Substitution of White Meat for Red Meat and Diabetes Risk: A Prospective Cohort Study Stratified by Red Meat Intake.

Background/Objectives: Current evidence on the diabetes prevention benefit of substituting red meat with white meat remains inconsistent and is predominantly based on Western populations. This research examined whether the benefits of such dietary substitution depend on habitual red meat intake levels. Methods: This prospective analysis included 12,143 adults from the China Health and Nutrition Survey (2004-2015). Dietary intake was assessed by multiple 24 h recalls supplemented by a household food inventory. Incident diabetes was identified via self-report and supplementary biochemical data.

Can we cut out the meat of the dish? Constructing consumer-oriented pathways towards meat substitution.

The shift towards a more sustainable diet necessitates less reliance on foods of animal origin. This study presents data from a representative survey of Dutch consumers on their practices related to meat, meat substitution and meat reduction. The practices reflected a cultural gradient of meat substitution options running from other products of animal origin and conventional meat free meals to real vegetarian meals. To investigate feasible substitution options, a variety of meals without meat were presented using photos, which were rated by the participants in terms of attractiveness and chanc

Extraction, bioevaluation and characterization of soybean and locust bean seeds proteins as plant-based meat substitutes.

The growing global demand for sustainable, nutritious, and environmentally friendly protein sources has driven interest in plant-based alternatives to animal-derived proteins. This study aimed to extract, characterize, and evaluate proteins from Glycine max (G. max) and Parkia biglobosa (P. biglobosa) seeds as potential plant-based meat protein substitutes. Proteins were isolated via alkaline solubilization and isoelectric precipitation and analyzed for yield, proximate composition and amino acid profile. Four experimental groups of albino Wistar rats (n = 25) and a control group (n = 25) were

Thymus vulgaris L. as a possible effective substitute for nitrates in meat products.

Nitrates are chemicals found naturally in some foods such as fruit and vegetables or added to others, especially meats, as a preservative. Their use as additives is regulated by European Commission to avoid any risk for human health. In order to reduce or replace the use of these compounds, we investigated the bacteriostatic/bactericidal activity of the essential oil of Thymus vulgaris L. against Listeria innocua, a nonpathogenic microorganism with the same morpho-cultural traits of L. monocytogenes. The study was carried out in vitro and in vivo on processed meat products, i.e. mature salami,

Network formation in pea protein-based meat substitutes: effects of pH, oil, and pectin-based microgel particles.

As consumer awareness of the environmental and health impacts of excessive meat consumption grows, so does interest in plant-based meat substitutes. High-moisture extrusion of protein isolates is an emerging method for producing anisotropic, meat-like structures. However, sensory differences in texture remain a challenge. This study investigates the formation of protein networks in pea protein isolate (PPI) meat substitutes when the pH is adjusted, in a range of pH 3.3 to 11.1, using either hydrochloric acid or sodium hydroxide, or when canola oil and pectin-based microgel particles (MGP) are

Rice Bran as a Sustainable Feed Material Substitute to Improve the Meat Quality in Late-Stage Wenchang Chicken.

The growing competition between humans and livestock for corn-soybean based feed calls for sustainable alternatives like rice bran. This study assessed substituting feed with rice bran (0%, 5%, 10%, 15%, 20%) in diets for slow-growing Wenchang chickens, a prized Chinese yellow-feathered breed. Up to 15% substitution maintained final body weight and average daily gain, but 20% substitution reduced body weight. Feed intake rose significantly at 10-20% substitution. Substituting 15-20% rice bran for feed significantly reduced abdominal fat without affecting slaughter performance or serum biochemi

Strategies to substitute/reduce conventional nitrites and nitrates in processed meats, with particular focus on microbial safety: A review.

Nitrites and nitrates have been traditionally used during manufacturing of processed meats due to their antimicrobial action (especially against Clostridium botulinum), their antioxidant activity and their ability to develop the typical flavour and colour of these products. Concerns about N-nitrosamines and an increased risk of cancer have motivated research on reducing levels of these compounds, using alternative substances and non-thermal technologies. The maximum permitted levels within the European Union have been reduced according to the most recent European Commission Regulation 2023/210

Partial Substitution of Meat with Insect (Alphitobius diaperinus) in a Carnivore Diet Changes the Gut Microbiome and Metabolome of Healthy Rats.

Insects are suggested as a sustainable protein source of high nutritional quality, but the effects of insect ingestion on processes in the gastrointestinal tract and gut microbiota (GM) remain to be established. We examined the effects of partial substitution of meat with insect protein (Alphitobius diaperinus) in a four-week dietary intervention in a healthy rat model (n = 30). GM composition was characterized using' 16S rRNA gene amplicon profiling while the metabolomes of stomach, small intestine, and colon content, feces and blood were investigated by 1H-NMR spectroscopy. Frequent Detection of Abasic Sites and O6-Methyl-2'-Deoxyguanosine and Absence of Substituted Aromatic DNA Adducts in Colorectal Tissue of Smokers and Meat-Eaters with Colorectal Cancer.

Colorectal cancer (CRC) is a leading cause of cancer mortality worldwide. Epidemiological studies have linked the consumption of processed and cooked red meat, as well as tobacco smoking, to increased CRC risk. Processed meats cured with nitrite contain genotoxic N-nitroso compounds (NOCs), and the consumption of both processed and unprocessed red meats can lead to endogenous NOC formation. High-temperature cooking of processed and unprocessed red meats produces genotoxic heterocyclic aromatic amines (HAAs) and polycyclic aromatic hydrocarbons (PAHs), many of which also arise in tobacco smoke.

[Iron deficiency and new dietary habits].

The prevalence of iron deficiency (ID) is 26-44 percent among young girls in Sweden. Their level of iron intake is lower than the recommended daily intake. Meat has the highest bioavailability of iron. As the consumption of meat is declining, especially amongst women, meat substitutes are increasing. A new study shows that the absorption of the iron indicated on the nutritional information labels of meat substitutes is impaired by high levels of phytates in the products.  Fatigue, headache and reduced cognitive function are symptoms of ID. ID during pregnancy renders the mother ill-equiped for
