Human Pathogenic Microorganisms in Fresh Produce Production: Lessons Learned When Plant Science Meets Food Safety.

To enhance control of human pathogenic microorganisms in plant production systems, an EU COST Action (HUPLANTcontrol CA16110) was initiated, bringing together microbiologists in food, environmental, and plant microbial ecology. This article summarizes the outcomes of multiple workshops and the four main lessons learned: (i) many terminologies need further explanation to facilitate multidisciplinary communication on the behavior of human pathogens from preharvest plant production to postharvest food storage, (ii) the complexity of bacterial taxonomy pushes microbial hazard identification for gr

Environmental monitoring for Listeria species in controlled atmosphere apple storage facilities.

Studies have revealed the presence of Listeria species on food and non-food contact surfaces in apple packing facilities. However, the occurrence of Listeria in controlled atmosphere (CA) storage facilities has not been well characterized. This two-year longitudinal study assessed the prevalence, diversity, and distribution of Listeria spp. within nine CA storage rooms at three different facilities (A, B, and C), focusing on Zone 3 non food contact surfaces. A total of 304 samples were collected, and 5.9% (18) were positive for Listeria spp., predominantly on floors below condenser units. Of 1

Innovations in microbial physical mutagenesis for food fermentation: An overview from traditional to emerging technologies.

Microbial strains serve as an important factor affecting fermentation efficiency and product quality. To obtain superior strains, mutation breeding is a classic strategy. Compared to chemical mutagenesis, physical mutagenesis directly induces genomic changes, providing notable advantages such as the elimination of chemical residues and environmental sustainability, hence rendering it a favored method for enhancing food-grade microorganisms. Conventional physical mutagenesis mostly depends on UV, rays, high pressure, or space radiation. As physical technologies advance, emerging methods such as

Research Advances in Modern Immunoassay Technologies and Novel Alternative Biotechnologies for Rapid Detection of Foodborne Pathogens and Chemical Contaminants.

The development and application of novel rapid detection technologies are critical for advancing food safety regulation. In recent years, immunology-based methods have played a pivotal role in food safety supervision due to their speed, operational simplicity, and cost-effectiveness. However, conventional colloidal gold techniques exhibit limited sensitivity for trace analytes (e.g., early-stage microbial contamination) and are primarily qualitative, thus failing to meet the quantitative detection requirements for pesticides, veterinary drugs, and food additives, which restricts their practica

Ethnic foods of Northeast India: insight into the light of food safety.

BACKGROUND: Traditional and fermented foods are widely consumed by the ethnic population of Northeast India. These foods are not only very nutritious, easily available, and reasonably priced, but also boost immunity and protect from various seasonal infections and have been reported through several investigations. However, pathogens transmitted by these foods have never been reported. The process of preparation and preservation of fermented traditional foods involves various steps that can prompt contamination risks. Using the Indian Council of Medical Research (ICMR)-FoodNet surveillance data

Supercritical carbon dioxide inactivation technology for food product preservation.

Supercritical carbon dioxide (scCO2) is increasingly recognized as a non-thermal food preservation technology capable of ensuring microbial safety while preserving nutritional and sensory quality. Operating at moderate temperatures (<50 °C), scCO2 offers an environmentally friendly alternative to thermal pasteurization, leveraging its unique physicochemical properties to penetrate cells, induce acidification, and disrupt microbial structures. This review provides a comprehensive overview of the antimicrobial mechanisms of scCO2, including effects on membranes, enzymes, and intracellular pH, as

Development and application of hydrogels in pathogenic bacteria detection in foods.

Hydrogels are 3D networks of water-swollen hydrophilic polymers. It possesses unique properties (e.g., carrying biorecognition elements and creating a micro-environment) that make it highly suitable for bacteria detection (e.g., expedited and effective bacteria detection) and mitigation of bacterial contamination in specific environments (e.g., food systems). This study first introduces the materials used to create hydrogels for bacteria detection and the mechanisms for detection. We also summarize different hydrogel-based detection methods that rely on external stimuli and biorecognition elem

Evaluation of murine norovirus persistence in environments relevant to food production and processing.

Human norovirus (NoV) causes outbreaks of acute gastroenteritis associated with many ready-to-eat foods, including fresh produce. Effective inactivation procedures must consider virus survival under conditions of produce production and processing. This study aimed to investigate the persistence of NoV in a variety of environments, using murine NoV (MNV) as a surrogate for NoV. MNV was incubated for up to 42 days at room temperature on stainless steel disks, on lettuce, on soil, and in potable water and titers determined by plaque assay. A 1-log reduction of MNV infectivity was observed after 2

Practice and Progress: Updates on Outbreaks, Advances in Research, and Processing Technologies for Low-moisture Food Safety.

Large, renowned outbreaks associated with low-moisture foods (LMFs) bring to light some of the potential, inherent risks that accompany foods with long shelf lives if pathogen contamination occurs. Subsequently, in 2013, Beuchat et al. (2013) noted the increased concern regarding these foods, specifically noting examples of persistence and resistance of pathogens in low-water activity foods (LWAFs), prevalence of pathogens in LWAF processing environments, and sources of and preventive measures for contamination of LWAFs. For the last decade, the body of knowledge related to LMF safety has expo

A CURE for Microbiology Experiment: Isolation and Characterization of Antimicrobial-Producing Lactic Acid Bacteria From Fermented Sichuan Pickle Against Pathogenic Bacteria.

Traditional microbiology experimental teaching methodology, often based on rigid "cookbook" experiment plans, fails to meet the growing need to cultivate skilled and innovative individuals. Course-based undergraduate research experiences (CUREs) provide a solution by integrating research-based learning into the curriculum, offering an opportunity to improve the "hard" and "soft" skills for science, technology, engineering, and mathematics (STEM) students. In this study, a CURE was incorporated into the microbiology experiment curriculum focusing on the isolation and characterization of antimic

Training in quantitative microbial risk assessment of Listeria monocytogenes in processing chains: Quantification of biofilm-cells transfer integrating virulence and persistence factors.

Food safety is a global challenge, with nearly 1 in 10 people worldwide falling ill each year from consuming contaminated food. The risk is particularly high in ready-to-eat (RTE) products, which are consumed without further cooking to eliminate harmful microorganisms. To address this, the University of Cordoba and the University of Bologna, in the framework of the EU-FORA programme, developed a training programme focused on quantitative microbial risk assessment (QMRA) for Listeria monocytogenes in RTE food processing chains, a significant public health concern due to its association with sev
