Proteomic analysis of the soybean symbiosome identifies new symbiotic proteins.

Legumes form a symbiosis with rhizobia in which the plant provides an energy source to the rhizobia bacteria that it uses to fix atmospheric nitrogen. This nitrogen is provided to the legume plant, allowing it to grow without the addition of nitrogen fertilizer. As part of the symbiosis, the bacteria in the infected cells of a new root organ, the nodule, are surrounded by a plant-derived membrane, the symbiosome membrane, which becomes the interface between the symbionts. Fractions containing the symbiosome membrane (SM) and material from the lumen of the symbiosome (peribacteroid space or PBS

Intrinsically Disordered Proteins as Important Players during Desiccation Stress of Soybean Radicles.

Intrinsically disordered proteins (IDPs) play a variety of important physiological roles in all living organisms. However, there is no comprehensive analysis of the abundance of IDPs associated with environmental stress in plants. Here, we show that a set of heat-stable proteins (i.e., proteins that do not denature after boiling at 100 °C for 10 min) was present in R0mm and R15mm radicles (i.e., before radicle emergence and 15 mm long radicles) of soybean (Glycine max) seeds. This set of 795 iTRAQ-quantified heat-stable proteins contained a high proportion of wholly or highly disordered protei

Allergenicity characteristics of germinated soybean proteins in a BALB/c mouse model.

Soybean proteins are widely used in many food products. However they also commonly cause food allergy. This study aimed to characterize the allergenicity of germinated soybean proteins in a BALB/c mouse model. Mice were orally sensitized with germinated soybean proteins or soybean proteins using cholera toxin as adjuvant. Anaphylactic shock reactions as well as changes in body temperature, specific antibody levels, mast cell protease-1 (mMCP-1) concentrations, morphological structure of duodenum, and cytokines were determined after the mice were challenged with germinated soybean proteins or s

Dynamic covalent interactions between baicalin and soybean protein: Effect of the baicalin on structure, antioxidant properties, and emulsion stability of soybean protein conjugate.

To improve the emulsion properties of soybean protein isolate (SPI), the effect of baicalin (BC) concentrations on the structure, antioxidant properties, and emulsion stability of SPI-BC conjugates were investigated. Structure analysis revealed that BC induced structural depolymerization and unfolding of SPI through the formation of covalent bonds (CN and CS), increasing hydrophilicity, stabilizing the interface, and enabling the formation of smaller oil droplets. The increase in zeta potential of SPI-BC conjugates enhanced electrostatic repulsion between droplets, preventing aggregation, whil

Regulatory Mechanism of the GmMYB14 Transcription Factor on Auxin-Related Proteins in Soybean.

In a previous study, GmMYB14 overexpressing (GmMYB14-OX) transgenic soybean plants displayed a semi-dwarfism and compact phenotype, which was regulated by the brassinosteroid (BR) pathway. However, the phenotype of GmMYB14-OX plants could be partly rescued after spraying them with exogenous BR. This indicates that other hormones, in addition to BR, also play a role in regulating the architecture of GmMYB14-OX plants. We observed a significant decrease in the content of endogenous indole-3-acetic acid (IAA) in transgenic soybean lines (OX9 and OX12) compared to wild type (WT) plants. The plant

Dietary Avian Proteins Are Comparable to Soybean Proteins on the Atherosclerosis Development and Fatty Liver Disease in Apoe-Deficient Mice.

BACKGROUND AND AIM: The type and amount of dietary protein has become a topic of renewed interest in light of their involvement in metabolic diseases, atherosclerosis and thrombosis. However, little attention has been devoted to the effect of avian proteins despite their wide human consumption. The aim was to investigate the influence of chicken and turkey as sources of protein compared with that of soybean on atherosclerosis and fatty liver disease. METHODS AND RESULTS: To this purpose, male and female Apoe-deficient were fed purified Western diets differing in their protein sources for 12 w

The Wild Soybean C3HC4-Type RING Zinc-Finger Protein ZFP4 Enhances Resistance to Soybean Mosaic Virus.

Soybean [Glycine max (L.) Merr.] is a globally important source of protein and edible oil, but is severely threatened by soybean mosaic virus (SMV). Wild soybean [Glycine soja Sieb. & Zucc.], the wild ancestor of cultivated soybean, exhibits high genetic diversity and strong resistance to pathogens. In this study, we identified a novel SMV resistance locus RSC7-4 and its candidate gene ZFP4 from wild soybean, encoding a C3HC4-type RING zinc-finger protein. The knockout mutants of ZFP4 showed enhanced susceptibility to SMV strains SC7 and SC3, while its overexpressing lines conferred resistance

Process-driven flavour modulation in soybean-based alternative proteins via Neurospora crassa coculture fermentation.

Soybean-derived ingredients are widely utilised in plant-based foods and protein formulations but are often limited by lipid-derived off-flavours, particularly undesirable "beany" and "green" notes. Microbial fermentation offers a clean-label strategy to improve flavour while maintaining processing sustainability. In this study, a factorial experimental design was applied to optimise solid-state fermentation of soybeans using two distinct coculture systems: a fungal-fungal system (Neurospora crassa-Rhizopus oryzae), and a fungal-bacterial system (Neurospora crassa-Lactiplantibacillus plantarum

Novel ACE inhibitors derived from soybean proteins using in silico and in vitro studies.

The widespread application of soybean-derived peptides is currently limited due to the challenges in the identification of peptides. In the present work, in silico and in vitro analysis were applied to identify ACE inhibitory tri-peptides from soybean protein. The soybean protein was cleaved by PeptideCutter. Then, unknown tri-peptides were selected to solubility estimation and ADME prediction. Subsequently, Discovery Studio was applied to evaluate the interaction mechanism between ACE and tri-peptides. Finally, in vitro activity of theoretical ACE inhibitory tri-peptides was verified by RP-HP

Soybean silage as a protein-rich roughage for ruminants: recent advances.

Soybean silage has gained attention as a protein-rich roughage for ruminants, particularly in tropical regions where high-quality forage resources are limited. Compared with cereal silages, soybean silage provides higher crude protein. However, it is more difficult to ensile due to low water-soluble carbohydrate content, high moisture content, and high buffering capacity. These characteristics can delay pH decline, increase proteolysis, and lead to variable fermentation quality and animal responses. This review synthesizes recent research on soybean silage, with emphasis on forage characterist

Replacing protein in corn-soybean turkey diets with methionine and lysine.

The extent to which dietary protein can be minimized by using Met and Lys supplements for market turkeys has been investigated in three experiments involving 2,750 birds. Large White (Nicholas) male turkey poults were fed corn-soybean meal diets of varying protein level to supply Lys from 80 to 120 of NRC (1984) from day-old to 18 wk of age. Performance with diets of 90% NRC Lys was equal to that with diets of higher Lys, provided that SAA were at 100% of NRC. Up to .2% Lys.HCl could be substituted into the 100 or 90% of NRC diets with no depression in performance, suggesting that the other es

Influence of protein ratios on flavor characteristics of soybean-wheat co-precipitated protein extrudates.

Co-precipitated protein is a promising plant-based meat ingredient, but the effect of its compositional ratio on flavor is unclear. This study analyzed the flavor profiles of soybean-wheat co-precipitated protein extrudates (HME-SWCP) with varying protein ratios. Results showed extrudates with protein ratios of 7:3 and 5:5 exhibited a brighter, light-yellow color along with minimal bitterness and astringency. E-nose analysis revealed a significant increase (p < 0.05) in aldehydes and ketones in HME-SWCP. GC-MS analysis identified methyl compounds as primary aroma constituents, and Relative Odo

The Effects of Yeast Protein on Gut Microbiota in Mice When Compared with Soybean Protein and Whey Protein Isolates.

Different protein sources can impact gut microbiota composition and abundance, and also participate in health regulation. In this study, mice were gavaged with yeast protein (YP), soybean protein isolate (SPI), and whey protein isolate (WPI) for 28 days. Body weights showed similar patterns across different protein administration groups. The ileum in YP-supplemented mice exhibited good morphology, and tight-junction (TJ) proteins were slightly upregulated. Immunoglobulin (Ig)A, IgM, and IgG levels in the ileum of different protein groups were significantly increased (p < 0.05). Interleukin (IL

Allergenicity of soybean: new developments in identification of allergenic proteins, cross-reactivities and hypoallergenization technologies.

Soybean is considered one of the "big eight" foods that are believed to be responsible for 90% of all allergenic reactions. Soy allergy is of particular importance, because soybeans are widely used in processed foods and, therefore, represent a particularly insidious source of hidden allergens. Although significant advances have been made in the identification and characterization of soybean allergens, scientists are not completely certain about which proteins in soy cause allergic reactions. At least 16 allergens have been identified. Most of them, as with other plant food allergens, have a m

Investigation of the formation mechanism of the oxidized soybean protein/linoleic acid aggregates: Effect of heating treatment on the soybean protein emulsion structure, antioxidant properties and accessibility of vitamin D3.

The aim of this study was to investigate the effects of heating-induced conjugation between soybean protein isolate (SPI) and linoleic acid (LA) on the structural modifications of the protein, the antioxidant activity of the oxidized protein, and the bioaccessibility of vitamin D3. The results revealed that the LA facilitated the formation of oxidized soy protein aggregates, which demonstrated that the protein oxidation degree increased. The simultaneous rheology and fourier transform infrared spectroscopy measurements made an analysis of the structural changes of proteins caused by oxidation,
