Deciphering flavor profile and metabolic pathways in black chokeberry co-fermented by Lactiplantibacillus plantarum and Hansenula sp. via integrated volatilomics and metabolomics.

Aronia melanocarpa, renowned as the "king of anthocyanins", exhibits pronounced acidity, astringency, and amygdalin-derived bitterness in its berries, severely restricting its food applications. Currently, fermentation of A. melanocarpa is limited by a lack of suitable lactic acid bacteria (LABs), resulting in insufficient aroma and not delicious taste in the fermentation products. To address these, we isolated 139 LABs from fermented vegetables and screened three optimal strains of L. plantarum through acclimatization in Aronia juice and sensory evaluation. Using HS-SPME-GC-MS and GC-IMS, 143

Fermentation of mulberry leaf extract by Aspergillus chevalieri CTCF-AC-1 for flavor improvement and enhanced hypoglycemic activity.

Mulberry leaf extract (MLE) is rich in bioactive compounds with potent hypoglycemic activity, but is constrained by its sensory drawbacks. In this study, Aspergillus chevalieri CTCF-AC-1, isolated from Fu brick tea, was employed to ferment MLE for improving both its flavor profile and functional efficacy. Fermentation dynamically remodeled MLE composition: total phenolic acids decreased from 859.8 to 566.5 mg/mL, while total amino acid content increased dramatically from 322.13 mg/mL to 570.31 mg/mL with methionine and cysteine increased by 111.5-fold and 5.4-fold, respectively. Mechanisms, Functions, Research Methods and Applications of Starch-Polyphenol Complexes in the Synergistic Regulation of Physiological Parameters.

Metabolic illnesses such as obesity, type 2 diabetes and hyperuricemia are becoming more common, driving intensified research into nutritional interventions through targeted dietary modifications as a primary preventive strategy. The apparent fluctuation in blood glucose value is modulated by the digestive behavior of starch. Moreover, polyphenols-historically considered to be anti-nutrients due to their inhibition of digestive enzymes and sometimes astringent taste-can be used to significantly improve the functional properties of starch. This can be achieved primarily through α-amylase inhibi

1,5-Dicaffeoylquinic acid from Pseudognaphalium affine ameliorates dry eye disease via suppression of inflammation and protection of the ocular surface.

PURPOSE: Pseudognaphalium affine (P. affine), a medicinal plant, has long been used to treat various diseases due to its astringent and vulnerary effects. These therapeutic benefits are largely attributed to high contents of phytochemicals, such as flavonoids and polyphenols, that have anti-inflammatory and tissue-protective activities. Herein, we investigated the potential of dicaffeoylquinic acids (diCQAs), polyphenols from P. affine, as a novel treatment for dry eye disease (DED). METHODS: We isolated 1,5-, 3,4-, 3,5- and 4,5-diCQAs from the P. affine methanol extract, and tested the effec
