Susceptibility of Streptococcus thermophilus to antibiotics.

A total of 74 Streptococcus thermophilus isolates collected between 1948 and 2005 from different environments were investigated to assess erythromycin, clindamycin, streptomycin, gentamicin, tetracycline and ampicillin susceptibility by means of microdilution, Etest and disk diffusion methods. For this purpose a new S. thermophilus Susceptibility test Medium (SSM) was developed. This medium allowed a better identification of strains with atypical tetracycline resistance. The recipe is a mixed formulation of Iso-Sensitest medium (90% v/v) and M17 medium (10% v/v) supplemented with lactose (0.5%

Structure of an exocellular polysaccharide produced by Streptococcus thermophilus.

Streptococcus thermophilus strains grown on skimmed milk produced a viscosifying, exocellular, and water-soluble polysaccharide which contains D-glucose, D-galactose, and N-acetyl-D-galactosamine in the ratio of 1:2:1. Methylation analysis identified the glycosidic linkages in the tetrasaccharidic repeating-unit, and Smith degradation and nitrous deamination after N-deacetylation gave the sequence of monosaccharides in the repeating-unit. The anomeric configurations of the sugar residues were determined by oxidation of the peracetylated polysaccharide with chromium trioxide and by 1H- and 13C-

Consequences of oxygen on Streptococcus thermophilus physiology and effects on milk fermentation.

Streptococcus thermophilus (ST) is essential for acidifying milk in food production, including yogurt and mozzarella. Oxygen is not controlled in dairy production and varies across scales and steps, partially due to ingress from the headspace and varying diffusion rates in large-scale vessels, where mixing is often minimized to preserve curd integrity. This review summarizes known consequences of oxygen variability on ST growth, acidification, exopolysaccharide formation, and flavor formation in milk, which are important for starter selection and process design that minimize performance variat

Streptococcus salivarius subsp. thermophilus CCFM1312 enhanced mice resilience to activity-based anorexia.

Probiotic intervention, already showing promise in the treatment of various psychiatric disorders like depression, emerges as a potential therapy for anorexia nervosa (AN) with minimal side effects. In this study, we established an activity-based anorexia (ABA) model to probe the pathogenesis of AN and assess the impact of probiotics on ABA mice. ABA resulted in a compensatory increase in duodenal ghrelin levels, impairing the regulation of feeding and the brain reward system. Intervention with Streptococcus salivarius subsp. thermophilus CCFM1312 ameliorated these ABA-induced effects, and the

Effects of Streptococcus thermophilus on volatile sulfur compounds produced by Porphyromonas gingivalis.

Halitosis as oral malodour is an unpleasant odour caused by volatile sulfur compounds (VSCs). VSCs are produced primarily by anaerobic bacteria that abundantly produce proteinase as trypsin-like enzyme. General therapies, such as mouthwash and plaque control, do not provide a continuous effect on oral halitosis. Streptococcus thermophilus is a probiotic bacterium that is beneficial for human health. The aim of this study was to evaluate the effect of S. thermophilus on Porphyromonas gingivalis-producing VSCs and to analyze the inhibitory mechanism of halitosis. P. gingivalis was cultured with

Streptococcus thermophilus and its biosurfactants inhibit adhesion by Candida spp. on silicone rubber.

The adhesion of yeasts, two Candida albicans and two Candida tropicalis strains isolated from naturally colonized voice prostheses, to silicone rubber with and without a salivary conditioning film in the absence and presence of adhering Streptococcus thermophilus B, a biosurfactant-releasing dairy isolate, was studied. Coverage of 1 to 4% of the surface of silicone rubber substrata with adhering S. thermophilus B gave significant reductions in the initial yeast adhesion regardless of the presence of a conditioning film. Mechanistically, this interference in yeast adhesion by S. thermophilus B

Carbohydrate metabolism is essential for the colonization of Streptococcus thermophilus in the digestive tract of gnotobiotic rats.

Streptococcus thermophilus is the archetype of lactose-adapted bacterium and so far, its sugar metabolism has been mainly investigated in vitro. The objective of this work was to study the impact of lactose and lactose permease on S. thermophilus physiology in the gastrointestinal tract (GIT) of gnotobiotic rats. We used rats mono-associated with LMD-9 strain and receiving 4.5% lactose. This model allowed the analysis of colonization curves of LMD-9, its metabolic profile, its production of lactate and its interaction with the colon epithelium. Lactose induced a rapid and high level of S. ther

Streptococcus thermophilus alleviates fatty liver disease by regulating gut microbiota, lipid metabolism, and inflammation.

Alcoholic fatty liver disease (AFLD) is a liver disease caused by long-term excessive alcohol consumption, and there remains no effective treatment beyond alcohol abstinence. Streptococcus thermophilus (S. thermophilus), a traditional probiotic, is widely used in yogurt and other fermented dairy products. This study investigated the therapeutic effects of S. thermophilus in AFLD mice. The results demonstrated that S. thermophilus significantly reduced serum ALT and AST levels, improving liver function. It also regulates PPAR signaling pathway-related genes, reduces serum TG and T-CHO levels, a

Prevention of chronic gastritis by fermented milks made with exopolysaccharide-producing Streptococcus thermophilus strains.

Acetyl-salicylic acid (ASA) is a nonsteroidal antiinflammatory/analgesic drug, which may cause gastritis or stomach ulcers if intensively employed. Exopolysaccharide (EPS)-producing lactic acid bacteria have been claimed to induce immunostimulatory/antiulcer effects in the host. This study investigated the potential preventive effect of fermented milks (FM) with EPS-producing Streptococcus thermophilus strains (CRL 1190 and CRL 804) on an in vivo model of chronic gastritis. Fermented milks (2 EPS(+) and 1 EPS(-), separately) were fed to BALB/c mice for 7 d before inducing gastritis with ASA (4

Thermal and chemical inactivation of indigenous Streptococcus thermophilus bacteriophages isolated from Argentinian dairy plants.

Thermal and chemical resistance of five autochthonal bacteriophages of Streptococcus thermophilus, isolated from Cuartirolo cheese wheys and yogurt, was investigated. Times to obtain 99% inactivation of phages (T99) at 63 degrees C and 72 degrees C in three suspension media (enriched tryptic soy broth, reconstituted commercial nonfat skim milk, and tris magnesium gelatin buffer) were determined. The thermal resistance was dependent on the phages studied but not detectable counts (<10 PFU/ml) were only achieved by heating at 90 degrees C during 5 min. The data obtained for the three assayed med

Dietary effect of folate-rich fermented milk produced by Streptococcus thermophilus strains on hemoglobin level.

OBJECTIVE: Folate, a water-soluble vitamin, functions as a carbon carrier in the formation of heme, the iron-containing non-protein portion of hemoglobin. Therefore, its deficiency leads to anemia. The objective of this study was to determine the dietary effects of folate-rich fermented milk produced by high-folate-producing Streptococcus thermophilus strains (RD 102 and RD 104) on hemoglobin level using a murine model. METHODS: Thirty-two albino mice 30 ± 10 d old were assigned to ingest a basal diet (i.e., a synthetic anemic diet, n = 8, group I, control 1), a basal diet with skim milk (n =

Functional role of the diadenylate cyclase gene cdaA in stress responses of the dairy starter Streptococcus thermophilus.

Streptococcus thermophilus is a key dairy starter culture widely used in the production of yogurt and cheese, where its robustness in stress adaptation and growth performance is critical for industrial fermentation efficiency. Cyclic di-AMP (c-di-AMP) is a key second messenger involved in regulating osmotic homeostasis and stress adaptation in bacteria. However, the role of c-di-AMP in S. thermophilus remains unexplored. Here, cdaA, encoding a diadenylate cyclase containing a conserved DisA_N domain responsible for c-di-AMP synthesis, was identified in S. thermophilus S-3 through bioinformatic
