Enhancing structural and functional properties of commercially available pea protein isolate for plant-based meat analogues using combined pH-Shift, high-intensity ultrasound, and heat treatments.

Diets based on pea protein have gained international recognition as a good substitute for meat or other main sources of protein. However, problems like gelling and emulsifying qualities make it difficult to use pea protein. To successfully overcome significant obstacles related to the use of pea protein in many industrial sectors, particularly meat, this study offers a combination of methods used to produce commercially accessible Pea Protein Isolate (PPI). High-intensity ultrasound (HIUS) at three magnitudes (2, 4, and 8 W/mL), heat at 60 °C, and pH at 10.0 were all integrated within the set.

Linking Structural and Mechanical Properties to Multimodal Sensory Perception of Fibrousness in Plant-Based Meat Analogs.

Texture, particularly fibrousness, is a critical driver of consumer acceptance of plant-based whole-cut meat analogues (PBMAs), as it underpins the characteristic bite and tearing behavior associated with meat. Despite advances in producing and instrumentally characterizing fibrous structures in PBMAs, it remains unclear how macrostructural fiber organization and mechanical anisotropy translate into the human perception of fibrousness during eating, and how visual cues influence this perception. To address this, five PBMA samples with systematically varied fibrous structures were evaluated usi

Partially substituting alfalfa hay with hemp forage in the diet of goats improved feed efficiency, ruminal fermentation pattern and microbial profiles.

The use of hemp as a forage source in livestock diets has been less studied because bioactive residues in animal tissues may pose a risk to consumers. This study investigated the effects of partial substitution of alfalfa hay (AH) with hemp forage (HF) in growing goat diets on growth performance, carcass traits, ruminal fermentation characteristics, rumen microbial communities, blood biochemistry, and antioxidant indices. Forty Xiangdong black goats with body weight (BW) 7.82 ± 0.57 kg (mean ± SD) were grouped by BW and randomly assigned into one of the four treatment diets (n = 10/treatment)

Nutritional and health impacts of alternative animal source foods: a scoping review.

Despite rapid growth in the availability and consumption of alternative animal source foods (Alt-ASFs), evidence remains fragmented and uneven across food types, outcomes, and settings, with few studies directly comparing their nutritional quality and health impacts with those of conventional animal products in equivalent substitutions-creating uncertainty for dietary guidance and policy. This scoping review addresses these gaps by systematically evaluating 247 studies comparing the nutritional quality and health impacts of Alt-ASFs with those of conventional animal products. Alt-ASFs showed m

Evaluation of amidated pectin as fat substitutes for minced chicken breast: Physicochemical properties and edible quality.

An investigation was conducted to assess the gelation characteristics of amino acid amidated pectin and its subsequent influence on the quality of minced chicken breast (MCB) when employed as a lipid substitute. Through experimentation, it was evidenced that amidated pectin, such as glycine amidated pectin (AP@Gly), glutamic amidated pectin (AP@Glu), and lysine amidated pectin (AP@Lys), demonstrated superior viscosity and gelation capacity in comparison to their native pectin (PE) counterpart. In contrast to PE, amidated pectin samples exhibited the potential to form high-strength hydrogels un

Correlating Molecular and Textural Properties of Raw Soy-Based and Beef Burgers Using TD-NMR and TPA.

The accelerating demand for plant-based meat alternatives necessitates advanced analytical approaches capable of characterizing and optimizing texture-a key determinant of consumer acceptance. This study develops an integrated framework combining time-domain nuclear magnetic resonance (TD-NMR) and texture profile analysis (TPA) to elucidate the molecular, structural, and mechanical differences between soy-based plant-based meat analogue (PBMA) burgers and conventional Black Angus beef burgers. Gravimetric and centrifugal assays showed that Angus beef possessed higher total water content and a

Multi-omics analysis of flavor and quality modulation in dry-fermented sausages with textured pea protein.

As textured pea protein (TPP) emerges as a sustainable strategy for plant-based meat analogues, its influence on flavor precursors and the resulting volatile profile and sensory attributes remains underexplored. This study investigated physicochemical properties, lipid composition, volatiles, and sensory characteristics of dry-fermented sausages formulated with varying levels of TPP substitution. TPP substitution yielded significant decrease in pH, water activity, glossiness and yellowness intensity, and increased weight loss. A 25 % TPP substitution substantially diminished free fatty acids c

Trichinellosis: a possible link between human infection and the traditional earth-oven or 'mumu' method of cooking in Morehead District, Western Province, Papua New Guinea.

OBJECTIVE: To investigate if the traditional method of cooking pig meat in an earth-oven or mumu, as practiced by people in Morehead District, Western Province, Papua New Guinea (PNG), could be a source of infection with Trichinella papuae and of the disease trichinellosis. PROCEDURE: As the locality lacks suitable river stones normally used in a mumu in PNG, people use various substitute materials, such as pieces of termite mounds, balls of dried clay and small rough stones. Samples of these were tested and compared with conventional mumu stones in their capacity to retain heat. RESULTS: No

Anaphylaxis to succinylated gelatin in a patient with a meat allergy: galactose-α(1, 3)-galactose (α-gal) as antigenic determinant.

Specific immunoglobulin E (sIgE) antibodies towards the galactose-α(1,3)-galactose (α-gal) moieties may elicit life-threatening and fatal anaphylactic reactions. Patients sensitized to α-gal moieties from mammalian meat may also react towards mammalian gelatins and gelatin-containing drugs such as bovine gelatin-based colloid plasma substitute. The case of a 56 year old woman with a meat allergy who suffered anaphylaxis to succinylated gelatin is reported.

Fermented Rice Bran Enhances Rabbit Meat Quality and Nutritional Value via Metabolic Reprogramming and Enriched Nutrient Profiles.

BACKGROUND: The valorization of sustainable feed ingredients such fermented de-oiled rice bran meal (FDRBM) is crucial; however, the molecular mechanisms driving its benefits remain unclear. This study addresses this gap by investigating FDRBM as a dietary substitute for maize in rabbits to determine its effects on meat quality and underlying gut-liver axis communication. METHODS: In an eight-week trial, New Zealand White rabbits were assigned to a control diet or the basal diet with a 20% substitution of either unfermented de-oiled rice bran (UFDRBM) or FDRBM. Post-trial, the researchers ana

Livelihood implications of dietary shifts to animal-source food alternatives: a scoping review.

Although dietary shifts from animal-source foods (ASFs) to alternatives (Alt-ASFs) could considerably affect livelihoods in food supply chains, the effects will likely vary by the type of Alt-ASFs. In this Review we identified 45 studies, including descriptive analysis of the present state of the sector and modelling studies of future trends. Key findings indicate that cell-based foods would likely reduce overall employment opportunities, while favouring high-skilled workers in high-income countries, although job quality might improve. Shifts towards plant-based foods might have small net empl

Conventional and emerging pre-treatments for plant protein fermentation: prospects for next-generation plant-based meat analogues.

The development of plant-based meat analogues (PBMAs) that accurately replicate meat texture and flavor remains limited by fundamental structural differences between plant and animal proteins. Most notably, the globular conformation of plant proteins contrasts with the fibrous anisotropy of animal muscle, thereby limiting viscoelasticity. Additional challenges include beany off-notes arising from lipid oxidation products such as hexanal and anti-nutritional factors (ANFs) that reduce bioavailability. Fermentation is a traditional technology increasingly explored as a strategy to address these

Microbial proteolysis and glycolysis coordinate gel structure, water mobility and antioxidant potential in cooked fermented meat-pea protein hybrid sausages.

This study investigated the effects of partial meat replacement (0%, 25%, and 50%) with plant-derived components (pea protein isolate and pea flour) on proteolysis, protein network structure, and water mobility in reduced-salt (0.3 M NaCl) cooked fermented hybrid sausages. Fermentation with a mixed culture of Lactobacillus sakei and Staphylococcus carnosus resulted in pH reduction to 4.5-4.6 and titratable acidity increases to 2.04-2.33%, establishing an acidic matrix governing hybrid protein reorganization. Fermented sausages showed a reduced extractable protein content (P < 0.05), increased

Fertilized egg white as a sustainable growth supplement enhances muscle cell proliferation by driving cell cycle progression in serum-restricted culture.

The resource efficiency of cell-cultured meat, particularly reduced land use, is often positioned as a key advantage over conventional meat production. However, this benefit is offset by the heavy reliance on costly fetal bovine serum (FBS). In this study, a C2C12 myoblast model was employed to evaluate SPF-grade egg components as potential substitutes for FBS in muscle cell culture. An initial CCK-8 screening was conducted to assess unfertilized and fertilized egg fractions (white, yolk, and whole egg). Under 2% FBS conditions, the addition of 0.1 mg/mL fertilized egg white (FW) significantly
