Effects of biotic and abiotic factors on ethanol concentration in stored sugarbeet roots.

BACKGROUND: Ethanol is a common contaminant in sugarbeet factories that is believed to be produced by fermentation of sucrose by microbes present in the factory. Ethanol, however, may also enter factory processing streams as a contaminant in delivered sugarbeet roots, although no studies have examined whether harvested and stored roots contain ethanol or evaluated factors that might affect ethanol accumulation in postharvest roots. Research was conducted to determine the capability and extent to which sugarbeet roots produce and accumulate ethanol following harvest and determine the effects of

The roles of hydrogen sulfide in maintaining postharvest fruit quality: Crosstalk with phytohormones.

Most post-harvest fruit lose the nutritional supply and gradually senescence, resulting in a decline in quality. Therefore, the problem of fruit preservation after harvest has become a hot topic. In recent years, hydrogen sulfide (H2S) has been considered as a signal molecule to improve the quality of fruit after harvest. This article mainly reviews the research progress of H2S in improving postharvest fruit quality, including delayed the postharvest ripening and senescence of fruit, alleviated the postharvest chilling injury and inhibited the postharvest diseases. The specific mechanisms incl

Salmonella Typhimurium and Staphylococcus aureus dynamics in/on variable (micro)structures of fish-based model systems at suboptimal temperatures.

The limited knowledge concerning the influence of food (micro)structure on microbial dynamics decreases the accuracy of the developed predictive models, as most studies have mainly been based on experimental data obtained in liquid microbiological media or in/on real foods. The use of model systems has a great potential when studying this complex factor. Apart from the variability in (micro)structural properties, model systems vary in compositional aspects, as a consequence of their (micro)structural variation. In this study, different experimental food model systems, with compositional and ph

New Composite Packaging Material from Edible Oil By-Product Coated with Paraffin Wax for Dry Apricot Slice Packing Under a Modified Atmosphere.

Composite biopolymer hydrogel as food packaging material, apart from being environmentally favorable, faces high standards set upon food packaging materials. The feature that favors biopolymer film application is their low gas permeability under room conditions and lower relative humidity conditions. However, most biopolymer-based materials show high moisture sensitiveness and limited water vapor permeability, which limits their application for food packaging. In this paper, a new packaging material derived from an edible oil industry byproduct (pumpkin oil cake) coated with a thin layer of pa

Clostridium welchii and Bacillus cereus infection and intoxication.

Clostridium welchii type A is a common agent of food poisoning when allowed to proliferate to large numbers in cooked foods, usually meat and poultry. The main factors of importance are survival of the spores, frequently found on raw products, through the cooking process, and possible contamination of cooked meats transferred to unclean containers; subsequent germination of spores and rapid multiplication of the vegetative cells during long slow cooling and non-refrigerated storage lead to heavy contamination. The toxin responsible is different from the soluble antigens, and its formation in t

Persistence of a Stx-Encoding Bacteriophage in Minced Meat Investigated by Application of an Improved DNA Extraction Method and Digital Droplet PCR.

Shiga toxin-producing Escherichia coli (STEC) are important food-borne pathogens with Shiga toxins as the main virulence factor. Shiga toxins are encoded on Shiga toxin-encoding bacteriophages (Stx phages). Stx phages may exist as free bacteriophages in the environment or in foods or as prophages integrated into the host genome. From a food safety perspective, it is important to have knowledge on the survival and persistence of Stx phages in food products since these may integrate into the bacterial hosts through transduction if conditions are right. Here, we present the results from a study i

Postharvest properties and metabolomic profiling of cucumbers treated with hydrogen sulfide under low-temperature storage.

Cucumbers are highly susceptible to chilling injury (CI) during low-temperature storage, resulting in pitting, water-soaking, tissue collapse, and rapid quality loss. This study showed that exogenous hydrogen sulfide (H2S) effectively alleviated CI in cucumbers stored at 4 °C for 15 d. H2S-treated fruit exhibited lower CI severity, better-preserved color and firmness, and higher soluble protein content than the control. Lipid peroxidation was strongly suppressed, with malondialdehyde 45-49% lower from day 6 onward, accompanied by stronger APX, CAT, and POD activities and higher DPPH and ABTS s

Double-layer electrospun fibers with integrated gas-selective and bioactive functions for the preservation of perishable fruit.

Respiration is the primary driver of postharvest deterioration in highly perishable fruits, as both plant tissues and associated microorganisms rapidly consume available nutrients and accelerate quality loss. Modulating the surrounding gaseous environment is therefore critical for mitigating respiration-the most important factor of driving spoilage. In this study, double-layer fiber films with selective gas permeability were developed to regulate O2 and CO2 levels within localized microenvironments. Their asymmetric structure established a mildly hypoxic and CO2-enriched atmosphere, achieving

Multi-omics analysis of microbial succession and metabolite dynamics in cold-stored walnut kernels.

Fresh walnut kernels are highly susceptible to microbial contamination and quality deterioration during cold storage due to their high moisture content and active physiological metabolism, posing challenges to storage safety. This study systematically investigated the microbial community succession, metabolite dynamics, and quality changes of dehusked fresh walnut kernels during 90 days of cold storage at 4 °C. The results showed that the bacterial community was dominated by Proteobacteria (83.35 %-87.13 %) throughout storage, with the initially dominant Paucibacter showing a slight decrease i

Effects of atmospheric cold plasma treatment mode on muscle quality and bacterial community of red shrimp during cold storage.

Atmospheric cold plasma (ACP), known for its safety, non-thermal processing, and energy efficiency, is especially effective for preserving perishable items such as seafood. However, excessive use of ACP may cause oxidation and sensory quality deterioration, which limits its application in the seafood industry. Thus, optimizing ACP treatment modes to balance sterilization efficiency with minimal oxidative effects is essential. This study aims to explore the impact of different ACP treatment modes (cyclical and one-time treatment) on the muscle quality and bacterial community of red shrimp durin

Role of post-harvest abiotic factors on interactions of Salmonella typhimurium with lettuce leaves (Lactuca sativa L. var crispa).

Foodborne gastroenteritis outbreaks of Salmonella Typhimurium infections are often associated with leafy vegetables. In addition to biotic factors, attachment and adhesion to the vegetable leaves and subsequent survival and internalization in the tissues in the post-harvest stages are mediated by abiotic factors, mainly light, temperature and time. This study combined quantitative cultural methods and Scanning Electron Microscopy (SEM) to investigate the influence of light (dark = 0 μE m-2s-1 and light = 100 μE m-2s-1), temperature (4 °C, 12 °C and 25 °C) and storage time (0 h, 24 h, 48 h and

Port wine oxidation management: a multiparametric kinetic approach.

Port wine is a flagship fortified wine of Portugal, which undergoes a particularly long aging period, developing a dynamic sensory profile over time, responsible for several wine categories, which is dependent upon the type of aging (bottle or barrel). Therefore, the quality of the product is dependent upon the chemical mechanisms occurring during the aging process, such as oxidation or Maillard reactions. To attain the desired quality management, it is necessary to understand how technological parameters, such as temperature or oxygen exposure, affect the kinetics of the formation of key odor

Polystyrene microbeads influence lipid storage distribution in C. elegans as revealed by coherent anti-Stokes Raman scattering (CARS) microscopy.

The exposure of Caenorhabditis elegans to polystyrene (PS) beads of a wide range of sizes impedes feeding, by reducing food consumption, and has been linked to inhibitory effects on the reproductive capacity of this nematode, as determined in standardized toxicity tests. Lipid storage provides energy for longevity, growth, and reproduction and may influence the organismal response to stress, including the food deprivation resulting from microplastics exposure. However, the effects of microplastics on energy storage have not been investigated in detail. In this study, C. elegans was exposed to
