Effects of the halothane genotype and slaughter weight on texture of pork.

The objective of this study was to investigate the effects of the halothane (HAL) genotype, slaughter weight (SW), and the HAL x SW interaction on compositional and textural traits of raw and cooked pork. Pigs were bred to exhibit one of the three HAL genotypes (NN, Nn, and nn) with otherwise equivalent genomes. The nn halothane reactors are known to typically produce PSE pork, whereas NN pigs do not typically produce PSE pork. Pietrain x Large White gilts and boars, all with verified Nn genotype (by DNA test), were mated to obtain F2 littermates of the three HAL genotypes. These pigs were sla

Coordinated strategies for controlling micronutrient malnutrition: a technical workshop.

Participants in a November 1991 workshop concluded that coordinated strategies for controlling malnutrition due to iodine, iron, vitamin A and other micronutrients deficiencies are technically feasible and should be given consideration in planning control efforts. Coordinated surveys involving clinical, biochemical and dietary assessment of multiple micronutrients are feasible. Multiple fortification is also possible using such vehicles as salt, processed rice or sugar. Supplementation efforts can be integrated with existing health care programs. Food-based strategies are also effective. The b

From sustainable feedstocks to microbial foods.

Climate change-induced alterations in weather patterns, such as frequent and severe heatwaves, cold waves, droughts, floods, heavy rain and storms, are reducing crop yields and agricultural productivity. At the same time, greenhouse gases arising from food production and supply account for almost 30% of anthropogenic emissions. This vicious circle is producing a global food crisis. Sustainable food resources and production systems are needed now, and microbial foods are one possible solution. In this Perspective, we highlight the most promising technologies, and carbon and energy sources, for

From conventional to biosensor-based detection of Cryptosporidium spp. and Toxoplasma gondii in food and water: Implications for food and water safety.

Zoonotic food- and waterborne protozoan parasites (FWPPs) pose a significant global public health risk, causing substantial morbidity via contaminated fresh produce, water, and meat. Despite their notable impact, surveillance and detection technologies remain inadequate for high-priority protozoans such as Cryptosporidium spp. and Toxoplasma gondii, as current World Health Organization (WHO) and Food and Agriculture Organization (FAO) guidelines primarily focus on bacterial pathogens. This review evaluates the global burden of Cryptosporidium spp. and T. gondii, and highlights the limitations

Prospects, challenges and need for regulation of nanotechnology with special reference to India.

To meet the challenges of food security in a sustainable way, technological intervention in agriculture is of prime importance. With the existing conventional technologies supporting high yield, better crop production and protection, the emphasis is now on use of nanotechnology. Exploring new applications of nanotechnology has gained momentum in recent years and has shown acceptance in sectors like food, medicine, chemistry etc. As compared to other sectors, the accepted role in agriculture can still be considered on the marginal side in terms of nanotechnology application. Nanotechnology offe

Natural needle microstructure-based immunochromatographic assay for sensitively detecting streptomycin in food products.

Immunochromatographic assays (ICAs) are famous as the point of care test (POCT) technology against food fraud for antibiotics detection. However, the poor sensitivity, stability and the monoclonal antibodies (mAbs)-depended signals limited their further applications. Here, inspired by the vivid color display and functionalization of natural pigments, we developed natural edible pigment-derived needle microstructure (NNMS) as signal tracers by simple crosslinking of alizarin and formaldehyde, allowing high color rendering ability, significant water dispersibility and antibody enrichment. Relative preferences for edible and leisure stimuli in children with autism: A replication in Italy.

Several studies have found that edible items tend to displace leisure items in multiple-stimulus preference assessments for individuals with developmental disabilities. One recent study (Conine & Vollmer, 2019) included screen-based technology devices in assessments and found that food items were less likely to displace leisure items and in some cases leisure items totally displaced edible items. The purpose of our study was to conduct a replication of Conine and Vollmer in Italy to evaluate cultural differences in food and leisure preferences. Results of our study were similar: For 44% of par

Green Sorptive Sampling Coupled With UHPLC-IMS-MS and GC×GC-TOFMS for Characterization of Migrating Substances From Plastic Food Contact Materials.

Comprehensive analysis of migrating compounds from plastic food contact materials (FCMs) is analytically demanding due to the structural diversity and broad physicochemical properties of intentionally and non-intentionally added substances (IAS and NIAS). This necessitates the development of advanced, multidimensional separation techniques coupled with high-resolution detection for trace-level characterization. Five million tones of chemical additives are incorporated into plastic FCMs annually, which is concerning considering the health risks associated with human exposure to migrating chemic

Treatment of cyanide-containing wastewater from the food industry in a laboratory-scale fixed-bed methanogenic reactor.

During the process of producing cassava starch from Manihot esculenta roots, large amounts of cyanoglycosides were released, which rapidly decayed to CN- following enzymatic hydrolysis. Depending on the varying cyanoglycoside content of the cassava varieties, the cyanide concentration in the wastewater was as high as 200 mg/l. To simulate anaerobic stabilization, a wastewater with a chemical oxygen demand (COD) of about 20 g/l was prepared from cassava roots and was fermented in a fixed-bed methanogenic reactor. The start-up phase for a 99% degradation of low concentrations of cyanide (10 mg/l

Iron Fortification Practices and Implications for Iron Addition to Salt.

This introductory article provides an in-depth technical background for iron fortification, and thus introduces a series of articles in this supplement designed to present the current evidence on the fortification of salt with both iodine and iron, that is, double-fortified salt (DFS). This article reviews our current knowledge of the causes and consequences of iron deficiency and anemia and then, with the aim of assisting the comparison between DFS and other common iron-fortified staple foods, discusses the factors influencing the efficacy of iron-fortified foods. This includes the dietary an

Regional food diversity and human health.

Regions are significant for the way we understand and strategize food for health and economic development. They generally represent various food cultures and opportunities for food exchange based on proximity, historical linkages and complementarities. The example of North and West Africa represents an intersection of some of the most original of human eating experiences out of Africa and the enrichment of these by Arab traders, through the exchange of products, ideas, observations, beliefs and technologies. All of these will have encouraged diversity in food intake. However food diversity and

Advances in Detecting Viable/Dead Foodborne Microorganisms Using Diverse Functional Nucleic Acid-Based Molecular Recognition.

Accurately detecting viable foodborne pathogenic bacteria is essential for food safety risk assessments and public health interventions. Traditional plate counting is time-consuming and operationally cumbersome. Immunological assays are unable to distinguish viable from dead cells, whereas conventional nucleic acid amplification is often affected by residual DNA originating from dead bacteria. These limitations render conventional approaches inadequate for rapid and precise field detection. Functional nucleic acids (FNAs) offer a promising alternative for viability detection because of their h

Aquatic food loss and waste rate in the United States is half of earlier estimates.

Food loss and waste (FLW) is a major challenge to food system sustainability, including aquatic foods. We investigated aquatic FLW in the food supply of the United States, the largest importer of aquatic food globally, using primary and secondary data and life cycle methodology. We show that there are significant differences in FLW among species, production technology, origin and stage of supply chain. We estimate total aquatic FLW was 22.7%, which is 43-55% lower than earlier estimates reported in the literature, illustrating the importance of applying a disaggregated approach. Production los

Challenges and opportunities in generating and utilizing environmental data for sustainable food systems.

Modern agricultural production has detrimental effects on the environment including contributing toward current global climate and biodiversity crises. It is therefore necessary that our agroecosystems, and wider food systems, become sustainable, so that the growing population can be fed now and in the future. Agroecosystems are complex with multiple inputs, outputs and interactions, with consequent environmental effects and impacts. This complexity is mirrored in an equally complex "data ecosystem" that is utilized by different stakeholders to make decisions. New understanding and technologie
