Research highlights in bacteriophages of fermented soybean foods.

Since their discovery, bacteriophages - viruses that infect bacteria - have fascinated scientists due to their ubiquity and potential applications in fields ranging from molecular biology to biotechnology and medicine. However, in fermentation processes that depend on bacterial activity, bacteriophages can pose a major threat by infecting and disrupting key microbial populations, leading to delayed or failed fermentations and resulting in economic losses. While the impact of bacteriophages on fermented dairy foods, such as yogurt and cheese, is well-documented, such knowledge is comparatively

Microbial interactions and ecology in fermented food ecosystems.

Fermented foods and beverages, produced by the intentional growth of microorganisms, have long been among the most widely consumed foods in the human diet. Whether microorganisms are added directly to food substrates, or the growth and activity of autochthonous microorganisms colonizing food substrates is encouraged by selective conditions, the production of organic acids, ethanol and other metabolic end products enhance the safety, shelf-life, sensory and functional properties of foods. Whereas some fermented foods may be produced by communities dominated by only a few taxa of limited phyloge

Dysgonic fermenter-2: a clinico-epidemiologic review.

In the literature to date, there have been 44 confirmed cases of infection with the Dysgonic Fermenter-2 (DF-2) bacterium. DF-2 infections appear to demonstrate a strong association with dog bites (or recent exposure to dogs) and have a predilection for patients with defective host defenses although immunocompetent individuals are also susceptible. Recently, the first two cases of documented DF-2 infection following cat bite have been reported. Of the cases reported, 42 of the 44 blood cultures grew DF-2. In one of the two cases where blood culture failed to grow DF-2, the bacterium was isolat

Kombucha Bacterial Cellulose Obtained from Tea Fermentation for Biomedical Applications.

The symbiotic culture of bacteria and yeast (SCOBY) driving kombucha tea fermentation produces a cellulose pellicle with remarkable promise for biomedical applications. Unlike well-studied bacterial cellulose (BC), which is produced by single-strain cultures, the underexplored kombucha-derived bacterial cellulose (KBC) can be produced from agro-industrial waste streams and at low capital cost. This review provides an overview of the great potential of KBC for biomedical applications. First, discussions on the cooperative interactions between bacterial and yeast species within the SCOBY consort

Purple Potato and Its Polyphenols Modulate Cecal Fermentation in Rats.

This study investigated the effects of the purple potato (PP) cultivar (cv.) 'Shadow-Queen,' rich in polyphenols and resistant starch (RS), on cecal fermentation in rats. It compared such effects with those obtained with a white potato (WP) cv. 'Toyoshiro,' and polyphenol-removed (decolorized purple potato, DPP) 'Shadow-Queen' potatoes. Seven-week-old male Fischer rats were fed diets containing WP, PP, or DPP. Compared to the cecal microbial composition of the control (CON), WP, and DPP groups, the PP group exhibited higher or lower relative abundances of the phyla Firmicutes or Bacteroidetes,

Extracellular Electron Transfer Enables Methanol Fermentation in Acetogen Eubacterium limosum.

Global warming driven by carbon emissions makes transitioning to a circular carbon economy increasingly urgent. Methanol is a promising energy carrier and a favorable substrate for biotechnology applications due to its high energy conversion efficiency and easy integration with existing infrastructure. Eubacterium limosum has the native ability to convert methanol into valuable chemicals, including acetate, butyrate, and hexanoate. However, oxidized cosubstrates such as CO2 or formate are generally required due to limitations in energy and redox balance. In this study, we demonstrate a novel a

Extremozymes for food fermentation: Integrating AI, metagenomics, and protein engineering.

Climate change-induced fluctuations in temperature, pH, salinity, and water activity are increasingly compromising microbial metabolism and fermentation efficiency, exposing the limitations of conventional mesophilic enzymes in maintaining process stability and product consistency. Extremozymes, derived from extremophilic microorganisms, exhibit exceptional structural stability and catalytic activity under harsh physicochemical conditions, making them promising biocatalysts for climate-resilient food fermentation. Although considerable progress has been achieved in extremozyme discovery and en

Bayesian inference on fermentation kinetics: Comparative analysis with frequentist approach.

This study explores the application of Bayesian inference to fermentation kinetic modeling, focusing on two representative batch systems: glycerol-glucose co-fermentation for 1,3-propanediol (1,3-PDO) production and dark fermentation for biohydrogen production. Modified hyperbolic secant functions were implemented to model metabolite concentrations obtained from above-noted experiments. Then, the performance of a Bayesian hierarchical model to that of frequentist nonlinear least squares fitting was compared. The results indicate that while the frequentist approach demonstrates high computation

Optimizing dark fermentation for hydrogen production: lessons from Thermoactinomyces mirandus.

Biological hydrogen (H2) production via dark fermentation (DF) offers a renewable pathway for energy recovery from biomass, but process performance is highly strain dependent and often limited by suboptimal operating conditions. The present study characterizes fermentation physiology and optimizes small-scale H2 production by the recently discovered thermophilic anaerobe Thermoactinomyces mirandus. Batch cultivations at 52 °C in anoxic serum bottles were used to screen carbon sources (glucose, fructose, xylose, arabinose, and lactose), nitrogen sources (yeast extract, casein peptone, casamino

Fermentation-driven degradation of antinutritional factors in plant-based foods.

Fermentation is an effective natural strategy for reducing antinutritional factors (ANFs) in plant-based foods. ANFs can limit nutrient bioavailability, impair protein digestibility, and pose health risks. Microbial fermentation degrades ANFs through acidification, enzymatic activity, and microbial metabolism. Beyond detoxification, fermentation enhances nutritional quality by improving mineral bioavailability, enriching amino acid profiles, and generating beneficial bioactive compounds. The efficiency of this process depends on microbial strains, substrate characteristics, and processing cond

Inhibitory Effect of Staphylococcus Epidermidis Fermentation Broth on Staphylococcus Aureus.

In this study, Staphylococcus epidermidis (S. epidermidis) fermentation broth with an inhibitory effect on Staphylococcus aureus (S. aureus) was produced by optimizing cultivation conditions. S. epidermidis fermentation broth cultivated in NA medium (SFB) does not inhibit the growth of S. aureus, whereas Gly-SFB or Glu-SFB, prepared by incorporating glycerol or glucose into NA medium, significantly inhibited S. aureus growth. GC‒MS and HPLC revealed several fatty acids in Gly-SFB and Glu-SFB, which inhibited the growth of S. aureus. LC‒MS/MS combined with untargeted metabolomics was used to ex
