Evaluation of nutritional and chemical composition of yacon syrup using 1H NMR and UPLC-ESI-Q-TOF-MSE.

A complete characterization of yacon syrup was performed by analytical techniques, including NMR and UPLC-QTOF-MSE. The effect of the different stages of yacon syrup production on fructooligosaccharides (FOS) and chlorogenic acid (CGA) contents were also evaluated. As a result, in addition to higher levels of FOS and CGA, some mineral elements, such as K, Ca and P, and essential amino acids, such as tryptophan, valine, and threonine, were determined in yacon syrup. Twenty-five compounds were putatively identified, and the main compounds were phenolics derived from quinic and trans-cinnamic aci

Legume seeds and cereal grains' capacity to accumulate iron while sprouting in order to obtain food fortificant.

BACKGROUND: Prepared sprouts, after culturing in a medium with an increased iron concentration, could become a beneficial food iron fortificant. However, the efficient iron accumulation depends on the plants genus, species and/or varieties. The aim of the study was to indicate the seeds or grains which accumulate iron most efficiently during the sprouting process. METHODS: Alfalfa, lentil, lupine and soybean seeds as well as wheat grains were sprouted in abiotic stress conditions induced by the excess of iron(II) in culture media. The tolerance of these plants to iron concentration and its ac

The Heterogeneity of Obesity: Fitting Treatments To Individuals - Republished Article.

Body weight is regulated by a complex interaction of biological, behavioral, and cultural factors. The population as a whole is at risk for obesity because of increased intake of dietary fat, the consumption of calories in fewer meals per day, striking accessibility to palatable foods, and decreased physical activity. This risk may become a reality in individuals with certain biological predispositions (genetic tendency, low metabolic rate, increased fat cell number), specific eating patterns, and susceptibility to the extreme cultural pressure to be lean. These factors must be considered in e

Seroepidemiology of Human Brucellosis Among Blood Donors in Southern Ethiopia: Calling Attention to a Neglected Zoonotic Disease.

Human brucellosis is neglected in southern Ethiopia. Although traditional food processing practices and animal husbandry which increase the risk of brucellosis are common, it has not been properly studied yet. This study was conducted to determine the seroepidemiology of brucellosis among apparently healthy individuals in southern Ethiopia. In the study, blood samples were collected to screen for serum agglutinins reactive to stained antigen of Brucella abortus Standard tube titration was performed for reactive serum to determine the titer of the agglutinin. A structured questionnaire was used

Disaster response and people experiencing homelessness: Addressing challenges of a population with limited resources.

In this article the authors provide an overview of some issues that inhibit disaster planning and response for people experiencing homelessness and discuss the planning process conducted for this population in Worcester, MA. People experiencing homelessness face numerous challenges in preparing for disasters both natural and human caused. Similarly, providers attempting to aid these individuals must recognize and overcome various factors that hamper efforts to provide assistance. People experiencing homelessness lack the general resources many in the United States take for granted, including f

CryomiRs: towards the identification of a cold-associated family of microRNAs.

Hypometabolism is a strategy favored by many species to survive extreme environmental stresses such as low temperatures, lack of food sources or anoxic conditions. Mammalian hibernation and insect cold hardiness are well-documented examples of natural models utilizing metabolic rate depression when confronted with such conditions. A plethora of metabolic and molecular changes must occur in these species to regulate this process. A recently discovered family of short non-coding nucleic acids, the miRNAs, is rapidly emerging as a potential modulator of cold tolerance in different species. In thi

[Physiological and pathological role of adipose tissue innate immune system receptors].

The data of TLR-4 and TLR-2 existance in adipose tissue cells is presented in the review, their signal pathway is described, and an idea of physiological and pathological role of innate immune system receptors is given proof. TLRs activation leads to insulin resistance of adipose, hepatic and muscle cells, which increases glucose and lipids level in blood. This reaction is defined as a condition of physiological insulin resistance, which role is in providing immune processes with energetic and plastic substances. Ligands of TLRs are components of microorganisms: bacterial lipoproteins and liop

Choking on food: a rare case of alexander leukodystrophy and choking.

Every body has to eat to survive but it becomes a matter of great concern, when the life provider food becomes an asphyxiating agent. In this case, a 60-year-old woman choked herself while swallowing biscuits. On autopsy examination, biscuits were found lodged in larygo-pharynx. Brain showed marked dystrophy and loosened lusterless white matter. On histopathologic examination, brain tissue had numerous eosinophilic globules representing astrocytic processes called "Rosenthal fibers"; hence, it was diagnosed as a case of Alexander dystrophy. It is a disease of white matter, where there is a pro

Enteric nervous system.

PURPOSE OF REVIEW: Enteric neurobiology is a rapidly advancing field of investigation providing insight into the way in which diverse gastrointestinal functions are controlled, coordinated and integrated with central mechanisms important for food intake regulation, illness behaviour and sensory mechanisms. Our aim was to highlight recent advances. RECENT FINDINGS: With such a large number of studies to choose from and given our emphasis in previous years on developmental aspects, sensory transmission, and neuro-immune interactions, we have focused on two themes. One reflecting the current int

Role of mTOR in physiology and pathology of the nervous system.

Mammalian target of rapamycin (mTOR) is a serine-threonine protein kinase that regulates several intracellular processes in response to extracellular signals, nutrient availability, energy status of the cell and stress. mTOR regulates survival, differentiation and development of neurons. Axon growth and navigation, dendritic arborization, as well as synaptogenesis, depend on proper mTOR activity. In adult brain mTOR is crucial for synaptic plasticity, learning and memory formation, and brain control of food uptake. Recent studies reveal that mTOR activity is modified in various pathologic stat

[Body weight regulation through the central nervous system. The development of a pathogenetically based adiposity therapy].

The last decade witnessed a dramatic increase in knowledge concerning regulation of body weight and obesity. According to recent concepts constancy of body weight is a side product of regulatory events which ensure constant glucose fluxes to the brain. Within these control systems glucocorticoids and melanocortins play a fundamental role at several sites. The melanocortin neurons in the arcuate nucleus of the hypothalamus are important mediators of the feedback effects of leptin and insulin. Glucocorticoid and mineralocorticoid receptors in hippocampal neurons are crucial, as they define the b

A Salmonella protein causes macrophage cell death by inducing autophagy.

Salmonella enterica, the causative agent of food poisoning and typhoid fever, induces programmed cell death in macrophages, a process found to be dependent on a type III protein secretion system, and SipB, a protein with membrane fusion activity that is delivered into host cells by this system. When expressed in cultured cells, SipB caused the formation of and localized to unusual multimembrane structures. These structures resembled autophagosomes and contained both mitochondrial and endoplasmic reticulum markers. A mutant form of SipB devoid of membrane fusion activity localized to mitochondr

The tongue: structure and function relevant to disease and oral health.

The tongue (L. lingua; G. glossa) functions as a digestive organ by facilitating the movement of food during mastication and assisting swallowing. Other important functions include speech and taste. The tongue consists of striated muscle and occupies the floor of the mouth. The dorsal mucosal surface consists of stratified squamous epithelium, with numerous papillae and taste buds. The tongue, a voluntary muscular structure, is attached by a fold, called the frenulum, to the floor of the mouth. Typically, between 8 and 12 circumvallate papillae are arranged in an inverted V-shape towards the b

Gastroparesis and neuromuscular disorders of the stomach.

Gastroparesis is the most severe form of gastric neuromuscular dysfunction along a continuum that encompasses gastric visceral hypersensitivity, gastric dysrhythmias, and pylorospasm. Gastroparesis may present with vague dyspepsia symptoms or with vomiting of undigested food and weight loss. A careful history and physical examination may suggest the diagnosis of gastroparesis, but symptoms associated with gastric neuromuscular disorders are non-specific. Gastroparesis in patients with diabetes, particularly type 2 diabetes, is more common than appreciated. If gastroparesis is confirmed, then r

The epidemiology of gastric cancer.

The epidemiology of gastric cancer is remarkable for both its dramatic decline in incidence over the past century and its continuing presence as the second leading cause of cancer deaths worldwide despite this decline. Factors including increased consumption of fruits and vegetables, and decreased intake of salty foods have largely been credited for the decline. Epidemiologic studies continue to provide data on other gastric cancer risk factors, including associations with Helicobacter pylori infection, as well as dietary factors, tobacco, and alcohol intake. In response to the opposing trends

Helicobacter pylori infection and gastric cancer in Spain.

Helicobacter pylori infection has a pathogenic role in the biologic process of gastric carcinoma and gastric MALT lymphoma. Geographical variations in both H. pylori infection and gastric carcinoma prevalence have been reported. The outcome of H. pylori chronic gastritis varies among individuals depending, in part, on the environmental factors. Atrophic gastritis and intestinal metaplasia are risk factors of gastric carcinoma. The prevalence of gastric carcinoma in Spain differs from being high in the central areas and low around the Mediterranean coast. The different geographical distribution

Gastrointestinal uptake of macromolecules.

Although the majority of dietary proteins undergo extensive digestion, small, nutritionally insignificant amounts of food proteins appear to cross the gastrointestinal mucosa intact. Experiments in a variety of allergic models has demonstrated that exposure of the gastrointestinal mucosa to the intact allergen leads to an anaphylactoid reaction. To examine the uptake of immunologically intact protein across the gastrointestinal epithelium, the mucosal to serosal movement of bovine serum albumin was measured in stripped gastric and intestinal mucosa mounted in modified Ussing-type chambers. Symptoms in spice workers.

Spices are widely used for flavouring food and are mostly grown in the tropics. Twenty-eight workers in a store processing cloves, pepper, nutmeg, mace and cardamom for export were studied. They were exposed to the dust of these products for short periods, in rotation. Seventy-six per cent of the workers experienced symptoms such as smarting of the nostrils and eyes, cough, sneezing and running nose while handling cloves. Similar symptoms occurred less frequently with pepper (44%). These symptoms were all temporary and lasted only during exposure. Nutmeg, mace and cardamom did not induce any u
