Food-derived chlorogenic acid prevents aortic aneurysm and dissection by nutritional restore branched-chain amino acid dyshomeostasis.

Aortic aneurysm and dissection (AAD) is a life-threatening cardiovascular disorder with no currently available targeted therapies, underscoring the critical need for effective preventive strategies. Through integrative analysis of the UK Biobank and FooDB databases, we identified chlorogenic acid (CGA)--a natural polyphenol abundant in coffee and tea--as a potential protective compound against AAD. Using two mouse models of AAD: β-aminopropionitrile (BAPN) plus angiotensin II (Ang II) in 4-week-old wild-type mice and erythropoietin (EPO)-induced AAD in 8-week-old wild-type mice, we demonstrate

From insects to mammals! Tissue accumulation and transgenerational transfer of micro/nano-plastics through the food chain.

Despite extensive global attention on microplastic pollution, our understanding of the pathways underlying microplastic translocation, accumulation, and their potential impacts on ecosystems and human health through the food chain remains incomplete. To investigate the translocation and accumulation of microplastics from insects to mammals, we developed a novel oral exposure model that Tenebrio molitor larvae (yellow mealworms, invertebrate terrestrial insects) were firstly orally exposed to both micro and nanometer-sized plastics (M/NPs), and subsequently fed as a food source to mice (mammals

Food withdrawal lowers energy expenditure and induces inactivity in long-chain fatty acid oxidation-deficient mouse models.

Very long-chain acyl-CoA dehydrogenase (VLCAD) deficiency is an inherited disorder of mitochondrial long-chain fatty acid β-oxidation (FAO). Patients with VLCAD deficiency may present with hypoglycemia, hepatomegaly, cardiomyopathy, and myopathy. Although several mouse models have been developed to aid in the study of the pathogenesis of long-chain FAO defects, the muscular phenotype is underexposed. To address the muscular phenotype, we used a newly developed mouse model on a mixed genetic background with a more severe defect in FAO (LCAD(-/-); VLCAD(+/-)) in addition to a validated mouse mod

Meat Juice Serology and Improved Food Chain Information as Control Tools for Pork-Related Public Health Hazards.

The seroprevalence of Salmonella spp., pathogenic Yersinia spp., Toxoplasma gondii and Trichinella spp. was studied in 1353 finishing pigs from 259 farms that were allocated according to farm types: large fattening farms (≥ 1000 pig places), small fattening farms (< 1000 pig places) and farrow-to-finish farms. The antibodies were analysed with commercial ELISA kits in meat juice samples that were collected at Finnish slaughterhouses. Salmonella antibodies were rare (3% of pigs, 14% of farms) when the cut-off optical density (OD) value 0.2 was used. Antibodies to pathogenic Yersinia spp. and T.

Protocol for assessing wildlife exposure and risk from pesticides in tropical food chains with limited biomonitoring data.

Pesticides threaten wildlife through terrestrial food chains, but data on wildlife exposure are scarce. Here, we present a protocol to assess pesticide health risks in wildlife using an integrated physiologically-based kinetic approach. We describe steps for data compilation, regional contamination scoring, and three-tiered exposure estimation using tissue, plant, and soil. We then detail procedures for ecological risk calculation, spatial mapping, and uncertainty analysis. This protocol enables traceable, quantitative, spatially resolved risk assessments for herbivores, carnivores, and omnivo

Trophic transfer of sulfonamide antibiotics in aquatic food chains: A comprehensive review with a focus on environmental health risks.

Antibiotics, which have been identified as emerged pollutants, are creating an increase in environmental concerns, with sulfonamide antibiotics (SAs) being among the most commonly discovered antibiotics. Due to their widespread usage and inadequate sewage treatment, SAs are frequently released into the aquatic environment. The introduction of SAs into aquatic environments can kill or inhibit the growth or metabolic activity of microorganisms, thereby affecting biological communities and ecological functions and disrupting the equilibrium of aquatic ecosystems. The transmission of SAs to human

A Review on Recent Sensing Methods for Determining Formaldehyde in Agri-Food Chain: A Comparison with the Conventional Analytical Approaches.

Formaldehyde, the simplest molecule of the aldehyde group, is a gaseous compound at room temperature and pressure, is colorless, and has a strong, pungent odor. It is soluble in water, ethanol, and diethyl ether and is used in solution or polymerized form. Its maximum daily dosage established by the EPA is 0.2 μg g-1 of body weight whereas that established by the WHO is between 1.5 and 14 mg g-1: it is in category 1A of carcinogens by IARC. From an analytical point of view, formaldehyde is traditionally analyzed by HPLC with UV-Vis detection. Nowadays, the need to analyze this compound quickly

Quantitative microbiological risk assessment of traditional food of animal origin produced in short supply chains in Poland.

Polish raw-milk cheeses produced in short supply chains may pose a threat to consumer safety due to pathogen presence. Listeria monocytogenes is a bacterium of great importance for the food safety of refrigerated RTE foods due to its ability to grow at refrigeration temperatures. During the EU-FORA fellowship, a stochastic risk assessment was designed and executed to estimate the risk for consumers from L. monocytogenes in these products. The aim was to develop a probabilistic QMRA model that would incorporate the variability and uncertainty of the model's inputs such as prevalence, initial co

[Molecular mechanisms and control strategies for the potential transmission of bacterial antibiotic resistance along the food production chain].

The transmission potential of antimicrobial resistance (AMR) across the food chain constitutes a severe threat to global public health. Antibiotic overuse and misuse in intensive livestock farming drives the enrichment of antimicrobial resistance genes (ARGs) in animal-derived microbial communities, thereby enabling the formation of ARG dissemination networks that cover the entire food system from production to consumption. Molecular epidemiological evidence has validated the food chain as a pivotal bridge for the cross-species transmission of ARGs. Resistant bacteria and mobile genetic elemen

The Health of Those Who Feed Us: An Assessment of Health Inequities Along the United States Food Chain.

While the health of all depends on the food chain, few studies have focused systematically on the health of food chain workers themselves (production, manufacturing, wholesale, retail, and commercial and institutional services). In this study we used 2018 and 2019 data from the Behavioral Risk Factor Surveillance System (BRFSS) to examine health-related metrics of food chain workers, combined and by industry sector, compared to non-food chain workers, among 32 U.S. states. Logistic regression indicated U.S. food chain workers had higher prevalences of barriers to health care access, smoking, n

A hidden demethylation pathway removes mercury from rice plants and mitigates mercury flux to food chains.

Dietary exposure to methylmercury (MeHg) causes irreversible damage to human cognition and is mitigated by photolysis and microbial demethylation of MeHg. Rice (Oryza sativa L.) has been identified as a major dietary source of MeHg. However, it remains unknown what drives the process within plants for MeHg to make its way from soils to rice and the subsequent human dietary exposure to Hg. Here we report a hidden pathway of MeHg demethylation independent of light and microorganisms in rice plants. This natural pathway is driven by reactive oxygen species generated in vivo, rapidly transforming

Comparing alpha-cypermethrin induced dose/gender-dependent responses of lizards in hepatotoxicity and nephrotoxicity in a food chain.

Pesticides are proposed as one reason for the worldwide decline in the reptile. Effects of pesticides on food intake and organ toxicity could affect wildlife populations dynamics. To explore the hepatotoxicity of alpha-cypermethrin (ACP) in reptiles, we designed a tri-trophic food chain with three concentrations (0, 2, and 20 mg/kgwet weight). Although the enzymes changes were similar between male and female lizards, the significant variations in anti-oxidative enzymes' activities, lactic dehydrogenase activities and acetylcholine esterase activities in liver and kidney suggesting that oxidati

Food handlers as a link in the chain of transmission of Giardia duodenalis and other protozoa in public schools in southern Brazil.

BACKGROUND: Food handlers (FHs) may facilitate transmission and dissemination of pathogens. The importance of FHs as a link in the epidemiological chain of transmission of Giardia duodenalis and other intestinal protozoa was assessed. METHODS: Fecal and subungual material from 27 FHs were analyzed using parasitological methods. G. duodenalis was identified by direct immunofluorescence and genotyped by PCR-RFLP for the bg and gdh genes, and gdh was sequenced. RESULTS: At least one protozoan was detected in 30% (8/27) of the FHs and G. duodenalis (19%; 5/27) was the most common species. The AI

Quantitative polymerase chain reaction-based method for the rapid detection and quantification of Listeria monocytogenes from food products.

Listeria monocytogenes (LM) is found in various environmental sources, including animal intestinal tracts, soil, and sewage. LM can contaminate various food products, including meat, seafood, cheese, fruits, and vegetables. Individuals with underlying medical conditions, the elderly, pregnant women, and infants, may develop meningitis and sepsis upon consuming LM-contaminated food. A rapid and standardized quantification method for evaluating initial contamination levels of LM in food remains to be established. This study aimed to develop a rapid quantification method to monitor LM contaminati
