Hanseniaspora uvarum and Hanseniaspora opuntiae differ in their growth and in the production of volatile organic compounds in wine.

In recent years, Hanseniaspora uvarum has been partially replaced in Slovenian vineyards by the thermotolerant and invasive Hanseniaspora opuntiae. The fermentation capacity of both Hanseniaspora species was evaluated based on CO₂ release in synthetic and natural must. Additionally, co-inoculations of both strains with S. cerevisiae were carried out in Sauvignon Blanc must at different ratios (1:10 and 10:1). In all experiments, microbial populations were monitored, and the chemical and volatile profiles of the resulting wines were evaluated. During alcoholic fermentation (AF) with pure cultur

Genetic and phenotypic diversity of wine-associated Hanseniaspora species.

The genus Hanseniaspora includes apiculate yeasts commonly found in fruit- and fermentation-associated environments. Their genetic diversity and evolutionary adaptations remain largely unexplored despite their ecological and oenological significance. This study investigated the phylogenetic relationships, genome structure, selection patterns, and phenotypic diversity of Hanseniaspora species isolated primarily from Australian wine environments, focusing on Hanseniaspora uvarum, the most abundant non-Saccharomyces yeast in wine fermentation. A total of 151 isolates were sequenced, including lon

Persistence of Two Non-Saccharomyces Yeasts (Hanseniaspora and Starmerella) in the Cellar.

Different genera and/or species of yeasts present on grape berries, in musts and wines are widely described. Nevertheless, the community of non-Saccharomyces yeasts present in the cellar is still given little attention. Thus it is not known if the cellar is a real ecological niche for these yeasts or if it is merely a transient habitat for populations brought in by grape berries during the winemaking period. This study focused on three species of non-Saccharomyces yeasts commonly encountered during vinification: Starmerella bacillaris (synonymy with Candida zemplinina), Hanseniaspora guillierm

Transcriptomic responses of Saccharomyces cerevisiae and Hanseniaspora uvarum during separated co-fermentation.

Hanseniaspora uvarum is a predominant yeast species in vineyards and some strains demonstrate oenological potential by enhancing the aroma complexity and reducing the content of volatile acid and ethanol in wine. H. uvarum kept in our lab could improve the flavor and quality of wine when co-fermented with Saccharomyces cerevisiae, but its growth was inhibited by S. cerevisiae. To investigate the interaction mechanisms of S. cerevisiae and H. uvarum, double-compartment fermentor with dialysis tube of 1000 kDa MWCO was selected for separated co-fermentation (SCF) in synthetic grape juice at 25℃

Screening of Indigenous Hanseniaspora Strains from China for Ethanol Reduction in Wine.

Non-Saccharomyces yeasts have the potential to ameliorate wine ethanol levels, but such fit-for-purpose yeast strains are still lacking. Seventy-one indigenous non-Saccharomyces yeasts isolated from spontaneous fermentations of four wine regions in China (Ningxia, Xinjiang, Gansu, and Shaanxi) were screened for ethanol formation and were characterized for major metabolite profiles in synthetic grape juice fermentation to obtain non-Saccharomyces yeasts with low ethanol yields. Four Hanseniaspora strains with less volatile acidity production were primarily selected, and their ethanol yield was

Transcriptome Analysis of Saccharomyces cerevisiae and Hanseniaspora uvarum During Direct Co-Fermentation.

The ability of Hanseniaspora uvarum to improve wine quality is limited by Saccharomyces cerevisiae due to growth inhibition by S. cerevisiae. In this study, dual RNA-Seq was used to study the interaction mechanism of S. cerevisiae and H. uvarum at T1 (24 h) and T2 (72 h) during direct co-fermentation (DCF). The results indicated that H. uvarum exhibited a significant growth inhibition during DCF. The sugar consumption and ethanol production of S. cerevisiae were stronger than those of H. uvarum during single fermentation (SF). The presence of H. uvarum significantly reduced the sugar consumpti

Patulin Inhibition of Specific Apple Microbiome Members Uncovers Hanseniaspora uvarum as a Potential Biocontrol Agent.

Penicillium expansum is a major postharvest pathogen of apples, causing loss in fruits through tissue damage, as well as in apple products due to contamination with the mycotoxin patulin. During infections, patulin is a cultivar-dependent virulence factor that facilitates apple lesion development. Patulin also has characterized antimicrobial activity and is important for inhibiting other competitive phytopathogens, but the role of this inhibitory activity has not been investigated in the context of the apple microbiome. In our current study, we isolated 68 apple microbiota and characterized th

Co-fermentation of Hanseniaspora uvarum and Saccharomyces cerevisiae improves flavor in low-alcohol peach beverages.

Isolation, selection and aroma characterization of native non-Saccharomyces yeasts are key for developing novel-flavored low-alcohol beverages. To screen non-Saccharomyces yeasts for alcohol reduction and aroma enhancement in low-alcohol yellow peach beverages, 327 yeast strains were isolated from the spontaneous fermentation processes in various fruits. Following colorimetric alcohol assays and the olfactory method, nine Hanseniaspora uvarum (H. uvarum) with low-alcohol and high-aroma phenotypes were selected for co-fermentation with Saccharomyces cerevisiae (S. cerevisiae). The alcohol conte

Unraveling Time-Resolved Transcriptional and Metabolic Shifts in the Mixed Fermentation of Saccharomyces cerevisiae and Hanseniaspora uvarum.

Wine fermentation and flavor formation are shaped by complex biochemical reactions driven by a variety of microorganisms. Non-Saccharomyces yeasts, such as Hanseniaspora uvarum (HU), are often used in mixed fermentation with Saccharomyces cerevisiae (SC) to enhance wine aroma. However, the lack of systematic knowledge regarding transcriptional responses and metabolic behaviors during fermentation has hindered the rational control of the mixed fermentation processes. To address this, we investigated transcriptional dynamics and metabolic behavior throughout the entire fermentation process, with

Population genomics reveals gene flow and positive selection patterns in the wine-related yeast Hanseniaspora uvarum.

Hanseniaspora uvarum is a representative non-Saccharomyces species that plays a significant role in fermentation processes such as winemaking. In recent years, this species has gained attention in food engineering and evolutionary biology. However, the population genomic signatures in this species remain poorly understood. In this study, a population genomics analysis was conducted on 151 H. uvarum strains (45 from Ningxia, China; 21 from other regions of China; 67 from Australia; and 18 from other regions or of unspecified origin), and a pangenome analysis was performed on 159 strains, incorp

Hanseniaspora uvarum FS35 degrade putrescine in wine through the direct oxidative deamination pathway of copper amine oxidase 1.

Putrescine is abundant in wine and have toxicological risks for the health of consumers. Certain microbes with oxidative deamination activity are considered to be one of the most effective ways to degrade putrescine. The characterization and possible mechanism of putrescine degradation by Hanseniaspora uvarum FS35 were studied in this work. Hanseniaspora uvarum FS35 was selected from 111 yeast strains by UPLC analysis and exhibited the ability to eliminate > 44.5 mg/L of putrescine after 12 h of culture. Transcriptome analysis showed that by adding putrescine as a nitrogen source, the gene exp

Sequential fermentation with immobilized Hanseniaspora opuntiae in fungal pellets and Saccharomyces cerevisiae for reduced-ethanol wine production.

Increased grape sugar concentrations associated with climate change are contributing to higher ethanol levels in wines (up ∼2% v/v), potentially affecting sensory balance. This study investigates a controlled microbiological approach to modulate ethanol concentration and enhance aromatic complexity during alcoholic fermentation through sequential inoculation with Hanseniaspora opuntiae TR-5, a non-commercialnon-Saccharomyces yeast, immobilized in inactive Aspergillus oryzae pellets (Microbial Biocapsules), followed by inoculation with a commercial Saccharomyces cerevisiae strain (Opale). Detection of Hanseniaspora opuntiae in anovaginal samples of pregnant women in Rio de Janeiro, Brazil-a case report.

In this study, we report the first isolation of Hanseniaspora opuntiae obtained from four pregnant women in Brazil. Clinical isolates were obtained from four samples taken between 35 and 37 gestational weeks, as part of the routine antenatal care for maternal colonization screening for Streptococcus agalactiae group B. The patients were immunocompetent, with two of them diagnosed with gestational diabetes mellitus. Species identification was performed by MALDI-TOF MS and rDNA sequencing. While Hanseniaspora species have not traditionally been considered a typical opportunist pathogen, our find

Antifungal activity of Hanseniaspora uvarum VOCs against Alternaria alternata and Botrytis cinerea in blueberry by disrupting growth metabolism.

This study evaluated the biocontrol effects of volatile organic compounds (VOCs) derived from the epiphytic yeast Hanseniaspora uvarum against Botrytis cinerea and Alternaria alternata in blueberry fruits and investigated the associated mechanisms. According to the results, VOCs remarkably suppressed mycelial growth, sporulation, and spore germination, causing severe morphological abnormalities, including twisted and fragmented hyphae, in vitro. In vivo fumigation of blueberry fruits effectively reduced disease incidence and lesion diameter. Physiological assays indicated that VOCs disrupted c

Oenological Potential of Lachancea thermotolerans and Hanseniaspora uvarum from High-Sugar Musts: Impacts on Fermentation and Wine Volatilome.

Currently, there is little scientific data to support the importance of selecting non-Saccharomyces yeasts from different wineries in the Protected Designation of Origin (PDO) in Andalusia, southern Spain, and how this group of yeasts can affect the sensory properties of wine. Therefore, this research aimed to study some specific microbiological properties and the metabolites they could produce in order to evaluate the oenological potential of two non-Saccharomyces yeast strains isolated from a region of Andalusia (Córdoba, Spain), Hanseniaspora uvarum TJ-27 and Lachancea thermotolerans T-9, i

Mixed-fermentation effects of co-fermentation with Hanseniaspora uvarum and Saccharomyces cerevisiae on the flavor quality of Ziyan tea wine.

Ziyan tea wine is an anthocyanin-rich fermented beverage with distinctive colour and flavor. In this study, we compared single and mixed yeast fermentation. Co-fermentation with S. cerevisiae and Hanseniaspora uvarum at a ratio of 1:1 significantly increased the sensory score compared with S. cerevisiae monoculture. Enartis Ferm Aroma White and H. uvarum at a ratio of 1:2 also produced a high sensory score, but the difference from Enartis Ferm Aroma White monoculture wasn't significant. HS-SPME-GC-MS and spectrophotometric analyses showed that co-fermentation changed the volatile profile of Zi

Hanseniaspora species can create a privileged niche for Oenococcus oeni during triple-strain simultaneous alcoholic-malolactic fermentation based on metabolomics analysis.

Previous studies have demonstrated that non-Saccharomyces yeasts can enhance malolactic fermentation (MLF) efficiency during co-fermentation. However, the underlying mechanisms remain unclear. Here, we demonstrate how specific strains create favorable metabolic niches through tripartite fermentation assays involving 16 strains from 8 species co-cultured with Saccharomyces cerevisiae F5 and Oenococcus oeni SD-2a, Hanseniaspora spp. emerged as optimal partners, reducing MLF duration by 50 % (≤48 h vs. 96 h in controls) while increasing O. oeni biomass by > 10-fold. Pathogen-induced modulation of the volatile metabolome of Hanseniaspora uvarum LE-1 and its role in post-harvest disease suppression.

The use of yeasts as biocontrol agents to prevent post-harvest fruit diseases offers a promising alternative to synthetic fungicides. Volatile organic compounds (VOCs) of microbial origin represent an effective strategy for managing post-harvest decay. This study systematically evaluates the role of VOCs produced by the antagonistic yeast Hanseniaspora uvarum LE‑1 against Alternaria alternata, Colletotrichum musae, and Penicillium italicum, causing post-harvest diseases in apples, bananas, and oranges, respectively. In preliminary dual‑plate assays, H. uvarum LE‑1 achieved approximately 50% in
