Risk presented to minimally processed chilled foods by psychrotrophic Bacillus cereus.

BACKGROUND: Spores of psychrotrophic Bacillus cereus may survive the mild heat treatments given to minimally processed chilled foods. Subsequent germination and cell multiplication during refrigerated storage may lead to bacterial concentrations that are hazardous to health. SCOPE AND APPROACH: This review is concerned with the characterisation of factors that prevent psychrotrophic B. cereus reaching hazardous concentrations in minimally processed chilled foods and associated foodborne illness. A risk assessment framework is used to quantify the risk associated with B. cereus and minimally p

Impact of food processing and simulated gastrointestinal digestion on gliadin immunoreactivity in rolls.

BACKGROUND: The enzymatic modification of wheat proteins during dough fermentation and its digestion as supported by peptidases of microbiological origin can result in the degradation of important peptides in the pathogenesis of coeliac disease. However, baking bread and the high temperature associated with this could change the physicochemical and immunological properties of proteins. Thermal changes in the spatial structure of proteins and their hydrolysis can lead to a masking or degrading of immunoreactive peptides. RESULTS: The addition of prolyl endopeptidase (PEP), comprising peptidase

Landmarks in the historical development of twenty first century food processing technologies.

Over a course of centuries, various food processing technologies have been explored and implemented to provide safe, fresher-tasting and nutritive food products. Among these technologies, application of emerging food processes (e.g., cold plasma, pressurized fluids, pulsed electric fields, ohmic heating, radiofrequency electric fields, ultrasonics and megasonics, high hydrostatic pressure, high pressure homogenization, hyperbaric storage, and negative pressure cavitation extraction) have attracted much attention in the past decades. This is because, compared to their conventional counterparts,

Comparison of internal process control viruses for detection of food and waterborne viruses.

Enteric viruses are pathogens associated with food- and waterborne outbreaks. The recovery of viruses from food or water samples is affected by the procedures applied to detect and concentrate them. The incorporation of an internal process control virus to the analyses allows monitoring the performance of the methodology. The aim of this study was to produce a recombinant adenovirus (rAdV) and apply it together with bacteriophage PP7 as process controls. The rAdV carries a DNA construction in its genome to differentiate it from wild-type adenovirus by qPCR. The stability of both control viruse

Neural signature of food reward processing in bulimic-type eating disorders.

Clinical observations and similarities to addiction suggest heightened reward sensitivity to food in patients with bulimic-type eating (BTE) disorders. Therefore, we investigated the expectation and receipt of food reward compared with monetary reward in patients with BTE. Fifty-six patients with BTE (27 patients with binge eating disorder and 29 with bulimia nervosa) and 55 matched healthy control participants underwent event-related functional magnetic resonance imaging while performing both food and monetary incentive delay tasks. BTE patients exhibited reduced brain activation in the poste

Mechanisms of food processing and storage-related stress tolerance in Clostridium botulinum.

Vegetative cultures of Clostridium botulinum produce the extremely potent botulinum neurotoxin, and may jeopardize the safety of foods unless sufficient measures to prevent growth are applied. Minimal food processing relies on combinations of mild treatments, primarily to avoid deterioration of the sensory qualities of the food. Tolerance of C. botulinum to minimal food processing is well characterized. However, data on effects of successive treatments on robustness towards further processing is lacking. Developments in genetic manipulation tools and the availability of annotated genomes have

Effects of food processing on masticatory strain and craniofacial growth in a retrognathic face.

Changes in the technology of food preparation over the last few thousand years (especially cooking, softening, and grinding) are hypothesized to have contributed to smaller facial size in humans because of less growth in response to strains generated by chewing softer, more processed food. While there is considerable comparative evidence to support this idea, most experimental tests of this hypothesis have been on non-human primates or other very prognathic mammals (rodents, swine) raised on hard versus very soft (nearly liquid) diets. Here, we examine facial growth and in vivo strains generat

Protein reactions during food processing and storage--their relevance to human nutrition.

The main reactions of protein components during food processing and storage were presented and discussed. Since most data are available from the reactions of lysine with other food components these results are mainly demonstrated. Using furosine as indicator the formation and presence of the early Maillard products fructoselysine, lactuloselysine or maltuloselysine in several food systems was measured. Also lysinoalanine is mentioned. A further, recently detected compound, N-epsilon-carboxymethyllysine, appears to be also of biological and technological interest. Several foods contained up to

Caloric content and industrial processing modulate the mental simulation of food concepts.

INTRODUCTION: Grounded cognition theories propose that concepts, including food stimuli, are represented through the partial reactivation of sensory and motor experiences. Evidence suggests that foods subjectively perceived as unhealthy tend to elicit stronger sensorimotor simulations, which may, in turn, increase their perceived attractiveness and consumption. However, it remains unclear to what extent objectively defined food properties, specifically caloric content and degree of industrial processing, modulate this simulation. METHODS: In this study, 99 Italian-speaking participants rated

Time Course of Electrocortical Processing of Food Stimuli in Adolescent Anorexia Nervosa.

OBJECTIVE: Anorexia nervosa (AN) typically manifests during adolescence and is linked to significant psychological and physical sequelae. A better understanding of the underlying maintenance mechanisms of adolescent AN is therefore crucial. Cognitive behavioral theories emphasize the influence of cognitive biases in the processing of disorder-relevant stimuli. METHOD: The current study investigated attentional bias to high- and low-calorie food in female adolescents with AN (n = 31) and without AN (n = 35). An event-related potentials study utilizing prolonged stimulus presentation in an atte

Bioprotective Strategies to Control Listeria monocytogenes in Food Products and Processing Environments.

Listeria monocytogenes is a highly pathogenic foodborne bacteria that is responsible for listeriosis, a serious infectious disease characterized by a high mortality rate among vulnerable populations such as the immunocompromised, pregnant women and the elderly. Moreover, its pathogenicity, its capacity to persist in food processing environments and proliferate in adverse conditions like low temperatures and high salt concentrations, and its ability to generate biofilms make it a major contaminant affecting ready-to-eat food products. In response to this potential public health threat, the agri

Additives in Processed Foods as a Potential Source of Endocrine-Disrupting Chemicals: A Review.

Processed foods, accounting for most consumable food categories today, contain considerable amounts of food additives. Food additives are substances added to food products to improve taste, consistency, appearance, or shelf life. Various food additives, such as phthalates, bisphenol A, tartrazine, erythrosine, artificial sweeteners, and parabens, have been identified as potential sources of endocrine-disrupting chemicals (EDCs) in processed foods. EDCs are substances that frequently interfere with the regular functioning of the endocrine system, creating an unusual environment in the biologica

Recent advance in sesame allergens: Influence of food processing and their detection methods.

Sesame (Sesamum indicum L.) is a valuable oilseed crop with numerous nutritional benefits containing a diverse range of bioactive compounds. However, sesame is also considered an allergenic food that triggers various mild to severe adverse reactions (e.g., anaphylaxis). Strict dietary avoidance of sesame components is the best option to protect the sensitized consumers. Sesame or sesame-derived foods are always consumed after certain food processing operations, which would cause a considerable impact on the structure of sesame proteins, changing their sensitization capacity and detectability.
