an alternative therapy for enteric disorders and human pathologies not apparently linked to the gastrointestinal tract. Among bifidobacteria, strains of the species Bifidobacterium breve are widely used in paediatrics. B. breve is the dominant species in the gut of breast-fed infants and it has also been isolated
