Diseases Transmitted by Foods Contaminated by Wastewater.

A historical and world-wide review of medical and engineering literature discloses that typhoid fever, infectious hepatitis, fascioliasis, and cholera are the diseases that have been most frequently transmitted by foods contaminated by sewage or irrigation water in agricultural or aquacultural practices. Wastewater-contaminated shellfish have resulted in 28 outbreaks of illness, watercress in 10, fish in three, and shrimp in one. Vegetables contaminated by night soil or raw or partially treated sewage were reported as vehicles in 21 outbreaks. Fruits were considered as vehicles in four outbrea

Contamination of foods by food handlers: experiments on hepatitis A virus transfer to food and its interruption.

Hepatitis A virus (HAV) is an important pathogen which has been responsible for many food-borne outbreaks. HAV-excreting food handlers, especially those with poor hygienic practices, can contaminate the foods which they handle. Consumption of such foods without further processing has been known to result in cases of infectious hepatitis. Since quantitative data on virus transfer during contact of hands with foods is not available, we investigated the transfer of HAV from artificially contaminated fingerpads of adult volunteers to pieces of fresh lettuce. Touching the lettuce with artificially

Listeria monocytogenes in Food-Processing Facilities, Food Contamination, and Human Listeriosis: The Brazilian Scenario.

Listeria monocytogenes is a foodborne pathogen that contaminates food-processing environments and persists within biofilms on equipment, utensils, floors, and drains, ultimately reaching final products by cross-contamination. This pathogen grows even under high salt conditions or refrigeration temperatures, remaining viable in various food products until the end of their shelf life. While the estimated incidence of listeriosis is lower than other enteric illnesses, infections caused by L. monocytogenes are more likely to lead to hospitalizations and fatalities. Despite the description of L. mo

Rapid method for the detection of rodenticides in contaminated foods.

Rodenticides are toxic chemicals used to control rodent populations and are among the most common household toxicants. Ingestion of foods contaminated with rodenticides may cause severe illness or death in humans and animals. A rapid analytical method was developed for the identification of nine common rodenticides in foods using solid-liquid extraction followed by dispersive-solid phase extraction prior to the analysis by liquid chromatography-tandem mass spectrometry (LC-MS/MS) and UV detection. The method validation on a variety of food matrices including cornmeal, peanut, whole wheat flour

Ochratoxins-food contaminants: impact on human health.

Ochratoxins are secondary metabolites of Aspergillus and Penicillium, that are hazardous to health through contamination of dietary foods. Ochratoxin A (OTA) remains the single most potent member of this group of mycotoxins. OTA has a long half-life in humans and is thus easily detected in serum. Dietary intake studies have confirmed link between endemic nephrotoxicity in humans to their daily household intake of OTA. OTA has been reported to contribute to endemic nephrotoxicity and carcinogenicity in humans and animals. OTA produces renal tumours, DNA adducts and chromosomal aberrations in ki

The impact of food contaminants on the bioavailability of trace metals.

Organic solvents, detergents, organochloric compounds, pesticides, mycotoxins, residues of veterinary drugs and metals are examples for food contaminants; they are usually present at very low concentrations. Their impact on absorption and distribution kinetics of essential trace metals, if there is any, can be mediated by three types of mechanisms: 1. In animal experiments, contaminants like T-2 mycotoxins or 2,3,7,8 tetrachlorodibenzodioxin inhibited absorptive or excretory mechanisms at high concentrations which, however, are usually not found in food. 2. Food contaminants with metal binding

Potential food contaminants and associated health risks.

The potential toxicants in food are derived from natural or industrial sources. Compounds like lectins and glycoalkaloids that are toxic to man are naturally present in some vegetables like potatoes or legumes. A wide variety of marine toxins mostly produced by dinoflagellates occurring secondarily in molluscs and mussels are usually ingested by human beings causing poisoning. On the other hand, toxic compounds find their way into food during manufacture, storage, or transportation. These include largely the industrial contaminants, persistent organic pollutants (POP), pesticides, heavy metals

Food poisoning due to methamidophos-contaminated vegetables.

BACKGROUND: Organophosphate poisoning is well known for its characteristic symptoms and signs, but food poisoning caused by pesticide-contaminated food is seldom reported. CASE REPORT: We report three incidents of food poisoning that resulted from exposure to the organophosphate insecticide methamidophos in vegetables. These outbreaks caused a cholinergic syndrome in 4 patients. The cholinergic overactivity led as to suspect organophosphate food poisoning. All patients recovered well following appropriate therapy. The clinical diagnosis of organophosphate poisoning was confirmed by reduced le

Thallium poisoning from maliciously contaminated food.

Four young adults presented two days after one of them had received marzipan balls packaged in a box from an expensive candy manufacturer. Two ate one candy ball, while two others shared a third. The next day, variable gastrointestinal symptoms developed. On the third day, two patients developed painful paresthesiae of the hands and feet, an early but nonspecific clinical marker of thallium poisoning. A tentative diagnosis of thallium poisoning was made based on symptoms, and treatment was initiated. The remaining candies were radiographed. Metallic densities in the candies supported the diagn

The Genus Wallemia-From Contamination of Food to Health Threat.

The fungal genus Wallemia of the order Wallemiales (Wallemiomycotina, Basidiomycota) comprises the most xerotolerant, xerophilic and also halophilic species worldwide. Wallemia spp. are found in various osmotically challenged environments, such as dry, salted, or highly sugared foods, dry feed, hypersaline waters of solar salterns, salt crystals, indoor and outdoor air, and agriculture aerosols. Recently, eight species were recognized for the genus Wallemia, among which four are commonly associated with foods: W. sebi, W. mellicola, W. muriae and W. ichthyophaga. To date, only strains of W. se

Assessment of exposure to chemical contaminants in water and food.

UNLABELLED: The main questions on the validity of the studies and routine monitoring (e.g., in the scope of the WHO/UNEP GEMS programme) assessing exposure to chemicals through water and food (i.e., through digestion) relate to the following. (a) SAMPLING: variations due to sampling strategy and approach usually exceed analytical errors. (b) MEASUREMENT: quality assessment and quality control (QA/QC) procedures are essential. However, potential limitations of measurement errors resulting from implementation of these procedures should be kept in perspective with other errors and confounding f

[Ochratoxin A, ubiquitous mycotoxin contaminating human food].

Ochratoxin A (OTA) a mycotoxin produced by molds of the Aspergillus and Penicillium genera, contaminates animal feeds and human foods. It has been shown to induce renal adenomas and hepatocellular carcinomas in rodents. OTA is implicated in Balkan endemic nephropathy, a disease followed by a high incidence of urinary tract tumours. Concerning the genotoxicity of OTA, we have recently shown, using the [32P]-phosphate postlabelling method, that several DNA-adducts are formed in four mice organs treated with OTA. Some of the adducts were specific of every analyzed tissue. These results, allow us

Assessment of human exposure to chemical contaminants in foods.

One of the most important factors in assessing risk to human health from potentially harmful chemicals in foods is the availability of good data on the exposure of the public to such substances. The means of acquiring these data generally involves monitoring programmes using appropriate sampling procedures and reliable analytical methods for measuring the compounds of concern in a variety of substrates. Two approaches are generally employed: a biological monitoring programme which measures substances in human fluids and tissues, and a food analysis monitoring programme, preferably a total diet

Bacterial contamination in traditional Gambian weaning foods.

Although emphasis on infant feeding is rightly being placed on breast-feeding, the need for safe weaning foods for the developing world must also receive its due attention. Traditional weaning foods used for young infants in a typical West African village can be as hazardous, bacteriologically, as commercial milk products, and providing a breast-fed child with supplements under the conditions which prevail in much of the developing world is potentially dangerous, whatever the source of the food.

Emerging Issues on Tropane Alkaloid Contamination of Food in Europe.

The occurrence of tropane alkaloids (TAs), toxic plant metabolites, in food in Europe was studied to identify those TAs in food most relevant for human health. Information was extracted from the literature and the 2016 study from the European Food Safety Authority. Calystegines were identified as being inherent TAs in foods common in Europe, such as Solanum tuberosum (potato), S. melongena (eggplant, aubergine), Capsicum annuum (bell pepper) and Brassica oleracea (broccoli, Brussels sprouts). In addition, some low-molecular-weight tropanes and Convolvulaceae-type TAs were found inherent to bel
