Ultrasonication has emerged as a promising technique for modifying physicochemical properties of proteins, enhancing their functionality in food applications. This study evaluated the effects of ultrasonic treatment on the structural and functional properties of mealworm-derived proteins (MPs) and their potential as emulsifiers. Dynamic light scattering revealed a significant reduction in MP particle size from 3464.3 nm (untreated) to 115.5 nm (30 min sonication), along with increased zeta potential, indicating improved colloidal stability. Sonication enhanced oil-holding capacity and solubili

The present study aimed to assess the occurrence of transferable determinants conferring resistance to tetracyclines, macrolide-lincosamide-streptogramin B, vancomycin, beta-lactams, and aminoglycosides in 40 samples of commercialized edible mealworms (Tenebrio molitor L.) purchased from European Union (EU) and non-EU producers. A high prevalence of tet(K) was observed in all of the samples assayed, with percentages of PCR-based positivity that ranged from 80% (samples from Thailand) to 100% (samples from the Netherlands, Belgium and France). For macrolides, erm(B) prevailed, being detected in

Iodine deficiency remains a widespread nutritional concern, and biofortification of feed ingredients is a promising complement to salt iodization. Insects, such as the yellow mealworm, Tenebrio molitor Linnaeus (Coleoptera: Tenebrionidae), are gaining attention as sustainable protein sources, yet little is known about their capacity to accumulate iodine. This study quantified dose-dependent iodine accumulation and excretion, and assessed adverse effects, in T. molitor larvae reared on diets spanning more than 3 orders of magnitude of supplemented iodine; saturation kinetics here refers to dose

In the present study, the distribution of antibiotic resistance genes in laboratory-reared fresh mealworm larvae (Tenebrio molitor L.), their feeding substrates (carrots and wheatmeal), and frass was assessed. Microbial counts on selective media added with antibiotics highlighted the presence of lactic acid bacteria resistant to ampicillin and vancomycin and, more specifically, enterococci resistant to the latter antibiotic. Moreover, staphylococci resistant to gentamicin, erythromycin, tetracycline, and vancomycin were detected. Enterobacteriaceae resistant to ampicillin and gentamicin were a

Tenebrio molitor is an edible insect that has antimicrobial, anticancer, and antihypertensive effects. The aim of this study was to identify the unreported bioactive compounds from T. molitor larvae with inhibitory activities against factor Xa (FXa) and platelet aggregation. Isolated compounds were evaluated for their anti-FXa and anti-platelet aggregation properties by monitoring clotting time, platelet aggregation, FXa activity, and thrombus formation. A diketopiperazine (1, cyclo(L-Pro-L-Tyr)) and a phenylethanoid (2, N-acetyltyramine) were isolated and inhibited the catalytic activity of F

The present study is the first to investigate the effect of asymmetric mixtures of Tenebrio molitor (TM) and Hermetia illucens (HI) meals (2:4 and 4:2) on growth performance, carcass traits, meat quality, blood parameters, and intestinal morphometry in broiler chickens. A total of 1050 one-day-old male Ross 308 broilers were assigned to three isoenergetic and isonitrogenous diets for 42 days (14 pens/treatment, 25 birds/pen): a control diet (Control), 2% TM+4% HI (TM2-HI4), or 4% TM+2% HI (TM4-HI2). Over the trial, birds fed TM4-HI2 mixture showed higher body weight gain (BWG) than the Control

The angiotensin-converting enzyme (ACE) inhibitory potential of the main protein fractions from Tenebrio molitor larvae (TML) was examined to evaluate their use as a novel antihypertensive functional food. Both fractions contained YAN tripeptide, previously reported as responsible for ACE inhibition. Although YAN has been synthesized and was used as a standard for LC-MS/MS quantification and IC50 against ACE was determined, low yields of YAN from TML did not explain adequately the activity of the whole protein fraction. LC-HRMS/MS investigation led to the identification of other three peptides

Yellow mealworm (Tenebrio molitor L.) represents a sustainable source of proteins and fatty acids for feed and food. Industrial production of mealworms necessitates optimized processing techniques, where drying as the first postharvest procedure is of utmost importance for the quality of the final product. This study examines the nutritional quality of mealworm larvae processed by rack oven drying, vacuum drying or freeze drying, respectively. Proximate composition and fatty acid profile were comparable between the dried larvae. In contrast, larvae color impressions and volatile compound profi

This study presents the fabrication of a sustainable flexible humidity sensor utilizing chitosan derived from mealworm biomass as the primary sensing material. The chitosan-based humidity sensor was fabricated by casting chitosan and polyvinyl alcohol (PVA) films with interdigitated copper electrodes, forming a laminate composite suitable for real-time, resistive-type humidity detection. Comprehensive characterization of the chitosan film was performed using Fourier-transform infrared (FTIR) spectroscopy, contact angle measurements, and tensile testing, which confirmed its chemical structure,

PURPOSE: There is considerable concern about potential effects associated with exposure to magnetic fields on organisms. Therefore, duration of pupa-adult development and motor behaviour of adults were analyzed in Tenebrio obscursus and T. molitor after exposure to static magnetic field (50 mT).
MATERIAL AND METHODS: The experimental groups were: Control (kept 5 m from the magnets), groups which pupae and adults were placed closer to the North pole, or closer to the South pole of magnetic dipole. The pupae were exposed to the magnetic field until the moment of adult eclosion. The pupa-adult d

Previous laboratory studies have indicated that tenebrionid beetles infected with Hymenolepis diminuta display behavioural alterations. These are assumed to increase the likelihood of this intermediate host being predated by the Rattus sp. definitive host, and hence provide support for the Manipulation Hypothesis. We tested this hypothesis by both assessing beetle behaviour and predation rates in semi-naturalistic environments. Behavioural assays showed that infected beetles were more often exposed (not concealed under boxes) than uninfected beetles. However, there were no differences in preda

Edible insects are being investigated as sustainable alternative protein sources; however, their use as food ingredients raises allergenicity concerns due to immunoglobulin (IgE) cross-reactivity with crustacean allergens. This study evaluated a papain-based enzymatic hydrolysis approach to obtain yellow mealworm (Tenebrio molitor) flour hydrolysates with reduced IgE reactivity and somatic angiotensin-converting enzyme (sACE) inhibitory potential. Hydrolysis markedly reduced or eliminated IgE-binding capacity in sera from crustacean-allergic individuals, indicating a substantial decrease in al

Edible insects are a nutritionally attractive food product, also due to their high fat content and high levels of unsaturated fatty acids. In this work, the effect of pulsed electric field (PEF) pretreatment and infrared-convective (IR-CD) drying on the oil properties extracted from yellow mealworm (Tenebrio molitor L.) larvae was investigated. The oil from raw and dried insects was extracted via the Soxhlet method for yield determination and via the Folch method for quality analysis. The acid value (AV) and peroxide value (PV) via the titration method, fatty acid composition and its distribut

BACKGROUND: The edible insect industry, driven by the nutritional and environmental benefits of mealworms, faces increasing challenges from pathogens affecting Tenebrio molitor farming systems. Hemocyte-based health assessments could provide valuable diagnostic insights, yet standardized hemolymph processing protocols and hematological reference intervals (RIs) are currently lacking for this species.
OBJECTIVES: This study aimed to develop practical protocols for hemolymph sampling, refine hemocyte classification, and establish hematological RIs for both larval and adult stages of T. molitor.

The dimeric cytokine ligand Spätzle (Spz) is responsible for Toll pathway activation and antimicrobial peptide (AMP) production upon pathogen challenge in Tenebrio molitor. Here, we indicated that TmSpz5 has a functional role in response to bacterial infections. We showed that the highest expression of TmSpz5 is induced by Candida albicans. However, TmSpz5 knockdown reduced larval survival against Escherichia coli and Staphylococcus aureus. To evaluate the molecular mechanism underlying the observed survival differences, the role of TmSpz5 in AMP production was examined by RNA interference and

Black Soldier Fly Larvae (BSFL, Hermetia illucens), yellow mealworms (MW, Tenebrio molitor) and house crickets (HC, Acheta domesticus) are the most common production systems insects reared as an alternative protein source for human food or in livestock feeds. However, the nutrient composition, particularly of larval insects (BSFL and MW), varies significantly. This review will focus on the protein nutritional quality of these species, as well as describing how body composition of MW can be manipulated. These three insect species contain relatively high concentrations of protein (34-72%) and ha
