Simultaneous Production of Bioethanol and Monascus Pigments: a Strategy of Trace Element Supplementation for Monascus purpureus Fermentation.

Zinc and magnesium were the important activators for enzyme catalysis and microorganism growth. However, their effect on the fermentability of Monascus purpureus remained unclear. This study assessed the effect of zinc and magnesium ion on ethanol and Monascus pigments synthesis in M. purpureus using pure glucose and xylose. With 1.0 g/L Zn (Ⅱ) amended, ethanol concentration was raised by 160.48% over the control at 1 d. Meanwhile, 0.0, 3.0 and 4.0 g/L Zn (Ⅱ) separately contributed to the increase of 71.00% for red pigments, 58.36% for yellow pigments and 86.67% for orange pigments. Affirmativ

Role of IscA1 in Low-Frequency Magnetic Field-Associated Changes in Monascus Pigments and Citrinin Levels in Monascus purpureus.

We constructed IscA1 overexpression (IscA1+) and RNA interference (RNAi-IscA1) strains to investigate the role of IscA1 in regulating the synthesis of Monascus pigments (MPs) and citrinin (CIT) in Monascus purpureus under low-frequency magnetic field (LF-MF) exposure. Both IscA1+ and RNAi-IscA1 strains exhibited altered nutritional growth and sexual reproduction; however, asexual reproduction, the ultrastructure of spores and mycelia, and biomass in liquid fermentation, remained unaffected. The production of yellow and orange pigments increased in the IscA1+ strain, while the production of red

Development of Monascus fermentation technology for high hypolipidemic effect.

Monascus species has been used as the traditional food fungus in Eastern Asia for several centuries. Monascus-fermented products are gradually developed as the popular functional food for the prevention of cardiovascular disease, but we know that culture condition affects the hypolipidemic effect of Monascus-fermented product. In the past, the cholesterol-lowering agent--monacolin K--is regarded as the most important hypolipidemic agent. Two natural yellow pigments--monascin and ankaflavin--are also proven as novel hypolipidemic agents in recent years. However, the hypolipidemic effect of Mona

Panax ginseng extract reduces citrinin production and attenuates nephrotoxicity in Monascus purpureus.

AIMS: Monascus purpureus is a widely used filamentous fungus in food and medicinal fermentation, yet the co-production of citrinin, a nephrotoxic mycotoxin, poses significant safety concerns. In this study, we established a co-growth system of M. purpureus with Panax ginseng to investigate the regulatory effects of P. ginseng on citrinin biosynthesis and related toxicity. METHODS AND RESULTS: HPLC analysis revealed that P. ginseng supplementation significantly reduced citrinin production by approximately 68% without impairing fungal biomass accumulation. RT-qPCR results showed that the expres

Seven new Monascus pigments from red yeast rice and their hypolipidemic activities.

Seven unreported Monascus pigments (1 and 2a/2b-4a/4b) were isolated from the red yeast rice, among which three pairs of enantiomers (2a/2b-4a/4b) were successfully isolated by the chiral-phase HPLC. Their chemical structures and absolute configurations were determined on the basis of comprehensive spectroscopic and electronic circular dichroism (ECD) data. The hypolipidemic activities of these compounds were evaluated via OA/PA-BSA stimulated HepG2 cells. Compounds 2a/2b-4a/4b could significantly reduce the intracellular lipid droplet levels, exhibiting certain hypolipidemic potential.
