Simultaneous nitrogen and phosphorus recovery from sludge-fermentation liquid mixture and application of the fermentation liquid to enhance municipal wastewater biological nutrient removal.

Recently, waste activated sludge (WAS) fermentation for short-chain fatty acids (SCFAs) production has drawn much attention because the waste biosolids produced in wastewater treatment plants (WWTP) can be reused, and the produced SCFAs can be applied to promote biological nutrient removal (BNR). Usually, after WAS fermentation, the fermentation liquid is separated and then the recovery of ammonium and phosphorus, which are released during WAS fermentation, is conducted to prevent the increase of nitrogen and phosphorus loadings to WWTP. As an alternative to the traditional process, this paper

Grape ripeness shapes microbial community dynamics and fermentation outcomes during modified pied de cuve wine fermentations.

Pied de cuve (PdC) is a traditional inoculation strategy consisting of adding a small volume of actively fermenting must to initiate alcoholic fermentation (AF) in the main vat. In this study, we evaluated the effect of grape ripeness on microbial community composition, fermentation performance, and Saccharomyces cerevisiae strain diversity using a modified spontaneous PdC prepared with sulphur dioxide (SO₂) and ethanol and fermented at 18 °C. PdC inoculation was compared with inoculation using the commercial S. cerevisiae strain QA23 and with spontaneous fermentation. Experiments were perform

Elucidating the pattern of flavor evolution during the steaming process of fermented sausages in two dimensions: Strain fermentation and steaming time.

This study elucidated the pattern of change in flavor during the steaming of fermented sausages, with a particular focus on the influence of two key factors: Strain fermentation and steaming time. The results indicated that the steaming procedure resulted in a notable loss of water, as well as protein and fat oxidation, in fermented sausages. Additionally, flavor compounds, predominantly aldehydes, esters, and Maillard reaction products, were produced in considerable quantities during the steaming of sausages. Notably, fermented sausages inoculated with LS starter (Lactiplantibacillus plantaru

Sourdough-Yeast Co-Fermentation Preserves Frozen Raw Stuffed-Bun Quality.

Frozen raw steamed stuffed buns lose volume and harden during storage, limiting industrial quality retention. Here, we evaluated 0%, 30%, 50%, 70%, and 100% sourdough addition in a sourdough-yeast co-fermentation system and examined microbial, metabolic, and gluten-related changes. At 30% addition, the dough reached a maximum height of 47.7 mm and produced the best overall product quality. After 30 days at -18 °C, this group retained the highest specific volume, approximately 21% above the control, together with lower hardness and higher sensory scores. Yeast and lactic acid bacteria (LAB) cou

Total fungal RNA extraction from complex solid- state fermentation products.

Investigating fungal gene expression in complex solid-state fermentation (SSF) systems is essential for process optimization but is hindered by challenges in RNA extraction. RNA extraction from fungal samples rich in plant biomass is a special challenge that is not met by the commercial RNA extraction kits and conventional RNA extraction methods we have tested. This study presents an optimized RNA extraction method, suitable for RT-qPCR from agricultural side streams fermented by filamentous fungi. The method was applied to investigate the temporal expression of the class II hydrophobin NC2 in

Bacteroides intestinalis-Driven Arabinoxylan Fermentation Mitigates Inflammatory and Metabolic Dysfunction.

Insufficient dietary fiber intake is strongly associated with gut microbiome dysfunction and an increased risk of noncommunicable diseases. Synergistic synbiotics, which pair defined microbial strains with their preferred carbohydrate substrates, offer a promising strategy to restore these functions. However, the rational design of such interventions remains challenging because of insufficient understanding of microbial fiber-degrading capacities and the host-relevant bioactivities of fermentation-derived metabolites. Here, we identify human colonic commensal Bacteroides intestinalis (B. intes

Screening and Fermentation Parameter Optimization of Lipase-Producing Trichosporon asahii.

Waste cooking oil is generated in large quantities during food-waste processing, and its complex composition may pose environmental and public-health risks if it is improperly managed. Lipase-mediated conversion of waste cooking oil into biodiesel offers a promising strategy for both waste-oil valorization and greener fuel production. To expand the available microbial sources of lipases, this study isolated a strain with strong lipase-producing capacity from composted food-waste samples. The isolate was identified using molecular biological methods, the enzymatic properties of the extracellula

Fermentation kinetics of Pichia kluyveri-Saccharomyces cerevisiae in Nebbiolo must.

The beneficial role of mixed-culture fermentations involving Saccharomyces cerevisiae and non-Saccharomyces yeasts in winemaking is well established. It is consistently observed that non-Saccharomyces species are rapidly outcompeted and decline in viability when co-inoculated with S. cerevisiae. However, the extent and dynamics of this phenomenon are known to be species and strain dependent. Despite these findings, only a limited number of studies have focused on mixed fermentations involving Pichia kluyveri strains. In this study, four strains of P. kluyveri and two strains of S. cerevisiae w

Yeast strain development and process intensification in high-gravity fermentation.

High- and very-high-gravity (HG/VHG) fermentation increases substrate loading and product titers, thereby improving fermenter utilization and potentially reducing water use and downstream processing requirements. Initially developed for brewing and fuel ethanol production, these approaches are now applied more broadly in food, beverage, and bioproduct manufacturing. This MiniReview summarises operational definitions and industrial drivers of HG/VHG fermentation and examines the associated constraints in rheology, mass and heat transfer, osmotic and ethanol stress, nutrient availability, and ox

Characterizing Intraruminal Differences of the pH and Fermentation in Cattle.

This study characterized the association between the ventral and dorsal ruminal pH in cows. The experiment was conducted with six nonlactating rumen-cannulated Holstein cows fed either a grain-rich diet (65% concentrate in dry matter) or a forage-only diet. The dorsal and ventral ruminal pHs were measured in each cow using two identical indwelling systems, which recorded pH every 5 min. Furthermore, the volatile fatty acid concentrations and osmolality were determined in free ruminal liquid (FRL) of the ventral rumen and dorsal mat particle-associated ruminal liquid (PARL) and in feces. Development of a chemometric platform for mid-infrared fermentation monitoring.

Industrial bioprocess development still depends heavily on off-line analytics such as HPLC, which, while accurate, are slow and limit real-time decision-making. Process Analytical Technologies (PAT) can overcome this barrier, with mid-infrared spectroscopy (mIR) offering fast, sensitive, and cost-effective monitoring. Yet, most applications rely on complex chemometric tools such as Partial Least Squares (PLS), restricting adoption by non-specialists and limiting systematic evaluation of data sources. Here, we present a streamlined platform for rapid spectral analysis and chemometric model cons

Deciphering wine fermentation through microbiota transplantation and synthetic yeast communities.

Microbial communities play a central role in fermentation dynamics and in wine quality, by driving the fermentation process and shaping the sensory and chemical profiles of wine. Consequently, although considerable attention has been given to inoculation strategies, including commercial starter cultures, pied-de-cuve, and spontaneous fermentation, the impact of transplanting an entire microbial community independently of its original matrix has not yet been evaluated. This study compared grape berry surface microbiota transplantation by berry rinsing with the traditional pied-de-cuve approach,

Lactic acid fermentation of non-conventional plant-based protein extract.

The increasing demand for plant-based foods necessitates the development of effective preservation methods to ensure safety and quality. This study evaluated the effectiveness of biopreservation using eight plant-based protein extracts (PBPEs) (pea, faba, soy, potato, pumpkin, hazelnuts, rice, and hemp) fermented with 12 different lactic acid bacteria (LAB) strains from four species. The effectiveness of LAB biopreservation was assessed both at the endpoint and in real-time using impedometric analysis and was found to depend on both the matrix and the strain. Among the 12 LAB strains, Lactobac

Sustainable bioethanol production by solid-state fermentation: a systematic review.

The escalation of the global population has accelerated the demand for sustainable energy sources such as bioethanol. Traditionally, bioethanol was obtained by the fermentation of sugar from agricultural crops and grains. However, this technique creates serious threats on the global food supplies, thus hindering the commercial production of bioethanol. Therefore, there is a need to develop new technologies and low-cost raw materials in order to ensure that bioethanol is economically comparable to the first generation of bioethanol. Solid-state fermentation (SSF) has been in the limelight withi
