Sign- vs. goal-tracking is associated with greater adiposity and altered functional connectivity in response to a naturalistic food paradigm.

Our modern food environment is full of highly palatable, ultra-processed foods that influence our eating behaviors. The reinforcement learning framework posits that some individuals readily assign motivational value to environmental cues (e.g., food ads) that predict reward, biasing their attention and making them more susceptible to seek that reward. These individuals are characterized as sign-trackers and differ from goal-trackers who do not tend to assign any motivational value to those reward-predicting environmental cues. Here, we tested whether this well-characterized phenotype in animal

The influence of carbon dioxide on fermentation products, microbial community, and functional gene in food waste fermentation with uncontrol pH.

Food waste is a major problem faced by human beings. Acidogenic fermentation is an effective and feasible technology for resource recovery from food waste. The mixture of volatile fatty acids (VFAs) hinders the utilization of fermentation products. In this study, we constructed fermentation reactors for food waste treatment. The operation period was separated to three stages: Stage 1 (from day 1-102), Stage 2 (from day 103-208), and Stage 3 (from day 209-304). CO2 was sparged to the reactors to promote the acetate enrichment at Stage 3. Bioinformatics analysis were performed to analyze the mic

Functional connectivity underlying hedonic response to food in female adolescents with atypical AN: the role of somatosensory and salience networks.

Atypical anorexia nervosa (AN) usually occurs during adolescence. Patients are often in the normal-weight range at diagnosis; however, they often present with signs of medical complications and severe restraint over eating, body dissatisfaction, and low self-esteem. We investigated functional circuitry underlying the hedonic response in 28 female adolescent patients diagnosed with atypical AN and 33 healthy controls. Participants were shown images of food with high (HC) or low (LC) caloric content in alternating blocks during functional MRI. The HC > LC contrast was calculated. Based on the pr

Alterations of food antigen-specific serum immunoglobulins G and E antibodies in patients with irritable bowel syndrome and functional dyspepsia.

BACKGROUND: Post-prandial worsening of symptoms as well as adverse reactions to one or more foods are common in the patients with functional gastrointestinal diseases, such as irritable bowel syndrome (IBS) and functional dyspepsia (FD). However, the role played by true food allergy in the pathogenesis of these diseases is still controversial and there are no well-established tests to identify food allergy in this condition. OBJECTIVE: To investigate serum food antigen-specific IgG, IgE antibody and total IgE antibody titres in controls and patients with IBS and FD, and to correlate symptoms

Hydroxy-functionalized magnetic covalent organic polymer as an efficient adsorbent for the enrichment of amide herbicides in foods.

Amide herbicides (AHs) are widely used in agriculture, yet some compounds in this class have been shown to pose potential risks to human health. Thus, the development of rapid and precise methods for detecting AH residues in food commodities is essential for ensuring public safety. In this study, a novel hydroxy-functionalized magnetic covalent organic polymer (M-COP, Fe3O4@ TAPP-THB-OH) was developed in this work and effectively utilized as a sorbent for magnetic solid-phase extraction (MSPE). When coupled with high-performance liquid chromatography-tandem mass spectrometry (HPLC-MS/MS) the e

Biopolymer-based capillary oleogels: From interfacial regulation to structure-function relationships and food applications.

The development of healthy fat alternatives with desirable sensory properties is essential to reduce the health risks associated with excessive intake of saturated and trans fatty acids. Although oleogel technology enables the structuring of liquid oils into solid-like systems, conventional oleogelators often require harsh processing conditions, chemical modification, or complex fabrication routes. Capillary suspension has emerged as a promising physical strategy, where a small amount of secondary fluid induces capillary bridges between particles to construct a three-dimensional network for oi

Synergistic adsorption-catalysis detoxification of mycotoxins in food systems: Design and functions of metal-organic frameworks.

Mycotoxin contamination in food systems, particularly in edible oils derived from mouldy oilseeds, remains a persistent safety challenge due to the hydrophobic and viscous nature of oils. Conventional detoxification approaches often suffer from limited selectivity, inefficient mass transfer, and risks of quality deterioration. Metal-organic frameworks (MOFs) have recently emerged as promising methods for mycotoxin removal, owing to their tunable porosity, redox activity, and interfacial compatibility. This review summarises recent advances in MOF-based strategies for mycotoxin detoxification i

Postbiotics in Functional Foods: Preparation-Based Characterization, Gut-Brain Axis Interactions, and Translational Perspectives.

Postbiotics are defined as preparations of inanimate microorganisms and/or their components that confer a health benefit on the host. Although interest in postbiotics has increased substantially, their translational use in functional foods remains insufficiently characterized with respect to preparation identity, production methodology, food-matrix compatibility, mechanistic specificity, and regulatory positioning. This PRISMA-guided structured review aims to synthesize current evidence on postbiotics in functional food and nutraceutical contexts, with particular emphasis on preparation-based

From food to function: Nutraceutical-based modulation of mitochondrial, inflammatory and epigenetic networks in retinal neurodegeneration.

Retinal neurodegenerative diseases, such as age-related macular degeneration, diabetic retinopathy, glaucoma, and inherited retinal dystrophies, are major causes of irreversible vision loss worldwide. Although they originate from different causes, these disorders increasingly appear to share a network of cellular stress pathways, including impaired mitochondrial function, oxidative stress, endoplasmic reticulum proteostasis collapse, chronic neuroinflammation, epigenetic dysregulation, and activation of regulated cell death pathways. The interactions among these processes create an integrated

The impact of postweaning food texture on swallow function in the juvenile Ts65Dn mouse model of Down syndrome.

BACKGROUND: Children with Down syndrome (DS) often show feeding and swallowing difficulties, including prolonged reliance on soft diets. The Ts65Dn mouse model mirrors oromotor challenges in DS, yet the impacts of extended postweaning periods of soft food conditions are not well understood. We examined whether a soft food condition from postnatal day (P)21-P34 alters oral motor behaviors, weight, swallow function, and hypoglossal nucleus BDNF expression in Ts65Dn vs. euploid controls, hypothesizing that soft food would impact these outcomes. METHODS: Male and female Ts65Dn and euploid litterm

From bioactive chemistry to packaging function: a structure-interaction-release framework for sustainable food packaging.

Bioactive materials offer a promising route to sustainable food packaging with antimicrobial, antioxidant, enzymatic, probiotic, and sensing functions; however, their performance cannot be predicted from intrinsic bioactivity alone. This review establishes a Bioactive-Matrix-Structure-Release-Function (BMSRF) framework linking bioactive chemistry and molecular interactions with matrix architecture, transport behavior, functional efficacy, and food-preservation outcomes. Particular emphasis is placed on the transition from bioactivity to bioavailability and ultimately bioefficacy at the food-pa
