Mapping Layers of Sustainability Consciousness in Food Consumption Using the Item Response Theory (IRT) Approach.

Understanding how consumers commit to sustainability in their food choices requires attention to both widely shared values and the points where commitments differ. Drawing on Item Response Theory (IRT), this study examines survey data from more than one thousand consumers to map a continuum of sustainability consciousness. Traditional regression approaches treat all motives as equal; however, the IRT method's main advantage is to highlight which attitudes most distinguish consumers and where the boundaries lie between superficial agreement and deeper commitment. The main research questions are

When multi-labelling backfires: The influence of sustainability FOP labels valence and orientation.

To inform and encourage responsible consumer choices, the use of sustainability (i.e., health and/or environmental), front-of-package labels on food products is becoming increasingly widespread. While the benefits of a single label are well-documented, less is known about the effects of multi-labelling - when multiple front-of-package labels are displayed on packaging - especially when these labels differ in valence (i.e., positive versus negative) and orientation (i.e., self-oriented versus others-oriented). Through two experimental studies, we examine how consumers respond to multi-labelling

Edible matrices developed by ionic gelation improve the acceptability of iron sources for mammals: model weaned pigs.

The objective of this study was to evaluate pigs' preference for feed fortified with heme iron (HI) and non-heme iron (NHI), to develop edible matrices (EMs) as delivery vehicles for both iron sources, and to assess pigs' feeding behavior towards these matrices. Pigs showed equal preference for the control feed and HI-fortified feed (both 50 %), but a lower preference for NHI-fortified feed (31 %) compared to the control (69 %). The EMs were prepared by ionic gelation, using sweet whey and sodium alginate as base materials. Three types of EMs were developed: a control without iron (EMC), one w

Effects of bitten food images in marketing communications.

Marketing communications (e.g., food packages, restaurant menus, coupons, social media posts) often include images of bitten and non-bitten (i.e., complete) foods. Taking an empirics first approach, the current research explores how and why these images influence consumers. A field study shows a higher redemption rate for discount coupons featuring a bitten (vs. non-bitten) food. However, a controlled online study fails to replicate this effect. Two additional preregistered studies shed light on the inconsistent results observed online and in the field by identifying two competing mechanisms c

Preliminary fMRI findings concerning the influence of 5-HTP on food selection.

OBJECTIVE: This functional magnetic resonance imaging study was designed to observe how physiological brain states can alter food preferences. A primary goal was to observe food-sensitive regions and moreover examine whether 5-HTP intake would activate areas which have been associated with appetite suppression, anorexia, satiety, and weight loss. METHODS AND PROCEDURE: Fourteen healthy male and female participants took part in the study, of which half of them received the supplement 5-HTP and the rest vitamin C (control) on an empty stomach. During the scanning session, they passively observe

Factors that influence adherence to calcium recommendations.

To identify barriers to following calcium recommendations among women with reduced bone mineral density (BMD), four focus group sessions were held with 30 postmenopausal women diagnosed with low BMD. Key concepts and themes were derived from transcripts. Participants were aware of the importance of calcium to their bone health, and were attempting to follow calcium intake recommendations. Several major themes associated with the ability to obtain adequate calcium were identified, including knowledge and confidence in actions, lifestyle and food preferences, and side effects and conflict with o

Hypocalcaemia owing to severe vitamin D deficiency in two children with autism spectrum disorder and food allergy.

Individuals with autism spectrum disorder (ASD) often exhibit limited food preferences and sensory sensitivity. Co-existing food allergies in this population can further limit their already restricted diets, increasing the risk of nutritional deficiencies. Two children with ASD and food allergies presented with non-specific symptoms and were found to have hypocalcaemia secondary to severe vitamin D deficiency. The report highlights the importance of a greater degree of suspicion of vitamin D deficiency in children with co-existing ASD and food allergies. Non-specific symptoms related to hypoca

Modeling how autistic and non-autistic groups learn about their own and each other's preferences.

Recent theories propose that altered social understanding in autism stems from mismatches in social representations and inferential processes between non-autistic and autistic groups. Using a cross-sectional design, we examined whether these groups apply different types of social knowledge and learning strategies when inferring preferences of individuals from their own versus another diagnostic group. When comparing food and activity self-preferences in large samples, autistic adolescents' preferences showed greater group-level variability compared to non-autistic adults and adolescents. A sam

An assessment of food acceptance in children with autism or pervasive developmental disorder-not otherwise specified.

Some children with autism and pervasive developmental disorder-not otherwise specified (PDD-NOS) have been reported to have atypical feeding behavior, such as sensitivity to food texture and selective preferences for particular foods. No systematic studies of feeding behavior in this population have been published. Munk and Repp (1994) developed methods for assessing feeding problems in individuals with cognitive and physical disabilities that allow categorization of individual feeding patterns based on responses to repeated presentations of food. In this study, we systematically replicated th

Postingestive Modulation of Food Seeking Depends on Vagus-Mediated Dopamine Neuron Activity.

Postingestive nutrient sensing can induce food preferences. However, much less is known about the ability of postingestive signals to modulate food-seeking behaviors. Here we report a causal connection between postingestive sucrose sensing and vagus-mediated dopamine neuron activity in the ventral tegmental area (VTA), supporting food seeking. The activity of VTA dopamine neurons increases significantly after administration of intragastric sucrose, and deletion of the NMDA receptor in these neurons, which affects bursting and plasticity, abolishes lever pressing for postingestive sucrose deliv

Domain-specific effects of hunger on attention and choice.

Hunger leads to less healthy food choices, but its effect on decision-making in non-food domains is less clear. To close this gap, we investigated to what extent hunger state affected choice across domains by examining attentional patterns and cognitive mechanisms underlying decision-making across different domains. We implemented a within-subject design in which participants completed a food choice, an intertemporal discounting, and a social preferences task in hungry and sated states while their eye-movements were recorded. Hungry participants were more likely to look at and subsequently sel

Exploring caregivers' attitudes and beliefs about nutrition and weight management for young people with Duchenne muscular dystrophy.

INTRODUCTION/AIMS: Obesity disproportionately affects children and adolescents with Duchenne muscular dystrophy (DMD) and with adverse consequences for disease progression. This study aims to: explore barriers, enablers, attitudes, and beliefs about nutrition and weight management; and to obtain caregiver preferences for the design of a weight management program for DMD. METHODS: We surveyed caregivers of young people with DMD from four Australian pediatric neuromuscular clinics. Survey questions were informed by the Theoretical Domains Framework and purposefully designed to explore barriers

[The role of individual characteristics and learning in the manifestation of motor asymmetry in rats].

Relative role was studied of the "initial" preference (caused by animals individual properties) and learning in real preference of one limb in rats. After a short-time learning to get food from a narrow horizontal pipe only by the left paw a retrograde amnesia was evoked in rats. At preference determination after three weeks, in conditions which allowed to get food by any paw, in the group of animals without amnesia the number of the left-handed rats was 5.7 times more than of the right-handed ones. In the group of animals with amnesia the numbers of the left-handed, right-handed and ambidextr

Evaluating and adapting the Mediterranean diet for non-Mediterranean populations: a critical appraisal.

This review outlines the limitations of current techniques for evaluating the Mediterranean diet in Mediterranean versus non-Mediterranean populations. Differences between the two populations with regard to the foods that are available, food processing and preparation techniques, and eating and lifestyle habits may influence the implementation and effects of a Mediterranean diet in non-Mediterranean regions. For example, the composition of food groups may vary significantly, due to differences in the specific foods within a food group and to differences in aspects of food production and prepar

Effects of cigarette smoking and family history of alcoholism on sweet taste perception and food cravings in women.

BACKGROUND: Despite popular beliefs that smoking affects the sensitivity and liking of sweet-tasting foods and beverages, few psychophysical studies have examined this phenomenon and none have taken into account the individual's family history of alcoholism (FH+), a predictor of heightened sweet preferences. METHODS: A within- and between-subjects study was conducted to determine the effect of both cigarette smoking and an acute exposure to nicotine on sweet taste sensitivity and preferences in women. Two groups were studied on 2 days separated by 1 week: women who were current smokers (n = 2

Food acceptance and neophobia in children with phenylketonuria: a prospective controlled study.

BACKGROUND: In phenylketonuria (PKU), little is known about the effect of bitter-tasting phenylalanine-free l-amino acid exposure on taste preference development. The present prospective study aimed to determine the flavour preferences of children with PKU versus healthy control children. METHODS: Thirty-five children with PKU and 35 age/gender-matched controls, aged 4-13 years, tasted 10 blinded puree foods in random order. They were rated using a seven-point pictorial hedonic scale (super yummy to super yucky) and ranked in preferential order. Caregivers completed a neophobia and food frequ

Ingredients of gender-based stereotypes about food. Indirect influence of food type, portion size and presentation on gendered intentions to eat.

The association between certain foods and masculinity or femininity has been widely discussed in different disciplines. However, extant research has yet to clarify which are the critical dimensions lending these gender connotations to food and thus impacting on the willingness to eat it. We present a study on the role of food type, portion size, and dish presentation as potential factors constituting the gender-based stereotype about food, and their indirect or mediated effect on the intention of men and women to eat certain feminine/masculine stereotyped foods. We manipulated the three featur

Forest to fork strategy: Examining consumer preferences for wild boar meat.

Wild boar population is expanding rapidly across Europe, bringing challenges to wildlife management, agriculture and disease control. Meanwhile, there is an increasing need for wild game meat as it can be a good source of protein, vitamins and minerals. Some European countries, like Italy, still lack of legal and structured supply chains for hunted game meat. This study investigates the acceptability of developing a wild boar meat market in Italy by examining consumer preferences for key product attributes. Data were collected from 1719 Italian consumers through a discrete choice experiment. T
