Аннотация
As a naturally occurring linear anionic polysaccharide, alginate has been extensively used as a coating in the construction of delivery systems for bioactive agents. It has been synergistically integrated with other biopolymers to engineer nanoscale carriers that are designed for the encapsulation and targeted delivery of specific active compounds. The aim of this study was to prepare resveratrol-loaded hollow gliadin/alginate nanoparticles (Res-loaded HGANPs). The results showed that the surface hydrophilicity and redispersibility of resveratrol-loaded hollow gliadin nanoparticles (Res-loaded HGNPs) was significantly enhanced by coating alginate on the surface of Res-loaded HGNPs through electrostatic interaction. Res-loaded HGANPs demonstrated superior hydrophilicity, pH stability, salt ion stability, storage stability, and light stability in comparison to Res-loaded HGNPs. In addition, the alginate coating could significantly inhibit the release of resveratrol in the stomach and promote its release in the small intestine. Therefore, the resveratrol encapsulated in hollow gliadin/alginate nanoparticles displayed better sustained release and intestinal targeting during in vitro simulated digestion process. Furthermore, Res-loaded HGANPs demonstrated higher encapsulation efficiency and superior stability retention in milk tea compared to Res-loaded HGNPs. In conclusion, alginate has significant potential in improving the stability and bioavailability of Res-loaded HGNPs. These results provided valuable insights into the development of Res-loaded HGANPs as a nutraceutical delivery system for resveratrol or other hydrophobic bioactives. These findings demonstrate the significant potential of alginate-coated hollow nanoparticles as functional ingredient delivery vehicles.
