Critical reviews in oral biology and medicine : an official publication of the American Association of Oral Biologists2002eng
Tannins are polyphenols that occur widespread in plant-based food. They are considered to be part of the plant defense system against environmental stressors. Tannins have a number of effects on animals, including growth-rate depression and inhibition of digestive enzymes. Tannins also have an effect on humans: They are, for example, the cause of byssinosis, a condition that is due to exposure to airborne tannin. Their biological effect is related to the great efficiency by which tannins precipitate proteins, an interaction that occurs by hydrophobic forces and hydrogen bonding. Two groups of

The global protein crisis, which has been driven by the population explosion and environmental cost of traditional farming, requires novel and sustainable remedies. The chapter discusses how novel opportunities can be generated by the combination of two promising frontiers, like seaweed as an all-useful resource in the sea and green nanotechnology. The seaweed extracts that are abundant in bioactive compounds can be used as natural nanofactories in the production of metallic and metal oxide nanoparticles in an eco-friendly manner. The mechanisms of this synthesis are discussed and enlighten on

Leukemia is one of the most prevalent malignancies worldwide that causes the unusual evolution of hematopoietic stem cells. The type of leukemia determines the optimal treatment plan and the patient's survival. However, finding safer and more effective medications and developing novel therapeutic strategies are still the most challenging research topics. Nowadays, over half of the medications used to treat cancer are derived from natural ingredients. Medicinal plants are a reliable natural source of anti-leukemic medications. Plant-derived biologically active compounds, including secondary met

Alternative proteins, or alt proteins, are proteins obtained from non-animal sources like plant sources, meat cultured in labs, and other sources like fungi and insects. These contain a variety of benefits and are gaining popularity worldwide. Some chronic diseases require a low-red-meat diet, which can be fulfilled through alternative proteins, providing similar benefits to those of animal-based proteins. This chapter deals with the sustainability aspect of using alternative proteins. A sustainable protein refers to a protein that is efficient in terms of health benefits, taste, environmental

In the past decade, interest in the production of recombinant pharmaceutical proteins in plants has tremendously progressed because plants do not harbor mammalian viruses, are economically competitive, easily scalable, and capable of carrying out complex post-translational modifications required for recombinant pharmaceutical proteins. Mucuna bracteata is an essential perennial cover crop species widely planted as an underground cover in oil palm and rubber plantations. As a legume, they have high biomass, thrive in its habitat, and can fix nitrogen. Thus, M. bracteata is a cost-efficient crop

The import of proteins into the nucleus is a vital process that is mediated by proteins which specifically recognize nuclear localization signals (NLSs). These factors have not been identified in plants. Previously, we demonstrated that higher plants possess a low-affinity binding site at the nuclear pore that specifically binds to several classes of functional NLSs. By the use of crosslinking reagents and a radiolabeled peptide to the bipartite NLS from the endogenous plant transcription factor Opaque2, two NLS binding proteins (NBPs) of 50-60 kDa and at least two NBPs of 30-40 kDa were ident

With the rapid progression of global population aging and the growing demand for nutrition tailored to individuals with dysphagia, modified plant proteins have emerged as promising candidates for the formulation of easy-to-swallow foods. As an essential macronutrient in the human diet, protein has garnered considerable research interest in the context of texture-modified diets. Plant proteins, offer advantages such as wide availability, cost-effectiveness, health benefits, and environmental sustainability. However, their inherent limitations-including low water solubility, complex tertiary and

With the resource-intensive meat industry accounting for over 50% of food-linked emissions, plant protein consumption is an inevitable need of the hour. Despite its significance, the key barrier to adoption of plant proteins is their astringent off-sensation, typically associated with high friction and consequently poor lubrication performance. Herein, we demonstrate that by transforming plant proteins into physically cross-linked microgels, it is possible to improve their lubricity remarkably, dependent on their volume fractions, as evidenced by combining tribology using biomimetic tongue-lik

The thiol group of cysteine (Cys) residues, often present in the active center of the protein, is of particular importance to protein function, which is significantly determined by the redox state of a protein's environment. Our knowledge of different thiol-based oxidative posttranslational modifications (oxiPTMs), which compete for specific protein thiol groups, has increased over the last 10 years. The principal oxiPTMs include S-sulfenylation, S-glutathionylation, S-nitrosation, persulfidation, S-cyanylation and S-acylation. The role of each oxiPTM depends on the redox cellular state, which

This paper describes the characterisation of a new family of higher plant nuclear envelope-associated proteins (NEAPs) that interact with other proteins of the nuclear envelope. In the model plant Arabidopsis thaliana, the family consists of three genes expressed ubiquitously (AtNEAP1-3) and a pseudogene (AtNEAP4). NEAPs consist of extensive coiled-coil domains, followed by a nuclear localisation signal and a C-terminal predicted transmembrane domain. Domain deletion mutants confirm the presence of a functional nuclear localisation signal and transmembrane domain. AtNEAP proteins localise to t

Plant-based functional foods have attracted increasing research interest to validate their use in preventing metabolic disease. Since it is increasingly recognized that inflammation, oxidative stress, and circadian rhythm play vital roles in various metabolic diseases, including diabetes, obesity and non-alcoholic liver disease, plant proteins, protein hydrolysates, and food extracts that intervene in these biological processes are promising dietary supplements to prevent metabolic diseases. Here, we reviewed the recent research on plant-based foods used for metabolic disease prevention and pr

Human macrophage migration inhibitory factor (MIF) is an inflammatory cytokine with chemokine-like characteristics and an upstream regulator of host innate immunity. It is a critical mediator of a variety of human diseases, such as acute and chronic inflammatory diseases, autoimmunity, atherosclerosis, and cancer. MIF is an atypical chemokine that not only signals through its cognate receptor CD74, but also interacts with the classical chemokine receptors CXCR2 and CXCR4. MIF and its homolog D-dopachrome tautomerase (D-DT)/MIF-2 are structurally unique proteins that are conserved across kingdo

Whey proteins were modified by reaction with selected phenolic compounds (ferulic-, chlorogenic-, caffeic- and gallic acid) and related substances (quinic acid and p-quinone) as well as with extracts from coffee, tea, potato and pear at pH 9. The derivatives formed were characterized in terms of their physicochemical and digestion properties. The derivatization was accompanied by a reaction at the lysine and tryptophan side chains, whereby their content was decreased in comparison to that in the control whey proteins. Moreover, the solubility of the derivatives decreased over a broad pH range

Plant photosynthesis generates singlet oxygen (1O2), a powerful oxidant that can inhibit photosynthesis in return. In this issue of Cell, Shao et al. demonstrate that a small zinc-finger protein, MBS1, via 1O2-induced oxidation and consequent condensate formation on the chloroplast surface, can screen light penetration into chloroplast and confer photoprotection of plants under high light stresses.

Amyloid fibrils are highly ordered protein assemblies characterized by a cross-β architecture. A wide range of proteins can adopt amyloid states, contributing to both disease-related pathology and normal physiological function. While animal-derived amyloids have been extensively examined in atomic detail, amyloid fibrils formed by plant proteins remain relatively understudied. Here we systematically assess three major seed storage proteins-oat 12S globulin, soybean 7S globulin, and rice glutelin-under harsh cooking-like conditions (pH 2, 85 °C). Oat globulin and rice glutelin readily form fibr

The very basic concepts of components regarding dietary food upholds providing reinforcement to the cells, tissues, organs for physiological activities. Each dietary food type gives unique nutrition, strength and serves chemical compound required for the organism to perform any different function such as metabolism (catabolism and anabolism), growth, development and senescence. Protein is one of the dietary foods among dietary food types i.e. carbohydrates, lipids, fats and essential oil. Plant proteins consumption rate are very less when compared to the consumption of animal protein as food.

A synthetic biomolecular condensate (sBC) consisting of a prolamin-rich, plant protein, zein, has been engineered. These artificial condensates were prepared from the liquid-liquid phase (LLP) separation of a protein-rich liquid phase in water. To ensure the colloidal stability of the separated condensate, the protein was chemically modified either via quaternization with glycidyl trimethyl ammonium chloride (GTMAC) or covalently connecting poly(ethylene glycol) by reductive amination, respectively. The modified protein condensates, termed QZs and PZs (for quaternized and PEG-conjugated zein,

The interaction between flavors and proteins results in a reduced headspace concentration of the flavor, affecting flavor perception. We analyzed the retention of a series of esters and ketones with different chain lengths (C4, C6, C8, and C10) by protein isolates of yellow pea, soy, fava bean, and chickpea, with whey as a reference. An increase in protein concentration led to a decrease in flavor compound in the headspace as measured with atmospheric pressure chemical ionization time-of-flight mass spectroscopy (APCI-TOF-MS). Flavor retention was described with a flavor-partitioning model. It

Host proteins from Nicotiana benthamiana can remain in the recombinant biologic products after undergoing multiple steps of purification. These plant protein impurities may induce immunogenicity upon use. Therefore, controlling and monitoring host cell proteins is necessary throughout the process of recombinant protein production. Liquid chromatography-mass spectrometry (LC-MS) has been successfully used to characterize protein species down to nanogram levels in various types of samples. In this study, LC-MS was applied to detect N. benthamiana plant proteins in plant-produced pembrolizumab an

Hypertension is a major controllable risk factor associated with cardiovascular disease, myocardial infarction, stroke, heart failure, and end-stage diabetes. While commercial antihypertensive drugs are effective in managing high blood pressure, they often come with a range of side effects. Additionally, individuals who begin anti-hypertensive treatment may need to continue these medications throughout their lifetime. In response to these challenges, recent studies have focused on the potential of antihypertensive peptides and hydrolysates derived from food proteins. Food protein-derived pepti
