Lactobacillus curvatus KFP419 and Leuconostoc mesenteroides subsp. mesenteroides KDK411 Isolated from Kimchi Ameliorate Hypercholesterolemia in Rats.

Western-style diets increase the risk for cardiovascular diseases. It is suggested that the risk could be prevented by lowering cholesterol concentrations in blood. In the present study, hypocholesterolemic effects of the probiotics isolated from kimchi (Lactobacillus curvatus KFP419, Leuconostoc paramesenteroides KJP421, and Leuconostoc mesenteroide subsp. mesenteroides KDK411) were investigated in hypercholesterolemia-induced rats. There was no difference in growth performance between the rats fed high cholesterol diet (HCD) and normal diet (ND). However, blood total cholesterol, low-density

Leuconostoc mesenteroides WHH1141 ameliorates ovalbumin-induced food allergy in mice.

Food allergy (FA) is acknowledged as a significant public health and food safety issue, due to its manifestation as an amplified immune reaction to food antigens. Recently, probiotics within Lactobacillus and Bifidobacterium have been highlighted as a promising strategy against allergic disease by modulating the balance of Th1/Th2 responses. However, the allergy-alleviating effects of probiotic Leuconostoc mesenteroides strains are unknown. Therefore, this study investigated the potentials of eleven L. mesenteroides strains on the Th1/Th2 balance in vitro by evaluating the expression patterns

Leuconostoc mesenteroides bacteremia in a patient with exposure to unpasteurised raw milk.

Leuconostoc spp are lactic acid-producing bacteria closely related to the Streptococcus family. While usually associated with the fermentation of dairy products and sauerkraut, they are rarely associated with human infections. This is a case report of an immunocompetent patient found to have L. mesenteroides bacteremia associated with raw milk and poor dentition as the likely source of infection, which was treated successfully with daptomycin as this genus is intrinsically resistant to vancomycin.

[Use of a freeze-drief culture of Leuconostoc mesenteroides for the synthesis of dextran].

The influence of a prolonged storage of the freeze-dried culture Leuconostoc mesenteroides strain SF-4 on its capacity for the dextrane synthesis has been studied. The culture has maintained its normal viability for 12 years (the observation time) without changes in the cell morphology and capacity for the dextrane synthesis. The structure of dextrane synthesized by the revived culture L. mesenteroides has been similar to that of dextrane synthesized by the culture L. mesenteroides preserved via passages.

Probiotic Properties of Leuconostoc mesenteroides Isolated from Aguamiel of Agave salmiana.

Four lactic acid bacteria, Leuconostoc mesenteroides subsp. mesenteroides, were isolated from aguamiel the sap obtained from Agave salmiana from México and identified by 16S rRNA gene sequence analysis. The probiotic potential of these strains was evaluated and compared with a commercial probiotic (Lactobacillus plantarum 299v) from human origin. All the strains survived the in vitro gastrointestinal simulation conditions: the stomach simulation (3 h, pH 2, 37 °C) and the intestinal simulation (4 h, bile salts 0.5%, 37 °C). All the strains showed a strong hydrophilic character with n-hexadecan

Effects of pH and trace minerals on long-term starvation of Leuconostoc mesenteroides.

Laboratory experiments have definitively shown that exopolymer-producing bacteria have the potential to modify the flow of fluids in oil reservoirs to enhance oil production. Once injected into the reservoir, they will be subjected to a wide range of pH values and to starvation resulting from nutrient depletion. For successful field implementation it is necessary to have a fundamental understanding of these effects on the viability of bacteria. This paper addresses the effects of pH and trace minerals on cell viability of Leuconostoc mesenteroides during carbon source depletion. Two different

Comparative Genomics of Fermented Vegetable-Derived Leuconostoc mesenteroides from Biodiversity Hotspot Yunnan, China.

Fermented vegetables in Yunnan Province, China, harbor abundant microbial diversity. However, the development of indigenous starter cultures remains under-utilized. Genomic information regarding Leuconostoc (L.) mesenteroides isolates from this region is particularly scarce. To assess the genomic characteristics of eight L. mesenteroides isolates from traditional Yunnan fermented vegetables, we performed whole-genome sequencing and conducted a comparative analysis with 21 publicly available vegetable-derived genomes. Comparative genomic analysis revealed marked variation in genome size and pla

Conserved repeat motifs and glucan binding by glucansucrases of oral streptococci and Leuconostoc mesenteroides.

Glucansucrases of oral streptococci and Leuconostoc mesenteroides have a common pattern of structural organization and characteristically contain a domain with a series of tandem amino acid repeats in which certain residues are highly conserved, particularly aromatic amino acids and glycine. In some glucosyltransferases (GTFs) the repeat region has been identified as a glucan binding domain (GBD). Such GBDs are also found in several glucan binding proteins (GBP) of oral streptococci that do not have glucansucrase activity. Alignment of the amino acid sequences of 20 glucansucrases and GBP show

Purification of Leuconostoc mesenteroides citrate lyase and cloning and characterization of the citCDEFG gene cluster.

A citrate lyase (EC 4.1.3.6) was purified 25-fold from Leuconostoc mesenteroides and was shown to contain three subunits. The first 42 amino acids of the beta subunit were identified, as well as an internal peptide sequence spanning some 20 amino acids into the alpha subunit. Using degenerated primers from these sequences, we amplified a 1.2-kb DNA fragment by PCR from Leuconostoc mesenteroides subsp. cremoris. This fragment was used as a probe for screening a Leuconostoc genomic bank to identify the structural genes. The 2.7-kb gene cluster encoding citrate lyase of L. mesenteroides is organi

Sepsis and Liver Abscess Caused by Leuconostoc mesenteroides in a Pediatric Patient with Aplastic Anemia.

Aplastic anemia is a potentially life-threatening condition characterized by bone marrow failure, leading to severe pancytopenia and an increased risk of bacterial and fungal infections. The management of such infections is challenging in immunocompromised patients, particularly in the absence of definitive guidelines. We report a case of a 10-year-old boy with very severe aplastic anemia who developed sepsis and a liver abscess due to Leuconostoc mesenteroides. The infection resolved only after improvement of the absolute neutrophil count following hematopoietic stem cell transplantation. Bec

Growth inhibition of Streptococcus mutans and Leuconostoc mesenteroides by sodium fluoride and ionic tin.

Sodium fluoride caused inhibition of growth rate and growth levels of Streptococcus mutans with glucose as the primary energy and carbon source. Stannous fluoride increased growth lag nad caused a much greater inhibition of growth rate than did sodium fluoride. Neither compound was found to be bactericidal when culture viability was measured after 6 days of incubation. Leuconostoc mesenteroides, which lacks a phosphotransferase system for sugar transport, showed less inhibition of growth rate with both inhibitors than did S. mutans, which possesses a phosphotransferase system. Intestinal Epithelial-Protective Effects of Leuconostoc mesenteroides H40 in LPS-Stimulated HT-29 Cells.

In this study, the intestinal epithelial-protective effects of Leuconostoc mesenteroides H40 (H40) were investigated using HT-29 intestinal epithelial cells. H40 reduced nitric oxide production in sodium nitroprusside (SNP)-treated cells and suppressed the lipopolysaccharide (LPS)-induced gene expression of inflammatory mediators, including interleukin-1 beta (IL-1β), IL-6, IL-8, TNF-α, and COX-2. In addition, it attenuated the LPS-induced decrease in intestinal barrier-related genes, including ZO-1, claudin-1, occludin, JAM1, and MUC2, which was further supported by preserved or enhanced prot

Modulating kimchi taste and fermentation with Latilactobacillus sakei, Leuconostoc mesenteroides, and Weissella koreensis starters.

Interactions between microbial metabolites during fermentation play crucial roles in determining the sensory characteristics and flavor profiles of kimchi. However, the specific contribution of different lactic acid bacteria (LAB) to taste modulation remains unclear. In this study, we employed an integrated e-tongue and metabolomics approach to investigate how Latilactobacillus sakei (LS), Leuconostoc mesenteroides (LM), and Weissella koreensis (WK) influence kimchi's instrumental sensory properties and taste profiles. Using both sterilized and non-sterilized kimchi models, we validated the co
