Assessing the Public Health Implications of Virulent and Antibiotic-Resistant Bacteria in Côte d'Ivoire's Ready-to-Eat Salads.

In Côte d'Ivoire, the popularity of ready-to-eat salads has grown substantially. Despite their convenience, these products often face criticism for their microbiological safety. This research was conducted to assess the virulence and antibiotic resistance profiles of Escherichia coli (E. coli), Salmonella spp., and Staphylococcus aureus (S. aureus) isolated from salads available in hypermarkets across Abidjan. The study utilized a combination of microbiological and molecular biology techniques. Results indicated that E. coli isolates harbored virulence genes such as stx2 (50%) and ST (62.50%),

The microbiological quality of ready-to-eat salads in Turkey: a focus on Salmonella spp. and Listeria monocytogenes.

The microbiological safety of ready-to-eat (RTE) foods is of special concern as they are not exposed to further processing before consumption. In the present study, Listeria monocytogenes and Salmonella spp. were isolated from 15(6%) and 21(8%) samples respectively out of 261 RTE foods commercialized in Turkey. Escherichia coli was present in 10(4%) samples analyzed. Psychrotrophic aerobic populations >6logCFU/g were found in 36 (14%) of the samples, while total coliforms were detected in 155 (59%) of samples analyzed. All of the Salmonella spp. and L. monocytogenes isolates tested, exhibited

Microbiological quality of ready-to-eat salads: an underestimated vehicle of bacteria and clinically relevant antibiotic resistance genes.

The increase demand for fresh vegetables is causing an expansion of the market for minimally processed vegetables along with new recognized food safety problems. To gain further insight on this topic we analyzed the microbiological quality of Portuguese ready-to-eat salads (RTS) and their role in the spread of bacteria carrying acquired antibiotic resistance genes, food products scarcely considered in surveillance studies. A total of 50 RTS (7 brands; split or mixed leaves, carrot, corn) were collected in 5 national supermarket chains in Porto region (2010). They were tested for aerobic mesoph

Addressing Vitamin B12 deficiency through aeroponic fortification of a salad crop (Pisum sativum).

Plants do not produce Vitamin B12, creating a nutrient insufficiency risk for those who do not consume animal-derived foods without supplementation. Furthermore, various diseases cause Vitamin B12 deficiency. Here, we establish an approach for B12 dietary supplementation that harnesses a horticultural technology to deliver the recommended daily allowance (RDA) of B12 within a single portion of a salad crop (pea shoots). We demonstrate the effectiveness of the approach in a commercial and scalable growing environment, conducted an economic evaluation, find that it has versatility for growers, d

Evaluation of Porcine Gastric Mucin-Based Method for Extraction of Noroviruses from Seaweed Salad.

Human noroviruses (HuNov) are the major cause of foodborne illness globally. Several HuNoV outbreaks have been linked to contaminated ready-to-eat seaweed products. Standard protocols such as the ISO 15216 show limited efficiency in extracting foodborne viruses from seaweed products. Therefore, we evaluated the efficiency of an extraction protocol based on porcine gastric mucin conjugated magnetic beads (PGM-MBs) to recover HuNoVs from Wakame seaweed salad. Compared to other HuNoV extraction methods, the PGM-MB method was more efficient. We then aimed to further improve this protocol by modify

Ready-to-eat salads and berry fruits purchased in Italy contaminated by Cryptosporidium spp., Giardia duodenalis, and Entamoeba histolytica.

Ready-to-eat (RTE) salads and berries are increasingly consumed in industrialized countries. These products can be contaminated by pathogenic parasites that have been responsible for foodborne outbreaks worldwide. In Italy, there are few data on contamination of RTE salads and berries with parasite transmission stages and this requires more-in-depth investigations. To estimate the prevalence of contamination with Cryptosporidium spp. and Giardia duodenalis in these fresh products, a total of 324 packages of local RTE mixed salads - belonging to three different industrial brands - and 324 packa

Prevalence and concentration of bacterial pathogens in raw produce and minimally processed packaged salads produced in and for the Netherlands.

Recent outbreaks with vegetable or fruits as vehicles have raised interest in the characterization of the public health risk due to microbial contamination of these commodities. Because qualitative and quantitative data regarding prevalence and concentration of various microbes are lacking, we conducted a survey to estimate the prevalence and contamination level of raw produce and the resulting minimally processed packaged salads as sold in The Netherlands. A dedicated sampling plan accounted for the amount of processed produce in relation to the amount of products, laboratory capacity, and se

Prevention of human fascioliasis: a study on the role of acids detergents and potassium permenganate in clearing salads from metacercariae.

Prevention of human fascioliasis could depend on clearing of the leafy salads from the metacercariae. The present work evaluated the role of some chemicals in detaching and killing this infective stage. It was observed that washing in running water for 10 minutes detached only 50% of the metacercariae. Citric acid in the concentration of (10 ml/L) commercial vinegar (120 ml/L), liquid soap (12 ml/L) and KMnO4 (24 mg/L) detached all metacercariae after 10 minutes exposure. The use of vinegar and KMnO4 is recommended: the first is lethal to other parasites in the vegetables, the second destroyed

Physicochemical Stability and Sensory Properties of Salad Dressing Formulated With Fish Oil-in-Water Pickering Emulsions.

Pickering emulsions stabilized with food-grade particles have gained attention for food applications to deliver bioactive compounds. Fish oil, a rich source of omega-3 PUFAs, offers numerous health benefits, but it is highly prone to lipid oxidation. While fish oil Pickering emulsions have shown potential in enhancing oxidative stability, their application in real food systems has not been explored extensively. This study investigated the physicochemical stability and sensory properties of salad dressings fortified with fish oil Pickering emulsions in comparison with other dressings fortified

Assessment of the presence of Acinetobacter spp. resistant to β-lactams in commercial ready-to-eat salad samples.

Acinetobacter baumannii is a well-known nosocomial infection causing agent. However, other Acinetobacter spp. have also been implicated in cases of human infection. Additionally, these bacteria are known for the development of antibiotic resistance thus making the treatment of the infections they cause, challenging. Due to their relevance in clinical setups less attention has been paid to their presence in foods, and its relation with infection/dissemination routes. In the current study commercial Ready-To-Eat (RTE) salads were analyzed seeking for antibiotic resistant Acinetobacter spp. A pre

Growth potential of Listeria monocytogenes in twelve different types of RTE salads: Impact of food matrix, storage temperature and storage time.

Listeriosis is a food borne disease associated with high hospitalization and fatality rates; in 2014, EU member states reported 2194 cases with 98.9% hospitalization rates and 210 fatalities. Proper risk analysis and the development of effective food safety strategies critically depend on the knowledge of the growth characteristics of L. monocytogenes on the product in question. Ready-to-eat (RTE) salads present a challenge in this context due to the absence of a heat treatment step before consumption. This study provides challenge-test based data of the growth characteristics of L. monocytoge
